Instant Pot Sunday Beef Roast with Gravy and Veggies






























Psalm 51:1-2


Create in Me a Clean Heart, O God

    [1] Have mercy on me, O God,

        according to your steadfast love;

    according to your abundant mercy

        blot out my transgressions. 

    [2] Wash me thoroughly from my iniquity,

        and cleanse me from my sin!



Based on Amy and Jacky IP recipes!!




3 lb well marbled chuck roast, pull apart into 2 roast, tie and season on both sides with coarse salt and black pepper


Heat IP on sauté until hot, add 2 T olive oil and sear each side for 10 minutes.

Remove to plate.

Add seasoning veggies.

Sauté in Roast drippings.

De-glaze pan with 1 T of gravy ingredients.

Add all of gravy and the roast back in.

Set to pressure and cook 40 minutes.

Do a 15 minute release.

Remove roast and cover with foil.

Add veggie mix to gravy.

Set to pressure, cook 10 minutes.

Remove veggies. 

Using a cornstarch slurry, thicken gravy.

To serve, chunk roast, add veggies and ladle gravy over both.

Serve with crusty bread and a green salad.



Seasoning veggies

1/4 c each Leeks, mushrooms 

1 T roasted garlic

2 T celery


Gravy ingredients 

2 c beef broth ( I made mine from beef base)

1 t each balsamic vinegar, Worcestershire sauce and Soy sauce

1/2 t each rosemary, thyme and bay leaf powder 

Mix well and set aside


Vegetables

2 c Carrot chunks

2 c Potato chunks

I made these with the dry potato pack and they turned out great!!

These were delicious! 

The texture is not like hash browns but like a fried mashed potato cake. 


1/4 c Parmesan for finishing

 

 4 medium Yukon Gold potatoes 

Peel and cover in cold water 

Let sit 10 minutes

Dry potatoes 

Grate

The texture will be like thick mashed potatoes


Add in

1/4 c cornstarch 

1/2 t Garlic granules 

1/2 t Onion powder

1/2 t Seasoned salt 

1/4 t Pepper

1 T Cilantro 


Make into 6 potato patties. 

Cook in

2 T Clarified butter, reserve 1 T

2 T olive oil, reserve 1T 

Add to large skillet.


Heat half of the clarified butter and oil on medium.

Add seasoned dry potato patties.

Fry until slightly browning and flip.

Press the cheese in.

Add the reserved clarified butter oil mixture to non-fried side.

Fry until crispy, flipping to insure crispness.

Milano Salmon with Basil Pesto Butter from Costco

Buy Salmon with basil pesto butter and fresh dill from Costco


Do not overcook!!!

Bake preheated 425 oven, bottom rack, parchment cover sheet pan.

Cut salmon into 6 servings.

Cut butter in half and top each salmon serving with 2 pieces of butter.

Dice the fresh dill and put a 1/4 t on each salmon serving.

Bake 13 minutes, uncovered.

Remove, temp should be at least 145 degrees but mine was 155 and it was perfection.

Sprinkle with a tiny pinch of coarse kosher salt.

Squeeze with lemon if you like.

Kickin Warm Bar Olives

































Psalm 49:7-9


    [7] Truly no man can ransom another,

        or give to God the price of his life, 

    [8] for the ransom of their life is costly

        and can never suffice, 

    [9] that he should live on forever

        and never see the pit.



Drizzle Olive oil in small skillet


1 c Castelvetrano Olives ( you could use different colored Olives for a prettier look)

2 -3 Lemon zest slices

1/4 t Rosemary

1/4 t Coriander 

1 T Roasted garlic

Pinch of red pepper flakes 

1 T Chopped Greek peppers (Pepperoncinis)

Pinch Black Pepper 

Pinch of Coarse salt before serving


Heat spices in oil, add garlic, add lemon zest slices, then olives.

Sauté until Olives start releasing water, about 5 minutes.

Add coarse salt and serve warm.

DIY Boursin Garlic Herb and Chive Spread

        so your praise reaches to the ends of the earth.

    Your right hand is filled with righteousness.



4 oz salted spreadable butter

4 oz spreadable cream cheese

2 t roasted mashed garlic

1/2 t each dried chives, parsley, oregano, thyme, basil, tarragon 

1/4 t black pepper


Place on a large paper plate.

Mash butter, cream cheese and garlic together with a fork, working in the herbs and pepper.

Work mixture until well incorporated.

Put in a plastic tub and store in fridge.
