Fresh Ripe Tomato Cheese Pie



































1 There shall come forth a shoot from the stump of Jesse, and a branch from his roots shall bear fruit. 
2 And the Spirit of the LORD shall rest upon him, the Spirit of wisdom and understanding, the Spirit of counsel and might, the Spirit of knowledge and the fear of the LORD. 
3 And his delight shall be in the fear of the LORD. He shall not judge by what his eyes see, or decide disputes by what his ears hear, 
4 but with righteousness he shall judge the poor, and decide with equity for the meek of the earth; and he shall strike the earth with the rod of his mouth, and with the breath of his lips he shall kill the wicked.  - Isaiah 11:1-4

An ej original recipe!!

2 large tomatoes, peeled, sliced and lightly salted 
1-1/2 c sliced sweet 100 cherry tomatoes 
1 regular pie crust, baked set aside to cool (I love Piggly Wiggly brand pie shells)
Seasonings of your choice (I used seasoned salt, oregano, garlic granules, Umami, black pepper, fresh herb blend from my garden) Fresh herb blend-sweet basil, thyme, sage, Greek oregano
3/4 c sharp cheddar, grated
3/4 c Italian blend cheese, Parmesan-Asiago-Romano
1/4 c Mayo

Bake in preheated 450 degree oven for 8 minutes.
Take fork and poke pie.
Lightly sprinkled with both cheeses.
Set aside.

Slice large tomatoes and lightly salt, put on several layers of paper towels to drain.
I let mine drain 10 minutes, then I slightly mashed them.

Into the cooled pie shell, lay large tomato slices. 
Lightly sprinkle with both cheeses.
Add sliced sweet 100's.
Lower oven to 350 degrees.

Take remaining cheese and mix with Mayo.
Take dollops of Mayo/ cheese mixture and scatter over tomatoes.

After baking for 15 minutes, take pie out, using a fork spread cheesy gooey mixture evenly over pie.

Return to oven and bake an additional 10-15 minutes with the oven off.

Sweet 100 Fried Green Tomatoes

Buttermilk
Flour 
Salt 
Pepper
Garlic granules 
Egg, beaten
Corn meal
Panko

Slice green sweet 100 tomatoes to half.
Soak in a little buttermilk.
Drain and toss in flour.
Toss in beaten egg.
Season.
Toss in cornmeal/panko mix.
Chill in freezer 30 minutes.
Fry in oil that covers bottom of skillet.
Heat oil to medium hot.
Try are done when browned and crunchy.

Jalapeño and Serrano Pepper Sauce






























I was glad when they said to me, "Let us go to the house of the LORD!"  - Psalm 122:1






4 Jalapeño pepper, seeded and spine removed 
1 Serrano pepper, seeded and spine removed
1/4 of an onion 
1 roasted garlic clove
1/2 t sugar
1/4 c water
1/4 c Apple cider vinegar
1/2 of the juice of a lime
1/4 t kosher salt 
Pinch black pepper
1/2 t oregano
1/2 t toasted cumin
1/4 c fresh Cilantro 

Put peppers in mini food processor and pulse until you get tiny bits, add onion and garlic.
Pulse 3 or 4 times.
Bring water and vinegar just to a boil.
Remove from heat, stir in pepper mix.
Add seasonings and cilantro.
Place in a jar or plastic container.

Pan Seared Lemon Butter Salmon



































The LORD will keep you from all evil; he will keep your life.  - Psalm 121:7




4 Salmon Fillets
2 T Clarified Butter
Fresh squeezed Lemon juice
Old bay
Salt
Smoked paprika

Heat butter on medium high heat.
Right before cooking, squeeze lemon over salmon.
Season with the above seasonings.
Add seasoned salmon.
Pan fry salmon for 3 minutes, then flip and  repeat.
Cut off heat and squeeze lemon juice in butter and move salmon around to lightly coat.
Fillets should easily flake with fork.
Serve immediately.
I serve with sticky buttered rice and steamed vegetables.

Plum Brioche Charlotte

































1 In my distress I called to the LORD, and he answered me. 
2 Deliver me, O LORD, from lying lips, from a deceitful tongue.  - Psalm 120:1-2


This is a British dessert!
Sweet and tart, perfect with a scoop of vanilla ice cream!!


8 Red Plums, quartered ( mine were sweet and tart )
1 c brown sugar
1/2 t allspice
1 t vanilla 

Cook in skillet for 15 minutes.

5-6 large slices Brioche, reserve 2 for top (got mine at Aldi)
1/2 c Apple cider ( room temp)
1/2 t cornstarch 
Butter to spread on Brioche 
White sugar for sprinkling on top 

Whisk cornstarch into cider.
Lay brioche slices in bottom of deep pie plate, spread with butter.
Pour cornstarch slurry onto cooked plums, stir.
Pour plum mixture over buttered brioche.
Cut brioche into strips.
Add remaining Brioche to top.
Sprinkle liberally with sugar.
Bake preheated 350 degree oven for 30 minutes. 
Cool 10 minutes. 
To serve, add vanilla ice cream to top.

