Smashed Croissant Breakfast Sandwich

An ej original recipe!!



Croissants, cut in half, flatten with a rolling pin

Fried sausage patty split lengthwise, set aside

Clarified butter for toasting in skillet

Grated Cheese 

Green onions, chopped 

Avocado *

Fried egg, cook set aside


Avocado 

Mash avocado, add 1/2 t Mayo, salt, toasted cumin and pepper.

Squeeze 1/2 of a small lime over mixture and mix.

Set aside


To assemble

Melt clarified butter, add flattened croissant both sides to skillet, add cheese, sausage, avocado and green onions.

Weigh down and toast.

Flip and repeat.

These are delicious!!

An ej original recipe!!



4 butterflied chicken breast

Salted and peppered

Let sit out for 1 hr.

This allows Chicken to become tender and moist.

Add a pinch of Greek seasoning to each one.

Fry in 1/8 c bacon drippings until 165 degree temp.

Set aside.


Shredded Monterey Jack cheese

Set aside


Gravy

1 pint Portobello mushrooms, sliced

1 large Onion, sliced

Sauté mushrooms in skillet.

Do not season or add liquid yet.

Mushrooms will seep liquid as they sauté.

After mushrooms start to wilt add:

Onions

1/4 c Sauvignon Blanc

3 T roasted garlic

Sauté till onions are tender.

Add:

1/8 c half and half

Slightly thicken by whisking in 1 t flour.

Set aside.


Layers:

1 Chicken 

2 Top with mushroom gravy

3 Grated Monterey Jack cheese

Place under broiler to melt cheese.

Serve and swoon!

Telera Rolls (Torta)


























I made Cuban sandwiches with these rolls and they were fantastic!!



Psalm 115:1-3


To Your Name Give Glory

        for the sake of your steadfast love and your faithfulness!


    [2] Why should the nations say,

        “Where is their God?” 

    [3] Our God is in the heavens;

        he does all that he pleases.



3-3/4 c AP flour (Aerate flour to fluff)  

2 T yeast (3 packets active dry)

1-1/4 c warm water

1/4 c olive oil

5 T sugar

1 beaten egg

1-1/2 t kosher salt



Add 2 T of yeast to 1.25 cups of warm water. Whisk 5 T of sugar and 1/4 c olive oil.  Let sit for 5-10 minutes.


Add 3.75 cups flour, 1-1/2 t salt, and 1 egg. Mix with a spatula and then place onto a parchment sheet on counter.  Knead with your hands until you have a smooth ball of dough. Add additional flour if it's sticking to your hands.

Using spatula cut into eight equal parts for large torta rolls. Roll into balls.  

You can get 8 large rolls or 12 medium rolls.


Cover with plastic wrap and let rise for 10-30 minutes.

Bake preheated oven middle rack for 8-15 minutes at 425F.

Cool.

Instant Pot Rustic French Chicken Stew



































Psalm 109:21


    [21] But you, O GOD my Lord,

        deal on my behalf for your name’s sake;

        because your steadfast love is good, deliver me!



3 Boneless skinless Chicken breast or thighs, cut into large 2 inch chunks

3 medium Yukon Gold potatoes, cut into large chunks 

2 large carrots, cut into large chunks

1/8 c chopped celery

1/8 c chopped Fennel bulb

1/8 c Leeks, sliced 

Pinch of rosemary and thyme

Salt and pepper

Pinch of sugar

2 c Chicken stock

2 T Sauvignon Blanc


After cooking to finish:

2 T White Balsamic vinegar

2 t cornstarch in 2 t water


Put all ingredients in IP. 

Set to pressure cook.

With lid under pressure, cook 7 minutes.

Do a natural release for 10 minutes.

Take pressure off.

Add Balsamic vinegar and cornstarch slurry.

Serve with crusty sourdough bread.

Fresh Corn Masa Harina Tortillas

Tell of All His Wondrous Works


    [1] Oh give thanks to the LORD; call upon his name;

        make known his deeds among the peoples! 

    [2] Sing to him, sing praises to him;

        tell of all his wondrous works! 

    [3] Glory in his holy name;

        let the hearts of those who seek the LORD rejoice! 

    [4] Seek the LORD and his strength;

        seek his presence continually! 

    [5] Remember the wondrous works that he has done,

        his miracles, and the judgments he uttered,


 

 

These are delicious!



1-1/2 c masa harina

1/4 t kosher salt

2 T bacon grease, oil, butter or lard

1 c or more of hot tap water



Place flour in bowl, whisk salt.

Drizzle in grease.

Drizzle in water, working dough into a ball.

Knead 5 minutes until dough becomes stretchy.

Dough should be well hydrated.

Rest dough, covered for 30 minutes.

Pull 12 chunks of dough and roll into balls.

Cut a ziplock bag open and put dough in between the plastic. 

Press out with fingers and the roll out to a 5-6 inch diameter.

Heat oil 1/8 inch of oil in skillet.

Dough may puff.

Lightly brown on both sides.

Lightly salt.

Drain on paper towels.
