Soffritto Seasoned Chicken and Rice





























Ecclesiastes 2:14


[14] The wise person has his eyes in his head, but the fool walks in darkness. And yet I perceived that the same event happens to all of them.



An ej original recipe!!



1 c Smoked chicken, chopped or pulled

1 c Butter salted rice

2 T Soffritto seasoning

1 T Clarified butter

1/2 c Onions 

1/2 c Bell pepper 

Salt and pepper to taste

1/2 of a Lime juiced

1/4 Sauvignon Blanc

1/4 c half and half

1/4 c water

1/4 3 Italian cheese blend 


Sauté peppers, onions and seasonings

 in butter.

Add water, wine, lime juice, cream and cheese to make sauce.

When it's slightly thick, add chicken and rice.

This has got to be some old granny's recipe!!

It is so delicious.

Made me feel like I had a big hug!!


1 c Cooked Sticky rice 

Set aside.


Béchamel sauce

3 T butter

3 T flour

1 t Salt

1/2 t White pepper

1/2 t grated Nutmeg

1/2 t Bay leaf powder or 1 Bay leaf

1 c whole milk


Make Béchamel sauce over medium heat then put in a bowl and set aside.


2 c dark meat Rotisserie chicken, pulled

Set aside.


2-4 c chicken bone broth (depends on how much u want to make)

2 T half and half


Veggies

2 medium Yukon Gold Potatoes ( microwave 2 min. each side, skin chop into medium size chunks)

2 Carrots, chopped

1 small Onion, chopped 

1 Jalapeño, seeded and sliced

1 c chopped button Mushrooms 

1 c blanched Broccoli florets

1 T butter

1/2 t salt


Over medium heat, sauté onions, pepper, carrots, salt and mushrooms in butter for 5 minutes stirring constantly.

Add chicken, bone broth, potatoes and Béchamel, stir.

Cook until carrots are fork tender, 15 minutes, then add broccoli.


Add sticky rice on one side of bowl!

Pan Seared Marinated Toasted Sesame Asian Tuna Steaks

[10] Whatever your hand finds to do, do it with your might, for there is no work or thought or knowledge or wisdom in Sheol, to which you are going.



4 Tuna steaks (3 inch x 3 inch)


1 hour Marinade

1/8 c each of Hoisin and Sweet Chili Thai Sauce

2 t Soy sauce

1 Scallion, diced

1/2 t toasted sesame oil

1/2 t rice vinegar 

2 T brown sugar

1 t roasted mashed garlic

1 T sushi Ginger, chopped 

1/4 t red pepper flakes

1 t toasted sesame seeds 

Mix and add Tuna.

Leave on counter so Tuna will be room temp and cook evenly.


1 t grape seed oil

Large skillet, heat on medium, add Tuna.

Do not overcook.

Tuna should be velvety and buttery in middle.

Look at side of Tuna steak, you will see it changing color.

When it's 1/4 way color change flip.

I only cook mine 3 minutes each side, remove from heat, tent with foil and let sit 5 minutes.

You can bring marinade to a boil, slightly cool and use as a finishing sauce if preferred.

Serve with Gurkensalat* and Ginger Cilantro rice*!

Everything Seasoned Bacon Apple Cheese Egg Croissant

Everything seasoning (Aldi or Trader Joe's)

Fried crisp Bacon (season with everything seasoning at end of cooking)

Havarti Cheese slices

Thin Apple slices ( Gala or Honey Crisp)

Fried egg or egg whites

Croissants 


Toast croissant topped with cheese.

Add fixins!

Ground Chicken Soffritto Meatballs in Red Wine Gravy

An ej original recipe!



Meatballs 

1 lb. Ground Chicken 

Salt and pepper according to your taste

3 T Soffritto seasoning Trader Joe's 

1/2 c Panko

1/4 c 3 cheese Italian blend

1 t Cream cheese

2 T Tomato paste concentrate 

3 T buttermilk 

1/4 t Garlic granules 

1/4 t Onion powder

Make meatballs, a little smaller than a golf ball.

Line sheet pan with foil and place sheet of parchment on top.

Bake preheated 450 degree oven for 20-25 minutes until 165.

They will be lightly browned!


Gravy

1 t bacon grease 

3 T diced Onion 

1 t roasted Garlic 

1/8 soffritto seasoning 

3 T diced Mushrooms 

2 c beef stock 

1/4 red wine( I used Cabernet Sauvignon)

2 T half and half

Cornstarch slurry


Sauté veggies in bacon grease, 1 minute.

Add seasonings, sauté 1 minute.

Add stock, red wine and half and half. Sauté 2 minutes, add slurry and thicken.

Add Meatballs to gravy.

Serve with sticky rice, collards/mustard greens, cornbread and great northern beans!!
