Cuban Seasoned Chicken Kale Black Bean Dip

3 c chopped or pulled rotisserie Chicken, dark or white or combo
1 can Black beans, drained and rinsed
1/4 c salsa verde, I love Herdez Salsa Verde
1/4 c red salsa, I love Herdez Salsa Casera 
1 Leek, chopped
1/4 c cream cheese
1/4 c cream
1 c Kale, rough chopped
2 T Cuban seasoning, recipe this blog under rub tab
1 ear of fresh corn, shaved 
1/4 Manchego cheese

Crust
1 c grated sharp Cheddar

Topping 
Snipped Green onions tops
Chopped Tomatoes

Season chicken with Cuban seasoning.
Set aside.
In a large skillet, sauté leeks and kale in a splash of olive oil until leeks are translucent.
Add seasoned chicken, beans, corn, cream cheese, both salsas, cream and Manchego.
Just heat through.
Transfer to a 13x9 pan that has been sprayed with Pam.
Cover with the cheddar.
Bake preheated 350 degree oven for 20 minutes.
To serve, snip green onion tops, chopped  tomatoes and sprinkle over top.
Serve with black bean chips.




Boursin Garlic Herb London Broil Croissant

1 c chopped Boars Head London Broil
1 T Garlic Herb Boursin 
3 Croissants, toasted
Lettuce

Heat meat and add Boursin.
Stir around until melted.
Add to toasted croissant with lettuce.

Spicy Honey Roasted Pecans































Serve the LORD with fear, and rejoice with trembling.  - Psalm 2:11



3 c pecans
1/8 t cayenne pepper
3 T honey
Salt, a pinch sprinkled over nuts


Cook pecans, single layer, in preheated 250 degree oven for 7 minutes on parchment.
Remove and place in a bowl. Add honey and cayenne.
Stir well then sprinkle with salt.
Put back on parchment and bake another 
1 1/2 - 2 hours. 
Cool and put in air tight container.

Crescent Roll Crust Breakfast Pie































8 For you have delivered my soul from death, my eyes from tears, my feet from stumbling;

12 What shall I render to the LORD for all his benefits to me? 
13 I will lift up the cup of salvation and call on the name of the LORD, 
14 I will pay my vows to the LORD in the presence of all his people. 
15 Precious in the sight of the LORD is the death of his saints.  - Psalm 116:8-15



1 pgk. Crescent rolls
5 pieces of spicy sausage
1/4 c leeks
1/4 t oregano
1/4 t fennel seed
3 T cream cheese
1/4 c Manchego  cheese
3 eggs
Smoked salt and cracked black pepper, to taste

Preheat oven to 350 degrees.

Sauté sausage and leeks until sausage isn't pink.
Add seasonings, cream cheese and manchego. 
Melt the cheeses.
When cheese is melted, add eggs.
Set aside.
Take half the crescent roll dough and press into a lightly greased pie plate.
Add sausage mixture.
Take the rest of the dough and slice into strips.
Place on top of sausage mixture in a lattice design. 
Bake 25 minutes.
Cool 5 minutes.
To serve cut into pie slices.

Lemon Sage Butter Rice

1 t Fresh sage, side
1 T Butter
1/2 of a Fresh Lemon juiced
1/2 t dried Tarragon
1 bag microwaved Trader Joe's frozen basmati rice

Microwave rice according to box.
Place in a bowl, add herbs, butter and lemon juice.
