Three Chili Pepper Spicy Pork

An ej original recipe!
This was spicy goodness!

1&1/2 lb Boneless pork country Ribs 
Olive oil

In a Dutch oven, brown meat in oil.

3 Chili Pepper Sauce 
2 dried guajillo chili
1 dried ancho chili
1/2 of a fresh jalapeño 
1 large tomato
1 T roasted garlic
1 medium onion


Preheat oven to 350 degree oven.
Using a Mexican comal, char all the veggies.
Cool.
Cut stems off and de-seed peppers.
Add water to a small pan and cook dried peppers for 15-20 minutes until they are soft.
Using a slotted spoon, retrieve veggies and put in blender, add 1/4 c of the stock.
Blend until smooth.
Add the seasonings listed below.
Taste and adjust according to your preference.
Pour over pork.
Add rest of chicken stock.
Peel and cut up apple.
Cook, covered for 1&1/2 hours, turning oven up to 400 for the last 20 minutes

Seasonings
1/2 t salt
1/4 c sugar
1/2 t smoked cumin
1/2 t smoked paprika 

1&1/2 c chicken stock
1 Jazz Apple

Serve with warm tortilla triangles, refried beans and Mexican potato salad.

Asparagus Leek Queso Fresco Flatbread

This was out of bounds!
Easy and delicious! 

2 pieces Flatbread
10 stalks of thin Asparagus, use a vegetable peeler to shred
4 T Leeks, shredded 
Drizzle Olive oil
Salt, to taste 
Garlic granules, pinch 
Adobo sauce, drizzle 
Pepper, to taste
4 T Queso Fresco, crumbled 

Preheat oven to 450 degrees.
Drizzle oil over flatbread.
Toast for 6 minutes.
Using veggie peeler, shred asparagus.
Add the leeks, a splash of oil, and the seasonings.
Cover tops with the Leek asparagus mixture.
Bake 5 minutes.
Add cheese and bake another 5 minutes.
I served with steak, baked cinnamon brown sugar sweet potatoes and a tossed salad.

All Beef Pup Dogs for Two






































From new moon to new moon, and from Sabbath to Sabbath, all flesh shall come to worship before me, declares the LORD.  - Isaiah 66:23





4 all Beef no nitrate wieners ( I used ones from Aldi) cut in half 
Bamboo sticks broke in half 

Pup Batter
1/2 c flour ( I used 1/2 wheat and 1/2 all purpose)
1/2 c cornmeal 
2 t baking powder 
1/8 c sugar
Seasoned salt, to taste
Black pepper, to taste
1 egg 
1/2 c milk
Mix well and put into a red plastic disposable cup.
Set aside.

Heat fry Daddy with oil to top fill line.
I use olive oil.
Roll wieners in a little flour.
Dip in batter one at a time and fry immediately. 
Turn with tongs to fry evenly.
Drain on paper towels.

Butter Rub Injected Oven Brisket


This is Philly Cheese Steak made from the brisket!!

4 Surely he has borne our griefs and carried our sorrows; yet we esteemed him stricken, smitten by God, and afflicted.

There's so much you can do with brisket.
Sandwiches, Philly Cheese steaks, Nachos, and add gravy and serve over rice or mashed potatoes with veggies.


Injection fluid:
1/4 c Clarified butter, melted
1/8 c Water plus more if necessary to thin
3 T Rub ( I make my own)
1/8 c Honey 
A few shakes of Hickory flavored Liquid smoke
Stir!
Fill injector and carefully inject every quarter inch.
Set aside and make mustard rub.

Mustard rub:
Flat Brisket ( I got mine from Costco) $28.00
Yellow mustard
Rub
1/4 c brown sugar

Inject with prepared fluid. 
Cover both sides with mustard, then the rub and brown sugar.
Salt and pepper.
Preheated 250 degree oven, cook for 8 hours.
On a rack in a foil pan, wrapped in foil, fat side up.
Rest 15 minutes before slicing.

Turkey Bacon Jalapeño Meatballs
































10 Yet it was the will of the LORD to crush him; he has put him to grief; when his soul makes an offering for guilt, he shall see his offspring; he shall prolong his days; the will of the LORD shall prosper in his hand. 
11 Out of the anguish of his soul he shall see and be satisfied; by his knowledge shall the righteous one, my servant, make many to be accounted righteous, and he shall bear their iniquities. 
12 Therefore I will divide him a portion with the many, and he shall divide the spoil with the strong, because he poured out his soul to death and was numbered with the transgressors; yet he bore the sin of many, and makes intercession for the transgressors.  - Isaiah 53:10-12


An ej original recipe!

Meatballs 
1 & 1/2 lb Turkey 93 % lean ( I got mine from Aldi)
1/4 c Bacon, uncooked and diced
1 small Shallot, diced
1/4 c diced Onion
1/2 c panko
1 beaten egg
3 T tomato paste concentrate 
1/4 c Italian blend shaved cheese ( I buy this at Sam's)
2 T fresh cilantro
1 t Thyme
1 t Rosemary
1/2 t salt
1/2 t black pepper
1 t dehydrated jalapeño, crushed ( I made this in microwave using the defrost setting, do for 20 minutes being careful not to burn, then blend to a powder in a coffee grinder )

Combine ingredients by hand, rolling into meatballs. 
This mixture should give you 12 meatballs.
Set aside.
These are light and delicious!!

