BBQ Rub Seasoned and Seared Shrimp Cocktail

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 13:5


    [5] But I have trusted in your steadfast love;

        my heart shall rejoice in your salvation.



12 jumbo raw cleaned shrimp, thaw in cold water and remove tail, dry with paper towel 


BBQ seasoning rub (this will do shrimp and 3 salmon pieces)

2 T brown sugar 

2 t course black pepper 

1 t kosher coarse salt

1/2 t dried basil

1/2 t garlic granules 

1 t smoked paprika 

1-2 T lime zest

Toss shrimp in rub and set aside


Cocktail sauce

2 c chopped and seeded fresh ripe tomato 

1/4 c ketchup 

1 t Cholula 

2 T chopped fresh cilantro 

2 t sweet chili Thai sauce

3 diced green onions

1 T fresh lime juice

1 t kosher salt 

1/4 t horseradish 

1 t olive oil

1/2 t black pepper 

Mix and set aside to meld flavors 


Fry seasoned shrimp in clarified butter/olive oil 

Shrimp is done when it has a slight curl but not a tight curl 


To assemble 

Place cocktail sauce in a footed desert cup

Add your desired amount of shrimp to the rim

Serve with lime or lemon wedges


Serving suggestions 

BBQ salmon

Sticky rice

Steamed broccoli

Sourdough Discard Brownies

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

These are delicious!


The fool says in his heart, “There is no God.”

        They are corrupt, they do abominable deeds;

        there is none who does good.


2 stick butter

2 c sugar

2 oz semi sweet chocolate chips 

1 c cocoa powder

1/2 c sourdough Discard 

3 eggs

1 T vanilla 

1-1/4 c AP aerated flour

1/2 t baking powder 


Add ins

1 c toasted walnuts 

1 c chocolate chips


Preheat oven to 350 degrees 

Line pan with parchment 

Spray with non stick

In Pot, melt butter and sugar over medium heat

Stir constantly 

Cook 1 minute after butter is melted

Remove to counter to cool 10 minutes 

Stir in cocoa and chocolate chips 

Stir in sourdough discard, eggs and vanilla 

Sift dry ingredients into chocolate mixture 

Add add ins

Stir to combine

Batter is thick

Spread in 13x9 parchment lined pan

Bake 28-35 minutes or until sides are set and middle is slightly firm but not completely set(still jiggly)

Sides will be firm

Cool 30 minutes before cutting

Birria Pork in Spicy Maple Cholula Sauce

        forget not the afflicted.



1 lbs pork butt cut into 2 inch chunks, seasoned rolled in Birria rub and steak seasoning


Mix 1/8 c Birria rub and 1/8 c wood fired garlic steak seasoning 

Roll pork chunks and refrigerate over night 


Cooking method

Dutch oven with lid for cooking with a custard bowl in middle with plate on top

Seasoned meat on top of plate 

2 c Water around bowl and plate

Bake 350 degree oven for 1-1/2 hours

Remove meat to plate 

Reserve drippings to make sauce


Sauce

Meat Drippings 

1/4 c maple syrup 

1/2 JalapeƱo, chopped 

1 mini coke 

1 T Cholula 

Simmer until reduced by half

Add pork 


Birria rub

1/2 c dried guajillo peppers(cleaned, seeded, and torn into pieces then ground to powder in coffee grinder

1 T smoked paprika 

2 T chicken base seasoning 

1 T onion powder

1 T garlic granules 

1 t salt

1 t black pepper 

Mix well

1 small cabbage, chopped 

Water just to cover

2 t Chicken base seasoning 

1/2 t Garlic granules 

1/2 t Black pepper 

Boil until tender, drain


1-2 slices pepper jack cheese

1 slice provolone 

1/4 c sour cheese

1/2 c Crispy bacon bits 

Add cheeses and sour cream 

Top with bacon bits

Jenn's Mom Date Layer Bars

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 16:9-10


    [9] Therefore my heart is glad, and my whole being rejoices;

        my flesh also dwells secure. 

    [10] For you will not abandon my soul to Sheol,

        or let your holy one see corruption.



1/2 c shortening 

1 c brown sugar

Using electric hand mixer, cream together 

Add in 

1-1/2 c sifted flour

1 t baking soda

1/2 t salt

1-3/4 quick oats 

Mix with spatula until crumbly but will stick together if mashed 

Put 1/2 of oat mixture in bottom of 13x9 pan, press down firmly


Fruit mixture 

3 c dates, chop in processor (I used dried figs)

1 c water

1 c sugar

Place in pot, stir often and cook until jam consistency 

Add 1 c chopped walnuts 

Spread on top of pressed down oat mixture 

Put rest of oat mixture on top and press firmly

Bake preheated 350 degree oven for 30 min

Cool 20 minutes before cutting
