Fresh Herb Roasted Veggies






26 Help me, O LORD my God! Save me according to your steadfast love! 
27 Let them know that this is your hand; you, O LORD, have done it!  - Psalm 109:26-27



2 Carrots, chopped tiny
1 Onion, quartered
2 Yellow squash, chopped
1 Zucchini, chopped
1/2 bunch Asparagus, chopped
1/2 Red bell peppers, cut into strips
1t fresh Greek oregano, chopped
1t fresh hot and spicy oregano, chopped
1t fresh rosemary, chopped
1t lemon thyme, chopped
1/2 t Greek seasoning
1/2 t garlic granules
1 T Olive oil
Kosher salt, to taste
Cracked black Pepper, to taste

Toss veggies in oil and seasonings.
Bake 375 degrees for 45 minutes.

To finish, place 2 T lemon thyme sage black truffle butter on hot veggies and stir.

Smoked Sausage Herbed and Creamed Green Beans

1/2 link grilled Smoked sausage, chopped
1 lb. fresh Green beans, snapped
2 c water
1 Onion, chopped
1/2 t Fresh lemon Thyme, use only the tiny leaves
1/2 t Fresh Greek oregano, diced
1/2 t Fresh hot and spicy oregano, diced
1/2 t Fresh Rosemary, diced
1 T Cream cheese
1 T Olive oil
1 t Chicken seasoning base
Cracked black pepper, to taste
1 T Heavy cream

Bring water, onions, oil and seasonings to a boil.
Add washed, trimmed and snapped green beans to water.
When water is just about cooked out, add cream cheese and cream.
Stir to incorporate.

Asian-Greek Fusion Stir Fry

1 c pulled Rotisserie Chicken, dark or light meat
1 zucchini, chopped
2 Bok Choy, chopped
1 onion, chopped
1 Meyer lemon, juiced
Olive oil for sautéing 
1 t Greek seasoning
1 t Rosemary
1 T Soy sauce
Salt and pepper to taste

Stir fry onion and zucchini in oil.
Add chicken and Bok choy, soy, along with the juice from the lemon and the seasonings.
This dish comes together pretty quick.

Pasta Beef and Broccoli Stir Fry








but you, O LORD, are on high forever.  - Psalm 92:8





2 c grilled beef or chicken, cut into bite size pieces
2 c broccoli
2 T olive oil
1 onion
2 t garlic
2 t ginger
2 t sugar
3 T soy sauce
1 c chicken stock, reserve 1/4 c
2 t cornstarch 

Add oil to skillet and heat.
When oil heats, add garlic, ginger and onion to oil.
Next add steak or chicken and broccoli.
Add seasonings, 3/4 c broth, and soy.
When broccoli is tender, whisk the cornstarch into the 1/4 c broth, then add to pan to thicken sauce.

Greek Seasoned Chop






There is a way that seems right to a man, but its end is the way to death.  - Proverbs 14:12






6 bone in center cut pork chops
Greek seasoning( I make my own, recipe under seasoning tab this blog)
Seasoned meat tenderizer
Olive oil for frying

Pound chop.
Seasoning both sides with tenderizer, it's salty so go very lightly, then use the Greek seasoning as a rub. 
Bring oil up to medium high heat and add chops, I did 3 at a time cause my non stick skillet is huge.
After they are lightly browned on both sides, cover. 
Cook until temp reaches 140 degrees.
These were delicious!!!
