Bourbon Sautéed Two Pepper and Onion Steak and Chicken Fajitas






























Luke 24:2-8


[2] And they found the stone rolled away from the tomb, [3] but when they went in they did not find the body of the Lord Jesus. [5] And as they were frightened and bowed their faces to the ground, the men said to them, “Why do you seek the living among the dead? [6] He is not here, but has risen. Remember how he told you, while he was still in Galilee, [7] that the Son of Man must be delivered into the hands of sinful men and be crucified and on the third day rise.” [8] And they remembered his words,


 

An ej original recipe!



4 Filet steak sliced thin 

2 large breast of Chicken sliced thin

Season with meat seasoning and toss 

Set aside for 30 minutes


Get your skillet hot, add 1 t oil, then meat.

Let it get browned on one side before flipping.

Remove to foil pan and do the chicken the same way.


I freeze half for an easy meal later, unless there's a crowd here. 

This holds very well in a warm oven, in three sections in a foil pan.

You can warm tortillas in microwave and seal in foil and they do really great.

Then when your guests arrive just pull out of the oven and build the fajitas.


Seasoning for meat

1 t Ancho and pasillia chili powder( I roast a couple of each of the chilies, cool then put in a coffee grinder)

The smell of this will make u swoon!


Seasoning for peppers and onions

2 Multi color Bell peppers cut into strips

1 poblano cut into strips

1 large Onions, sliced

Salt to taste

Pepper to taste

1/2 t Toasted cumin 

1/2 t sugar

Toss veggies 

Sauté in 1/2 t olive oil in a large skillet 

And finish off with splash of bourbon and a quick sauté.


Serve on warmed flour tortillas.


Toppings

Chunky Salsa red or green

4 cheddar cheese blend

Sour cream

Squeeze of lime


Serving suggestions:

chips and salsa, refried beans and Mexican rice.

Fall Spiced Apple Butter For Two


























 

 

 

Isaiah 9:2


    [2]  The people who walked in darkness

        have seen a great light;

    those who dwelt in a land of deep darkness,

        on them has light shone.



4 large ripe Honey Crisp apples

Peel and thin slice apples in strips 


Add 

1/2 c water

1/4 c Apple cider vinegar

1/8 t pink salt


Cook in a 2 qt Dutch oven on medium heat

Cover leaving a little opening

Keep stirring occasionally to keep apples from burning

Cook 25 - 45 minutes (according to the ripeness of apples)

When apples are mushy, use a immersion blender to make applesauce.

Remove from heat


Add 

1/3 c brown sugar

3 T Honey

1/2 t Molasses

1/2 t vanilla 

1/2 t Cinnamon 

1/4 t Apple pie spice

1/4 t ground cloves

1/4 t allspice

1/4 t nutmeg


Stir

Return to heat for 20 minutes stirring occasionally to prevent burning

Put in clean jelly size canning jars, refrigerate

This was delicious!!

Sweet Italian Sausage Spicy Cheese Dip For Two






























Isaiah 61:1-2


    [1] The Spirit of the Lord GOD is upon me,

        because the LORD has anointed me

        he has sent me to bind up the brokenhearted,

    to proclaim liberty to the captives,

        and the opening of the prison to those who are bound; 

    [2] to proclaim the year of the LORD’s favor,

        and the day of vengeance of our God;

        to comfort all who mourn;



An ej original recipe!



1/2 lb sweet Italian sausage, bulk not sausages 

1/2 c chopped Green onions

1/2 t olive oil

1/2 of a roasted seeded Jalapeño, diced 

1 c Velveeta, chunked

1/4 c spreadable cream cheese

2 T half and half

2 T Italian cheese blend 

2 T chunky salsa, no juice

Cracked black pepper



Sauté peppers and onions in oil.

Add sausage, cook until no longer pink.  

Add salsa, cream, Velveeta, cheese blend and cream cheese.

Simmer until cheese melts.

Finish off with cracked black pepper.

This was outstanding!!

Serve with warmed tortilla chips.

Simple Honey Garlic Pork




























 

 

Isaiah 45:5-7


    [5] I am the LORD, and there is no other,

        besides me there is no God;

        I equip you, though you do not know me, 

    [6] that people may know, from the rising of the sun

        and from the west, that there is none besides me;

        I am the LORD, and there is no other. 

    [7] I form light and create darkness;

        I make well-being and create calamity;

        I am the LORD, who does all these things.



Sauce

1 T Honey

2 T brown sugar 

1/4 c Soy sauce

2 T roasted garlic

1 t sushi Ginger, diced

1 T toasted sesame oil

Make ahead and set aside



Veggies

2 c Cabbage, thin sliced 

1 small Onion, sliced

1 small Green bell pepper, sliced into strips

Cut and set aside

Add 1 T of olive oil to skillet.

Stir fry veggies until slightly tender. 

Remove and set aside.



Pork Tenderloin sliced into thin bite size pieces

Marinate 1 hour in zip lock in fridge

1 1/2 c Water 

1/8 c Salt 

1/8 c Sugar

Remove from water, drain well.

Add 2 t of sauce and toss.

Add 1 T of cornstarch and toss.

In a skillet, add 1 T oil.

Stir fry until tender, 2 minutes, flipping to ensure browning, fry another 2 minutes.

Remove to plate.



To serve 

Add sticky rice or noodles

Sausage and Pepperoni Cheese Dip For Two

Chopped Green onions, set aside

Taco chips, set aside



2 breakfast sausage patties

5 slices thin sliced Boars Head Pepperoni, cut into shreds  

3 T diced onions

1 t toasted cumin

3 T diced roasted jalapeño 

4 T chunky salsa, no juice 

1/8 c milk

1 T ranch dressing( I used homemade Greek yogurt ranch dressing) *

1/4 c cubed Velveeta 


Pinch sausage into small pieces, heat in skillet.

Add Pepperoni, onions, cumin and peppers, sauté till slightly crispy.

Add salsa and ranch, cook 1 Minute.

Add milk and both cheeses.

Cook just to melt.


Chopped Green Onions on top for serving along with taco chips.
