Parmesan Panko Crusted Salmon


































Psalm 8:9


    [9] O LORD, our Lord,

        how majestic is your name in all the earth! Amen





1-2 lb Filet Salmon or Steel Head Trout salted and peppered


Squeeze 1t lemon into

1/4 c Mayo, 1 t garlic, mix together and slather on fish 


Crust

3/4 c Panko

2 T Parmesan

Zest of a Lemon 

1/4 t each of dried parsley, thyme, oregano, rosemary 

1/2 t kosher salt

1/2 t pepper

2 T olive oil or melted butter

Stir to mix


Spoon on the middle of Filet and spread to sides.


Oven preheated set at 425 degrees cooked on parchment in a sheet pan for 18 minutes until fish flakes and is still slightly pink.

Instant Pot Juicy and Tender 5 Spice Soy Chicken

2-3 lbs Chicken parts of your choice


Overnight Marinade 

1/2 c low sodium Soy sauce

1/2 c Mirin (Chinese cooking wine)

2 T brown sugar

1 t whole peppercorns (I used black)

1 t 5 spice powder 

2 bay leaves 

3 T of pickled Ginger 

1/2 medium onion

3 T Roasted garlic

2 whole scallions 

Make and put in gallon zip lock.

Add chicken parts, burp bag, seal, refrigerate overnight.


Remove chicken parts.

Reserve liquid part of marinade.

Dry chicken with paper towels.

Sear in olive oil until golden.

Remove.

Pour water in pot to de-glaze.

Dry out, add rack.

Place chicken on top of rack, add liquid marinade.

Set to pressure, set meat to 25 minutes.

Release pressure after 15 minutes. 

Serve with sauce ladled over.

Temp should be 165-170 degrees.

Holiday Worthy Chuck Roast Reminiscent of Beef Tenderloin

Beef for a fraction of the cost but holiday worthy!

 

 

Chuck roast, separated down middle fat into 2 pieces, trim fat

Lay pieces on top of each other.

Season with the following :

2 T kosher salt and 1 T cracked Black pepper

Tie with kitchen string every 2 inches.


Wrap in plastic wrap and refrigerate for 18 hours.


Remove plastic and grease all around with 2 T olive oil


Preheat oven to 275 degrees.

Place on rack on foil covered sheet pan.

Roast for 2-3 hours to internal 145 degrees temp. 

Cook time depends on roast size. 

Do not cook past 145 degrees, meat will be tough.

Rest on cutting board for 45 minutes under sheet of loosely tented foil.

Slice thin, removing string as you slice.

Serve with a parsley horseradish sauce.

This is similar to persillade! 


Add to mini food processor 

1 c packed flat leaf parsley, short stems are ok 

1 T roasted garlic, mashed

1 diced Shallot

1 T lemon juice

1/4 c prepared horseradish 

2 T capers, drain and rinse

1/2 t Salt 

1/4 t black pepper

Pulse 6-8 pulses to incorporate 

Place in bowl

Add 3/4 c olive oil

Whisk around with a fork!

Serve on beef, sandwiches, burgers, etc!

Layered Mexican Dip with Avocado Creama

Bean dip made from 3 bean blend home canned beans*

Lime

Avocado creama*

Sour cream 

Cheddar Cheese, grated 

Smoked Gouda, grated

Scallions, sliced thin 

Tomatoes, seeded and pulp removed 


Make bean dip.

Make avocado creama.

Chop veggies.

Layer bean dip, avocado creama, sour cream, cheese, and chopped veggies

Serve with tostadas chips!
