Fried Soft Corn Tortillas Tacos Filled with Chicken Cheese Onions and Poblanos

Filling
1 c scratch enchiladas sauce, recipe this blog under sauce tab
Drizzle of oil for frying onions and peppers
1/2 of a Onion, chopped small
2 c rotisserie chicken, chopped small
1/2 of a link of smoked sausage, cooked and diced
2 T diced fire grilled poblano 
Smoked Salt

Heat oil in skillet, add onions and poblanos.
Sauté until tender and add meats.
Season with salt and sauté until just heated, add enchiladas sauce.
Cook sauce out and set aside.

Cheese of your choice, I used smoky Gouda
Soft small white corn tortillas, I used Mission brand 
Olive oil or peanut oil for frying 

Warm tortillas 2 at a time in microwave for 15 seconds.
Cover to keep warm.
Add 1 T of filling and a little cheese.
Using a toothpick in the unfilled top to secure for frying.
In a small skillet, heat 1/2 c of oil on medium heat, fry 2 tacos at a time.
Drain on paper towels.
Remove toothpicks.
Serve with a slice of lime, sour cream and salsa.

ej's Original Salmon Patties

1 can drained pink Salmon in water, I use Kirkland 
1 diced onion
1 t Old bay
1/2 t Onion powder 
1/2 t Garlic granules 
1/2 t Cilantro 
1/2 t sweet basil
1 t sumac
Pinch red pepper flakes
2 T flour
2 T corn meal
1 T heavy Cream

Mix together just till incorporated.
The mixture should be wet but hold together in a patty.
Roll into panko and fry in a skillet in which the bottom is covered in oil.
These were delicious!

Triple Threat Sandwich

3 slices fried crisp low sodium black pepper bacon 
2 boiled eggs to make egg salad, Mayo, mustard, sweet pickle relish 
Pimento cheese, I use a spicy one
Honey Wheat Bread griddle, in clarified butter to toast 

Yum!

Mexi Rice

1 package Trader Joe's frozen basmati rice, cook according to directions and set aside

Into a small skillet add:
1 T olive oil
1/2 t chicken base seasoning
1/2 t toasted cumin
1/2 t chili powder

Bloom seasonings in oil for 2 minutes on medium heat. 
Then add:
A few turns black pepper
1 T double concentrate tomato paste

Cook another 2 minutes.
Stir into cooked rice.

Portuguese Greens and Beans Soup(Caldo Verde)





































29 The next day he saw Jesus coming toward him, and said, "Behold, the Lamb of God, who takes away the sin of the world!

A slightly spicy soup that is delicious!!
We added a spoonful of sour cream on top.

1 recipe of Chorizo, recipe this blog under Mexican tab, make, cook and set aside, 
can use ready made Spanish chorizo

1 can White Beans, drained
1 c chopped Kale 
1 Carrot, thin sliced
2 medium Yukon gold potatoes, chopped
1 c chopped Mustard greens
1 small Onions
1 T roasted and mashed Garlic
1/2 t sumac or lemon zest
Chicken stock to cover
1 T sugar, just to pop flavors
1/4 c red wine
1/4 c heavy Cream 

Bring to boil and simmer until potatoes are done, 20-30 minutes.
Good with crusty bread or Cheese Nips!
