Chicken Breast Diane































6 For to us a child is born, to us a son is given; and the government shall be upon his shoulder, and his name shall be called Wonderful Counselor, Mighty God, Everlasting Father, Prince of Peace.

2 large boneless skinless chicken breast, put seasoned meat tenderizer on both sides and refrigerate 1 hour

4 T Butter, 2 T to sear chicken and reserve 2 T for veggies
1 c Mushrooms, sliced
1 Shallot, diced 

1/4 c chicken stock

Sauce
3 T cherry brandy
2 t Dijon 
2 t Worcestershire sauce
Mix together in a small bowl, set aside

To finish
Cracked black pepper 
1/2 t chopped chives

Sear chicken in 2 T butter for 3 minutes on each side on medium high heat.
Remove to a plate and set aside.
Add rest of butter and veggies.
Cook on medium till tender.
Add chicken back in and stock, reduce to a glaze. Turn chicken several times.
To finish and serve, add pepper and chives.

Asian Citrus Bourbon Salmon

2 pieces serving size of fresh Atlantic Salmon
1/2 of a Lemon, juiced
Smoked Salt and Cracked Black Pepper

Sauce
1 cap full Jim Beam Bourbon
1/4 t Dijon 
1 t toasted sesame oil
1 cap full light soy sauce
5 t Honey 
1 t brown sugar
1 t fresh ginger
1 t fresh Cilantro 
1/2 t sesame seeds
1 t roasted mashed garlic
1 t hoisin 
1 t sweet chili Thai sauce 

Put half on Salmon and marinate 1 hour.
Reserve the rest for serving.

Cover pan with parchment.
Bake preheated 400 degree oven for 12-16 minutes, just till flaky.
To serve add more sauce and bias cut scallions.

Hot Rueben Sandwich
































10 Finally, be strong in the Lord and in the strength of his might.
11 Put on the whole armor of God, that you may be able to stand against the schemes of the devil.
12 For we do not wrestle against flesh and blood, but against the rulers, against the authorities, against the cosmic powers over this present darkness, against the spiritual forces of evil in the heavenly places.
13 Therefore take up the whole armor of God, that you may be able to withstand in the evil day, and having done all, to stand firm.
14 Stand therefore, having fastened on the belt of truth, and having put on the breastplate of righteousness,
15 and, as shoes for your feet, having put on the readiness given by the gospel of peace.
16 In all circumstances take up the shield of faith, with which you can extinguish all the flaming darts of the evil one;
17 and take the helmet of salvation, and the sword of the Spirit, which is the word of God,
18 praying at all times in the Spirit, with all prayer and supplication. To that end, keep alert with all perseverance, making supplication for all the saints,

This makes 4-6 sandwiches according to how much you meat stack.

Honey Wheat or marbled Pumpernickel 
Clarified butter for toasting on griddle

1/4 lb. shaved Pastrami, Boar's Head
1/4 lb. shaved Top Round Beef, Boar's Head
1/4 c drained shredded German Kraut
1/2 of a Onion, Sautéed in 1 t clarified butter
Swiss or Trader Joe's Unexpected Cheddar


Bread and Butter Pickles or Kosher Dill slices
Russian or Thousand Island dressing (Russian is better)

In a non stick skillet, heat butter.
Add onions and cook until tender.
Add a little clarified butter to griddle and heat. 
Add bread to butter and swish around.
Add shaved meat to skillet and heat just through, then add crumbed cheese.
Cut off skillet and let cheese melt.
When bread is toasted, remove from griddle to a plate.
Add the meat/cheese/onion mixture onto bread allowing the same amount for each one.
Drizzle Russian dressing over meat and top with pickle.
So much better than the cold meat one!!

Burger Diane

4 Hamburger patties, season with meat tenderizer (use ground round)
2 pats butter

Sauce
3 T Cherry Brandy
2 t Worcestershire sauce
2 t Dijon 
1/4 c chicken sauce
Mix together and set aside.

Veggies
1/4 c Shallots
1/2 of a onion, sliced thin
1/4 c mushrooms 
2 pats Butter
Black pepper

Cook burgers in butter, 3 minutes each side.
Remove and set aside.

Add rest of butter and sauté veggies.
Add sauce and the burgers back in.
Reduce to a thick glaze.
Serve on a Kaiser roll with thin sliced cabbage and the cheese of your choice.

French Style Steak Diane




































A joyful heart is good medicine, but a crushed spirit dries up the bones.  - Proverbs 17:22




2 Fillets, flatten slightly, seasoned with seasoned tenderizer 
1/2 c sliced mushrooms 
1 diced Shallot 
4 pats of butter
Cracked black pepper
3 T sherry or cognac, I used Cherry Brandy cause that's what I had
1/2 c chicken stock
2 t Worcestershire sauce
2 t Dijon mustard
1/2 t chopped chives

Melt 2 pats of butter in a skillet on medium heat, add steak and sear 1 minute on each side.
Remove steak to a plate.
Add the rest of the butter.
Throw in the shallots and mushrooms, cook until slightly tender, about 1 minute.
Mix the wet ingredients, except chicken stock, together in a small bowl.
Add to veggies butter mixture in skillet, cook 1 minute.
Then add the stock, cook another minute on medium heat.
Add steaks back in.
Reduce heat and simmer down to a glaze.
You are in for a delicious treat.