Sauce
Jar of spaghetti sauce ( I use Aldi specialty premium marinara ) 
1 c Cabernet Sauvignon ( I use Trader Joe 2 buck Chuck)
1/2 c water
1/4 c Italian cheese blend.
Olive oil

Brown meatballs in olive oil in a Dutch oven.
Add your sauce ingredients to a Dutch oven.
Cover and bring to a light boil.
Cook 35 minutes until sauce thickens.
Every 10 minutes, flip meatballs.
Serve over fresh pasta or make a sub!!

Slightly Sweet Irish Raisin Scones

2 1/3 c self rising flour, I used a equal mixture each of whole wheat and white
3 oz frozen Irish butter, will be grated into flour
1-1/2 level t baking powder 
1/4 sugar
1/4 c raisins (optional)
1/2 c + 1/8 c cold while milk reserve 1/2 t of milk/egg mixture
1 egg, beaten 

Add flour to a large bowl.
Then whisk in baking soda and sugar.
Next grate butter into flour mixture.
Using hands, just until incorporated, lightly work butter into flour so it resembles a lumpy cornmeal.
Add raisins.
Beat egg into cold milk.
Add 3/4 of milk to flour mixture, using hands to form a dough ball. 
I used all the milk mixture because I had flour that was dry and wouldn't work into the dough.
Turn out onto a lightly floured cutting board.
Pat down into a round that's about 1-1/2 high.
Cut with 3 inch biscuit cutter.
Baste with a little melted butter with a splash of milk and egg.
Serve with fig butter or your favorite jam.
If you are so inclined, you can make clotted cream and serve on top of the jam.

Guajillo Chili Sauce Pulled Chicken

8-10 boneless skinless thighs
1 onion, chopped
1 t olive oil
Left over *guajillo sauce from the mexi meatballs
1/2 c water
1/4 c fresh pineapple

In a Dutch oven, brown onions in oil, add chicken thighs and brown them.
Preheat oven to 350 degrees. 
Add guajillo sauce and water to pot.
Cover and cook 30 minutes, then turn to 325 degrees and cook another 30 minutes.
Shred with a wooden spoon, stir well and drop temp to 300 degrees and cook another 20 minutes.
To serve, plate a few spoonfuls of meat add toppings.
I served mine with chips, onions, shredded cabbage, quesadilla cheese, fire roasted salsa and *avocado creama.

Mexi Meatballs (Albondigas)

Meatballs
1-1/2 lb ground turkey
1/2 c panko
2 T Cilantro
1/2 t salt
1 Onions, use 1/2 reserve other 1/2 
1 Egg, beaten
1/2 t Black pepper

Guajillo sauce
4 guajillo chilis, toasted and set aside
1/2 Onion, chopped 
2 T roasted Garlic
1/4 c sugar 
2 T Cilantro 
Pinch black peppers
1 c Herdez Salsa verde
1/4 c Herdez guacamole salsa
3 c chicken broth

Toast peppers on comal or stove top eye.
Cut ends off and take veins and seeds out.
Tear into pieces and put in large sauce pan.
Cover with water and re-hydrate for 15 minutes.
Cool.
Spoon into blender and add 1/2 c juice.
Dump the rest of the juice.
Blend until smooth, add black pepper, garlic, sugar, Cilantro, salsa verde, guacamole salsa, blend a little more.
Set aside.
Place 1 t olive oil in pot and brown onions.
Add guajillo sauce.
To the same pot, add stock and bring to boil.
Reduce heat and cook until sauce thickens.
Add meatballs, cover and cook 35 minutes.
Turn several times to ensure even cooking.
There's a lot of sauce left which I reserved to make stuffed Poblanos.   





I served with Mexican potato salad and John's slaw.



Honey Gochujang Salmon






































3 And you show that you are a letter from Christ delivered by us, written not with ink but with the Spirit of the living God, not on tablets of stone but on tablets of human hearts.

5 Not that we are sufficient in ourselves to claim anything as coming from us, but our sufficiency is from God,

1 t gochujang 
1/4 c clarified butter
4 T Honey
2 T Cilantro 
Whisk together.


Piece of salmon from Costco 
Fresh Lemon juice
A little Old bay on each piece
Spoon on butter gochujang sauce.
Bake on parchment preheated 425 degree over for 12-14 minutes. 
Check after 12, fish is done when it flakes.

Mexican Potato Salad










For this is the covenant that I will make with the house of Israel after those days, declares the Lord: I will put my laws into their minds, and write them on their hearts, and I will be their God, and they shall be my people.  - Hebrews 8:10





4 large red Potatoes cooked in chicken stock
1 ear of corn, microwave 1 minute, cool and shave off cob
1/4 c red bell peppers
2 green onions, chopped
1/2 t chipotle in Adobo, chili and sauce
1/2 t toasted cumin
1/2 t sugar
1/2 t salt
1 T Cilantro 
1/2 c -3/4 c Mayo

Cover potatoes with stock and boil until tender.
Drain.
Add seasonings, onions, peppers, corn and Mayo.
Mix well.
Delicious!
