Roasted Poblano Bourbon Gravy for Steaks





























 

Proverbs 14:7


    [7] 

    Leave the presence of a fool,

4 skillet grilled seasoned Filets 


Gravy 

1/4 c chopped roasted Poblano 

1/4 c chopped roasted small onion

1/8 c sliced Leeks 

1 T beef base dry seasoning

1 T Butter

1 T Roasted Garlic

1/2 t Sugar

1/2 t Cumin

Splash of Half and half 

1 capful of bourbon 

1/4 c water

1/2 t crushed peppercorns 

1/2 of a lime juiced


1 T cornstarch to thicken


Sauté onions, Leeks and peppers in butter.

When tender, add rest of gravy ingredients. 

Add thickener.

Serve over a heavy drizzle over steak.

Roasted Poblano Creamed Corn

6 ears of sweet corn, shaved 


Sauce

1/4 c chopped roasted Poblano 

1/4 c roasted small onion

1 T Butter

1 T Roasted Garlic

1/2 t Sugar

1/2 t Cumin

1/4 c water

1/2 t crushed peppercorns 

Salt to taste

1/2 of a lime, juiced


Sauté poblano and onion in butter.

After pepper and onion are tender, 

add rest of sauce ingredients.

Add corn, cook water out, corn should be tender and corn is ready to eat.

New Twist Croque Monsieur Egg Pie

1 greased deep dish pie pan



An ej original recipe!

 

 

3 T butter

10 thin slices stale or fresh white bread, crusts trimmed, cut into pieces

12 thin slices Boars Head Honey Maple ham

6 thin slices Boars Head deli sliced Pepperoni 

2 round T flour

1 c whole milk

Freshly grated nutmeg

Salt and pepper

1 T Dijon mustard

2 large eggs

1/4 c half and half

4 ounces Gruyere or Swiss cheese, shredded 

5 slices Havarti 

Fresh chopped parsley

 

Grease a casserole dish and line with half of the bread. 

Top with half of the ham and pepperoni.

Melt the butter in skillet over medium heat, add the flour and whisk 1 minute. 

Add 1 cup of the milk and some nutmeg, and then season with salt and pepper. 

Cook to thicken, the sauce should coat the back of a spoon. 

Stir in the mustard. 

Spoon half of the thickened bechamel evenly over the ham and pepperoni, top with the remaining bread.

Whisk up the eggs and the remaining 1/4 cup half and half and sprinkle with salt and pepper. 

Pour the eggs evenly over the casserole dish and then add the remaining ham, pepperoni and bechamel.

Top with the Gruyere.

Preheat the oven to 375 degrees F and bake the casserole until golden and firm, 30 to 35 minutes. 

Sprinkle with fresh parsley.

Let cool 10 minutes to set.

Apricot Purée Fudge Brownies

An ej original recipe!



350 degree preheated oven for 25-30 minutes.

Line a 9x9 pan with foil, leave about a 2 inch foil overhang to easily remove brownies.


Brownies are done when toothpick comes out clean.


1/4 c chopped dried apricots 

4 T prune juice

Place juice and prunes in pan and a low simmer until juice reduces to 2 T

Cool

Place in food processor to make a paste.

Set aside.


1/2 c semi sweet chocolate chips

2 T butter, chopped 

Melt over boiling water.

Set aside.


1 c white sugar

1 large egg plus 1 egg white

1 t vanilla

Very quickly cream sugar, eggs, prune paste and vanilla into chocolate mixture.


1/2 c plus 1/4 c AP flour

1/3 c cocoa powder

Whisk together.

A little bit at a time, incorporate dry ingredients into wet ingredients just till combined.

Batter will be very thick.

Evenly spread in pan.

This is my take on ATK recipe!

Boy oh boy!!

Delicious

The meat was perfectly seasoned 

Made 6 tacos

Save the rest of pork for Nachos



4-6 Boneless country style pork ( I got mine at Aldi and it was a little over $5.00

Place pork in salt brine, 1 qt of water and 1/4 c kosher salt, room temp for 30 min

Remove and pat dry

Cut into 1 inch chunks

Separate dark from white meat

Toss with rub oil

Let sit 20 minutes

Place in skillet according to light and dark meat.

Fry in 1 T bacon grease.

Cook dark to 155 degrees

Cook light to 140 degrees

Tent 5 minutes 

Chop to desired size

Squeeze lime to serve

Top as you prefer


Meat rub paste

1/4 c olive Oil 

3 T roasted Garlic, mashed

2 T Lemon juice

2 t smoked paprika 

1 t coriander 

1/2 t toasted cumin

1/2 t cayenne ( I used Aleppo pepper)

1/2 t black pepper 

1 t salt


Lastly add to oil paste

1 T fresh diced Ginger ( I used pickled Ginger)

1 T Fresh oregano ( I used 1 t dried) 


Suggested Toppings

Chopped Lettuce or Cabbage

Chopped grilled onions

Sliced Jalapeño 

Sliced radishes

Avocado creama

Sour cream

Fresh Salsa 

Lime
