Christmas Rocks AKA Fruitcake Cookies



































Psalm 6:2-5


    [2] Be gracious to me, O LORD, for I am languishing;

        heal me, O LORD, for my bones are troubled. 

    [3] My soul also is greatly troubled.

        But you, O LORD—how long?


    [4] Turn, O LORD, deliver my life;

        save me for the sake of your steadfast love. 

    [5] For in death there is no remembrance of you;

        in Sheol who will give you praise?



These are delicious!!


1 c candied cherries, chopped

3/4 c candied pineapples

1 c raisins 

1 c pecans

Toss in 1/4 c AP flour

Set aside


1 c softened butter(1 stick)

1c granulated sugar

Whip on medium 2-3 minutes until smooth.


Add 

1 egg

1/4 c buttermilk

1 t each vanilla and almond extract

Whip 2 minutes


Add by hand and incorporate by hand

1&1/2 c AP flour

1/2 t baking soda

1/2 t salt


Line sheet pan with parchment.

Drop by 1 T scoops, 2 inches apart. 

Bake in preheated 350 degree oven for 12 minutes.

Cool in pan for 2 minutes, remove to rack and cool.

Mimosa Fried Chicken Biscuit and Slaw

Ginger Ale biscuits baked, set aside*

Slaw set aside

Poached egg set aside

1/2 c sparkling white wine or Sauvignon Blanc

1/2 c orange juice

2 T grated orange zest

5 Mashed garlic cloves

1 T salt

2 t coriander 

1/2 t dried red peppers


2 lb Boneless skinless chicken thighs, trimmed ( around 8 pieces)

Cover and refrigerate for 2 hrs or over night


Coating 

1- 1/2 c flour

1-1/4 c Cornstarch 

1 T coriander 

2 t garlic

2 t baking powder 

2 t pepper

2 t salt

1/2 t cayenne 

Whisk


Add 3 T water to flour to make craggy bits, add drained chicken pieces, refrigerate 30 minutes

Fry in 350 degree 2 c peanut oil

Fry 7 min until 175 degrees

Drain 

Sprinkle with coriander 


Build biscuits

Biscuit bottom 

Add Slaw 

Add chicken 

Biscuit top

Top with poached egg with runny yellow

Orzo Salad with Roasted Garlic Lemon Dressing


































Genesis 6:5


[5] The LORD saw that the wickedness of man was great in the earth, and that every intention of the thoughts of his heart was only evil continually.



1 c orzo, cooked al dente, according to box directions, drained and  

set aside


Lemon dressing

Salt and fresh ground black pepper to taste

1/4 c olive oil

1 t Dijon 

1 t honey 

3 T roasted and mashed garlic

1 t lemon zest

2 T fresh lemon juice 



1 English cucumber, peeled leaving dark green and then diced

1 tomato, diced

1/2 c diced onion

3 T herbs, cilantro, basil, oregano, dill 

1/2 c Castelvetrano olives, halved

1 /2 c Roasted Red Bell peppers


Topping

1 c Parmesan 

Toasted bread crumbs


I served this with chicken nuggets and it was delicious!

Bacon and Potato Egg Cup

































Psalm 2:4


    [4] He who sits in the heavens laughs;

        the Lord holds them in derision.



I did these two ways! 

One with the crescent roll bottom and one without!

They were equally delicious!!



Preheated oven 350 degrees for 20 min 


1 can Crescent Rolls, roll out and cut into squares to fit muffin tin cup

Spray muffin cups well with non stick.

Lightly press in dough squares.

Set aside to fill.


Egg mixture


3 eggs beaten

10 slices bacon cooked and chopped

1/8 c half and half

1 T Boursin cheese

1/4 c chopped green onions

Seasoned salt and pepper to taste


1 potato microwaved, chopped and slightly mashed into egg mixture


Fill dough cups 3/4 ways with egg mixture and top with cheeses.


Topping

1 c cheddar blend cheese 

1/2 c mozzarella

Maple Black Pepper Pork Belly


































Genesis 2:21-24


[21] So the LORD God caused a deep sleep to fall upon the man, and while he slept took one of his ribs and closed up its place with flesh. [22] And the rib that the LORD God had taken from the man he made into a woman and brought her to the man. [23] Then the man said, 


    “This at last is bone of my bones

        and flesh of my flesh;

    she shall be called Woman,

        because she was taken out of Man.”


    [24] Therefore a man shall leave his father and his mother and hold fast to his wife, and they shall become one flesh.



1-1/2 lb pork belly slices, cut into thirds

1 t kosher salt

1 t coarse black pepper


Mix salt and pepper 

Lightly cover both sides

Refrigerate overnight


Remove from fridge 

Add a light sprinkling of seasoning 

Let sit out 1 hr


Seasoning mix for next day

1 t Smoked Paprika

1 t Turmeric

1 t Cumin

1 t Oregano 

1 t Garlic

1 t Tarragon 

Mix seasoning 


Preheat air Fryer for 5 minutes on 330 degrees

Cover low sided pan with foil and spray

Place pork slices where they don't touch

Cook 20 minutes 

Flip and cook another 20 minutes 

Brush maple syrup on both sides

Turn heat to 400 and crisp for 5 minutes

Pork should be at least 160 degrees.