Sweet 100 Pico de Gallo


































Let my cry come before you, O LORD; give me understanding according to your word!  - Psalm 119:169


2 c sliced and chopped sweet 100 cherry tomatoes
1 jalapeño, diced
1 c vidalia onion, diced
1/4 t Sugar
1 t Toasted cumin
1 t Kosher salt
1/4 c Cilantro, chopped
Pinch black pepper
1/4 t Garlic granules 
1 t Apple cider vinegar 

Add pinch of salt, 1 t peppers, 1 t cilantro and 1 t of Onions to a mortal and pestle and smash to make a paste. 
Set aside. 
Chop all tomatoes, onions and peppers.
Add seasoning paste.
Add all the rest of the ingredients and toss. 
Taste and adjust salt.
Refrigerate.

Roasted Garlic






4 They will say, "Where is the promise of his coming? For ever since the fathers fell asleep, all things are continuing as they were from the beginning of creation."

Choose the amounts you will use in a few weeks time.
Slice the top off, leaving it in the shell.
Drizzle olive oil on top and salt and pepper. 
Wrap in foil and bake for 35-45 minutes on 400 degrees, time depends on size of garlic.
Cool, then mash out pulp.
Fill jar and drizzle with a little more oil.
Keep in coldest part of fridge.


Large garlic cloves
1 T Olive oil
Salt and pepper to taste

When you put cooked garlic into jar, add
1 t apple cider vinegar and a little more olive oil.
Refrigerate.
Toss or completely use after 2 months.

Tip:
Baking soda removes the odor from your hands!



Roasted Garlic Mashed Yukon Gold Potatoes

























Salvation is far from the wicked, for they do not seek your statutes.  - Psalm 119:155



8 medium to large Yukon's, reserve 1 c starchy chicken broth water
Chicken stock, just to cover potatoes 
3 T Roasted garlic
3 T Mayo
Sea salt, as you prefer 
Cracked Pepper, as you prefer

Boil potatoes in chicken stock until knife tender.
Drain off liquid reserving 1 c.
Add broth back in 1/2 c then mash potatoes.
If too dry add rest of stock.
Stir in Mayo and roasted garlic.
Taste and season according to your preference.

Instant Pot Greek Boneless Pork Ribs with Mushroom Gravy































7 What then shall we say? That the law is sin? By no means! Yet if it had not been for the law, I would not have known sin. For I would not have known what it is to covet if the law had not said, "You shall not covet."
8 But sin, seizing an opportunity through the commandment, produced in me all kinds of covetousness. For apart from the law, sin lies dead. - Romans 7:7-8


An ej original recipe!


1 lb. Boneless Pork Ribs
Medium sprinkling Greek seasoned ( I make my own)*
Light sprinkling Seasoned meat tenderizer 
1 Onion, sliced 
2 T Roasted garlic
1/2 c Apple Cider ( I love Red Jacket ) at Publix
1 c low sodium Beef broth 
Black pepper

Sear seasoned meat, onions and garlic on the sauté setting.
Add liquids, place lid on and bring up pressure on the meat setting, cook 45 minutes. 
Bring pressure down by letting it sit 10 minutes. 
Open and remove meat to plate, turn to sauté and add 3 T of flour, a little at a time by whisking in slowly.
When thickened add meat back in.
Serve over garlic mashed potatoes or rice.

Everything Bagel Cucumber Tomato Onion Salad































9 I was once alive apart from the law, but when the commandment came, sin came alive and I died.

1 large Cucumber, chopped 
Sweet 100 baby tomatoes, sliced in half
Vidalia onions, thin sliced
Seasoned salt
Pinch of sugar
Everything bagel seasoning
Olive Garden Italian dressing
Parmesan cheese

Oven Roasted Zucchini Squash and Onions

4 yellow Squash, chopped in1/2 in chunks
1 large Zucchini, chunked
1 large onion, chunked
Seasonings of your choice, I used 
Mrs Dash table
Granulated garlic
Seasoned salt 
Trader Joe's umami 
Toss in Olive Garden Italian Dressing

Place on a sheet pan covered with parchment.
After cooking in a 400 degree oven for 45 minutes, cool slightly and sprinkle with Parmesan cheese.

Honey Sake Chicken Stir Fry

An ej original recipe!


10 Frozen chicken bites
Drizzle Olive oil in large skillet.
Fry and cut into smaller pieces.
When thawed, remove from oil and set aside.

Stir Fry Sauce
1 t toasted sesame oil
1 t mushroom soy sauce
1 T honey
2 T Sake
Mix and set aside.

Prep veggies and set aside.
To stir fry, add 1 t oil to skillet.
Add garlic and ginger, quickly cook and remove.
2 t Roasted garlic
1 t diced Fresh ginger

To the same skillet add veggies and stir fry.
Add garlic and ginger back in and the chicken then sauce.
Serve over rice or noodles.

Veggies
1 c  frozen Skinny green beans
1 Carrots, matchstick cut
1 sliced Leeks
Small Cucumber, seeds removed and cut into matchsticks
