Oven Skillet Veggies and Chicken

Psalm 148:5-6

    [5] Let them praise the name of the LORD!

        For he commanded and they were created. 

    [6] And he established them forever and ever;

        he gave a decree, and it shall not pass away.

This was delicious.

So much flavor!

1-2 large chicken breast, chopped 1/2 in pieces 

2 small Yukon Gold potatoes, microwave for 2 minutes each side, slice, cool, peel, chop 1/2 in pieces 

1 medium sweet potato, microwave 

2 minutes each side, slice, cool, peel, chop 1/2 in pieces 

1 large carrot, chop 1/2 in pieces 

1 yellow squash, chop 1/2 in pieces

1/2 each Red and Yellow bell pepper, sliced

2 T roasted and mashed garlic 

1 t dried thyme

1 t dried oregano 

1/4 c Olive oil

Pepper and kosher salt to taste

Put everything in a bowl, drizzle with the oil.

Place in cast iron skillet with a little clarified butter.

Before serving

Fresh chopped Parsley 

Bake, covered with foil, preheated 390 degrees for 40 minutes.

Remove foil and sear under broiler 3 minutes.

Sprinkle with fresh flat leaf parsley.

Sweet 100 Spaghetti Sauce with Mashed Meatballs

Psalm 145:20-21

10 Meatballs cooked and mashed.

I make my own and freeze them.

Add homemade sauce, 1/2 c Cabernet Sauvignon, 1/2 c Parmesan. 

Serve over angel hair pasta.

1 lb Shaved Plain deli roast beef, chopped 

1 Thin sliced Onion

1 thin sliced red Bell pepper

2 t Whiskey

Garlic granules 

Onion powder

1 t Worcestershire sauce 

Cheddar Cheese whiz

House made refrigerator Garlic Dill Pickles   

Hoagie buns

Roasted Vidalia Onion Sweet 100 Spaghetti Sauce

Psalm 144:3-4

    [3] O LORD, what is man that you regard him,

        or the son of man that you think of him? 

    [4] Man is like a breath;

        his days are like a passing shadow.

 

An ej original recipe!

Preheat oven to 425 degrees.

Roast for 35 minutes.

4 c Sweet 100 tomatoes, washed and stems removed 

1 Vidalia onion

1/4 c olive oil

1 t Red pepper flakes

1 T Sugar

Lightly sprinkle Onion powder 

Lightly sprinkle Garlic granules 

Salt and pepper to taste

2 T roasted garlic, mashed

Before serving

1/2 c Fresh basil, chopped

Place parchment paper on a large sheet pan.

Place tomatoes single file.

Quarter onion.

Drizzle oil over onion and tomatoes.

Season with onion powder and garlic granules.

Tomatoes will begin to burst and slightly char.

Cool and pulse in food processor to make sauce.

Store in fridge and use in 2-3 days.

Sometimes I use my IP to do the pork and sometimes I do it in the oven in a Dutch oven.

If using oven cook 325 degrees for 1-1/2 hrs to 2 hours or until meat is tender and liquid is almost gone.
