Oscar Style Shrimp Filet Mignon






























1 John 2:2


[2] He is the propitiation for our sins, and not for ours only but also for the sins of the whole world.



2 Filet, seasoned and cooked to your desired taste


Lighter Hollandaise

1/4 c Mayo 

2 T Heavy cream or half and half

1 t fresh Lemon juice

1/8 t Pepper flakes 

1/2 t Dry mustard 

Smoked salt, to taste

Cracked black pepper, to taste

1 t white wine

Whisk together.

Set aside.


10 Shrimp, cleaned and chopped 

Steak seasoning of your choice

Olive oil or clarified butter


To assemble, place cooked Filet on bottom, then add shrimp and drizzle with Hollandaise

Instant Pot Asian Pork Country Ribs

1 pgk Pork Country Ribs 


24 hr marinade

1/2 c low sodium Soy sauce

1/2 c Mirin (Chinese cooking wine)

2 T brown sugar

1 t whole peppercorns (I used black)

1 t 5 spice powder 

2 bay leaves 

3 T of pickled Ginger 

1/2 medium onion

3 T Roasted garlic

2 whole scallions 


Set sauté to hot.

Sear Ribs.

Remove from pot, add 1/2 c water.

Add IP rack and stand Ribs on side.

Place lid on, set top pressure valve to pressure.

Set to meat, 25 minutes with a natural 15 minute release.

Place under broiler to crisp up.

Old Time Chicken Vegetable Soup

Why Have You Forsaken Me?

    [1] My God, my God, why have you forsaken me?

        Why are you so far from saving me, from the words of my groaning? 

    [2] O my God, I cry by day, but you do not answer,

        and by night, but I find no rest.



 

28 oz Hunt's Whole Tomatoes, juice and tomatoes that you squeeze with hand

1 qt chicken bone broth

1 T kosher salt 

1 t black pepper

2 c Ford Hook Lima beans

3 medium Yukon Gold Potatoes 

Bring to a light boil.

Turn to a low simmer, for 45 minutes, lid on. 


Add after the 45 minutes.

2 c Cabbage, thin cut strips

2 ears of corn, shaved

1/2 c BBQ sauce or ketchup 

1/4 c white sugar 

3 T fresh Lemon juice

3 T White vinegar 

3 T Worcestershire sauce

1 c Rotisserie chicken, shredded 

Cook another 30 minutes, lid on.


Serve with cornbread!

Parmesan Panko Crusted Salmon

    [9] O LORD, our Lord,

        how majestic is your name in all the earth! Amen





1-2 lb Filet Salmon or Steel Head Trout salted and peppered


Squeeze 1t lemon into

1/4 c Mayo, 1 t garlic, mix together and slather on fish 


Crust

3/4 c Panko

2 T Parmesan

Zest of a Lemon 

1/4 t each of dried parsley, thyme, oregano, rosemary 

1/2 t kosher salt

1/2 t pepper

2 T olive oil or melted butter

Stir to mix


Spoon on the middle of Filet and spread to sides.


Oven preheated set at 425 degrees cooked on parchment in a sheet pan for 18 minutes until fish flakes and is still slightly pink.

Instant Pot Juicy and Tender 5 Spice Soy Chicken

2-3 lbs Chicken parts of your choice


Overnight Marinade 

1/2 c low sodium Soy sauce

1/2 c Mirin (Chinese cooking wine)

2 T brown sugar

1 t whole peppercorns (I used black)

1 t 5 spice powder 

2 bay leaves 

3 T of pickled Ginger 

1/2 medium onion

3 T Roasted garlic

2 whole scallions 

Make and put in gallon zip lock.

Add chicken parts, burp bag, seal, refrigerate overnight.


Remove chicken parts.

Reserve liquid part of marinade.

Dry chicken with paper towels.

Sear in olive oil until golden.

Remove.

Pour water in pot to de-glaze.

Dry out, add rack.

Place chicken on top of rack, add liquid marinade.

Set to pressure, set meat to 25 minutes.

Release pressure after 15 minutes. 

Serve with sauce ladled over.

Temp should be 165-170 degrees.
