2 lbs Pork butt, cut into chunks, fatty pork is best
1/2 t cinnamon
1/8 c olive oil
1 T roasted Garlic
1 T Salt
1/8 c Eagle brand condensed milk
1/2 small can Coke
Water to cover
Cover, bake 1-1/2 hrs on 400 degrees.
After 1-1/2 hours, may need to add more water if pork isn't tender enough and cook 30 minutes longer.
Crisp up in oven with lid off or on flat top.
The toppings are a must!!
This is on the sweet side in taste so it needs the saltiness of the cheese, the heat from salsa, the freshness from cilantro and the bite from the onions.
Chop, serve on fire roasted flour tortillas with fresh chopped cilantro, sliced red onions, crumbled Queso Fresco and salsa verde
