Mertie's Beef Vegetable Soup





























 

 

2 Timothy 3:15-16


[15] and how from childhood you have been acquainted with the sacred writings, which are able to make you wise for salvation through faith in Christ Jesus. [16] All Scripture is breathed out by God and profitable for teaching, for reproof, for correction, and for training in righteousness,



This is the soup of my childhood

My grandmother made this soup 


 

4 c Chuck roast cut into 1 inch chunks and trimmed of some of the fat

1 T Olive oil

1/4 c Leeks

1/4 c Onions

1/8 c Celery

1 T roasted Garlic

2 T  Beef base seasoning 

1/2 t coarse Pepper

1/2 t Cajun seasoning 

Using a Dutch oven, heat oil

Sauté the above veggies and meat in oil until meat turns light brown

Add 2 c water

Put lid on and bring to light boil

Turn to simmer and go 45 minutes 


Add these ingredients 

1 T Worcestershire sauce

1 t Apple cider vinegar 

2 T tomato concentrate

1 t sugar 

Qt. Beef bone broth

1 large carrot, sliced thin

1 large potato, chopped 

1/2 c small macaroni noodles

1 ear of sweet corn shaved off cob

1 c Spinach 

2 c Cabbage, chopped 

3 large whole fresh tomatoes, peeled and chopped 


Bring back to a light boil 

Turn to simmer and cover

Cook 30 more minutes or until beef is tender

Serve with cornbread

Filet of Beef Strips with Parmesan Horseradish Crust

        O LORD, my rock and my redeemer.




Beef Filets cooked medium slightly blackened 


Crust

1 stick salted butter room temp

1 c panko

3/4 c grated Parmesan 

1 T prepared Horseradish 

Mix and set in fridge 30 minutes 


Prepare steaks

Fry in skillet with a little mixture of butter-oil until medium 

Remove to cool stove eye

Turn on broiler

Mound Parmesan Crust on top of each steak

Put under broiler just till slightly browned

Cut into thick strips

Serve with curly fries and salad

Szechuan Red Braised Beef

2 T neutral oil

2 T Toban Djan *

Fry together

Add

2 T chopped Ginger

1 t Chinese 5 spice mix

1/4 t black peppercorns or Szechuan peppercorns

1/4 c shaoxing wine

Stir 

Add 

2 lb  (1&1/2-2 inch) cut into cubes boneless beef stew chunks

Stir

4 c water

2 T Soy sauce

4 Green onions whites

Reserve green tops 

1-1/2 hr covered Dutch Oven in 350 oven 

Stir

Back in oven no lid 30 minutes 

Add 

2 chopped Carrots 

Back in oven uncovered 20 minutes 

Thicken broth with cornstarch slurry

Serve over sticky rice and fresh cilantro and green onion tops

1 t Panang curry

1 t Chili garlic sauce 

1 t dark Soy sauce

Mix and refrigerate 

This is supposed to be made with white miso but I don't like it so I adjusted to my taste with the curry

Easy Quick Delicious Shrimp Scampi

An ej original recipe!!


1 lb Cleaned medium or large Shrimp ( I used frozen)

8 oz Angel Hair or Thin spaghetti noodles cook and set aside


2 T olive oil

2 T butter

1/4 t red pepper flakes

Salt and pepper to taste 

1/2 t Thyme 

1/2 t Parsley

1/2 t Rosemary 

1/2 t Oregano

1 t sugar

1 T Roasted garlic 

1/4 c shallots, diced

1/4 c Leeks, sliced thin 

1/2 c mushrooms, chopped small

Add butter and oil to large skillet 

Heat, add pepper flakes, herbs, salt and pepper, sugar and veggies

Sauté on medium 

Using tongs, add shrimp 

Just cook until shrimp are pink on both sides

Remove to bowl 


1/2 of a lemon juice 

1/2 c Sauvignon Blanc

1 T mascarpone 

1/2 c 3 cheese Italian blend


Add lemon juice, wine, mascarpone and cheese

Reduce for 3-4 minutes 

Add shrimp back

Cut heat off 

Add pasta

Moist Banana Walnut Bread





























 

 

Psalm 9:1


I Will Recount Your Wonderful Deeds


 To the choirmaster: according to Muth-labben. A Psalm of David.


    [1] I will give thanks to the LORD with my whole heart;

        I will recount all of your wonderful deeds.



2 c aerated  AP flour

3/4 t baking soda

1/2 t kosher salt

1/2 t baking powder 

1 t cinnamon 

1 stick melted butter, set aside

1/4 c white sugar

3/4 c light brown sugar

3 egg

1/2 c buttermilk

1-1/2 c mashed ripe bananas (4 bananas) 

1 t vanilla

1 c chopped walnuts


Preheated 350 degree oven for 1 hr and 15 minutes 

9x5 non stick pan loaf, spray only bottom with non stick 


Medium bowl whisk dry ingredients 

Using hand mixer mix melted butter and sugars until smooth and light

Add to dry ingredients 

Beat in eggs one at a time

Beat 30 seconds to 1 minute each egg add in, just till mixed

Add vanilla, mashed bananas and buttermilk

Beat 30 seconds 

Add dry ingredients 

Beat just till incorporated about 30 seconds, then use spoon 

Lastly add walnuts 

Add batter to pan

Bake until bread temp is 206 degrees

Do not skip this step

Cool on rack for a full 1 hour 

This keeps bread moist 

Store in air tight container

Serve warm with butter or apple butter
