Salt Roasted Cajun Peanuts

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 22:27-28

After a few different combo of seasonings, this is the winner!!

Slightly spicy and salty, drink with a coke mini or a root beer mini!!


2 c rinsed in water, drained, raw red skin on peanuts

4 c coarse kosher salt

4 T Slap Your Mamma Cajun seasoning 

4 T Old Bay seasoning 


Heat salt on # 5 setting on gas cook top in an iron clad large Dutch oven

Add Cajun seasonings 

Stir well

Add rinsed peanuts

Stir continuously for 11 minutes 

They will burn so keep um moving

At the 5 minute mark, the skins should be a deeper red color

Using a large skimmer, with holes, shake peanuts gently to separate from salt

Pour onto a large piece of parchment to cool

Store in a large glass jar

[18] so that by two unchangeable things, in which it is impossible for God to lie, we who have fled for refuge might have strong encouragement to hold fast to the hope set before us.



2 mini muffin pans generously sprayed with non stick

2 minute Preheated 325 degree air Fryer 

Air fry time 12-14 minutes until top is set and starts to crinkle



1 stick of butter

1 c semi sweet chocolate chips

2/3 c white sugar

2 eggs, room temp(important)

2/3 c AP flour

1/4 c cocoa powder

1/4 t salt

1 c chopped toasted walnuts

1/4 c chocolate chips


Melt butter and chocolate chips in microwave in 30 second increments stirring after each 30 second time 

It took me 2 times and a good amount of stirring 


Stir in sugar and keep stirring 2 minutes 

Add eggs and stir a full 2 minutes 

Gently fold, by thirds, flour, cocoa and salt

Fold in nuts and chocolate chips


Using a small cookie scoop, fill each muffin hole

Bake

Cool in pan 


To serve, drizzle with caramel sauce and spray whip topping

9 inch deep dish pie pan

Spray with non stick


1 lb ground chicken 

1 small Onion, chopped 

1 red small bell pepper, chopped 

1 t beef tallow

Brown chicken 

Add onions and peppers

Sauté until veggies are tender

Add seasoning and salsa

Place in pie plate

Top with cheeses

Ladle biscuit topping over meat/cheese mixture 


1 pkg Taco seasoning 

1/2 c Fresh Thick Salsa( I make mine but store bought is fine)

1-1/2 c cheese (I used Hoop, Gouda and Mozzarella)


Whisk well the ingredients below

Pour on top of meat mixture 

1/2 c biscuit mix

1 c milk

3 eggs


Bake preheated air Fryer 400 degrees 

Air fry 20-25 minutes 


Serve with avocado creama and fresh salsa

Bread Machine Made Dough Mountain Sourdough Oven Baked

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Matthew 28:18-20


[18] And Jesus came and said to them, “All authority in heaven and on earth has been given to me. [19] Go therefore and make disciples of all nations, baptizing them in the name of the Father and of the Son and of the Holy Spirit, [20] teaching them to observe all that I have commanded you. And behold, I am with you always, to the end of the age.”



1 c cool water

1/3 c sourdough Discard 

1-1/2 t sea salt

1-1/2 t sugar

1-1/2 T olive oil

3 c aerated bread flour

1-1/2 t instant yeast


Add ingredients to bread machine in order listed 

Start dough cycle (1-1/2 hr)

Check dough ball a few times to see if it's pulling away from sides

Add water or flour a teaspoon at a time if needed

Mine was perfect 

When cycle is done, it should have doubled

Lightly flour parchment 

Shape into ball by pinching and pulling dough on bottom 

Cover and rest 10 minutes 

Shape dough into rectangular 

Short side just slightly wider than bread pan

Roll like cinnamon rolls

Seal seam really well

Tuck ends

Grease 9x5 pan with non stick

Place seam side down

Cover and rise 45-50 minutes until rise is 1 inch taller than pan

Preheat oven to 450 degrees

Lightly dust loaf with flour 

Adjust oven to 425 degrees

Carefully make 3 slits in top using sharp knife 

Bake 25 minutes until internal temp is 200 degrees

Cool 10 minutes in pan

Remove to rack and cool a full hour before cutting

Bread top will be hard but will soften as loaf cools

Oh my goodness!! 

Delicious!

Ingredients

1 c unsalted butter

2 c granulated sugar

4 large eggs

1 t coconut extract

1 t vanilla extract

3 c aerated all-purpose flour

1 t  baking powder

1/2  t salt

1 c crushed and drained pineapple

1 c coconut milk (unsweetened) or pineapple juice

1 c sour cream

1 c toasted sweetened grated coconut


1 can sweetened condensed milk

Pour in holes of warm cake


Instructions

Preheat your oven to 325°F and grease a bundt pan generously.

In a large mixing bowl, beat the butter and sugar until fluffy. 

Add the eggs one at a time, mixing well after each.

Stir in the coconut and vanilla extracts.

Whisk together the flour, baking powder, and salt in another bowl.

In a third bowl, combine sour cream, coconut milk, and drained pineapple.

Gradually incorporate the dry ingredients into the butter mixture in three parts, alternating with the pineapple mixture.

Fold in the shredded coconut gently.

Pour the batter into the prepared bundt pan and smooth the surface.

Bake for 70-80 minutes or until a toothpick comes out clean.

Let the cake cool in the pan for 15 minutes before un-molding.

Using a wooden spoon, poke holes in warm cake.

Pour condensed milk over cake.
