4 Filet steak sliced thin
2 large breast of Chicken sliced thin
Season with meat seasoning and toss
Set aside for 30 minutes
Get your skillet hot, add 1 t oil, then meat.
Let it get browned on one side before flipping.
Remove to foil pan and do the chicken the same way.
I freeze half for an easy meal later, unless there's a crowd here.
This holds very well in a warm oven, in three sections in a foil pan.
You can warm tortillas in microwave and seal in foil and they do really great.
Then when your guests arrive just pull out of the oven and build the fajitas.

1 t Ancho and pasillia chili powder( I roast a couple of each of the chilies, cool then put in a coffee grinder)
The smell of this will make u swoon!
Seasoning for peppers and onions
2 Multi color Bell peppers cut into strips
1 poblano cut into strips
1 large Onions, sliced
Salt to taste
Pepper to taste
1/2 t Toasted cumin
1/2 t sugar
Toss veggies
Sauté in 1/2 t olive oil in a large skillet
And finish off with splash of bourbon and a quick sauté.
Serve on warmed flour tortillas.
Toppings
Chunky Salsa red or green
4 cheddar cheese blend
Sour cream
Squeeze of lime
Serving suggestions:
chips and salsa, refried beans and Mexican rice.
