Sausage Cheese and Prune Breakfast Balls
































Isaiah 55:6-9


    [6] “Seek the LORD while he may be found;

        call upon him while he is near; 

    [7] let the wicked forsake his way,

        and the unrighteous man his thoughts;

    let him return to the LORD, that he may have compassion on him,

        and to our God, for he will abundantly pardon. 

    [8] For my thoughts are not your thoughts,

        neither are your ways my ways, declares the LORD. 

    [9] For as the heavens are higher than the earth,

        so are my ways higher than your ways

        and my thoughts than your thoughts.



1 lb of mild sausage 

1/2 c prunes plus 1 t water ( dice in mini food processor )

1/2 c diced sweet onion

1/2 c hoop cheese or Cheddar 

1/2 t thyme

1/2 c panko 

1 t maple syrup 

Make meatballs.

Set aside. 


Preheat oven to 400 degrees.

Make into 1 inch ball.

Line pan with parchment.

Add breakfast balls.

Bake 20 minutes.

Serve with scrambled cheesy egg whites and a muffin.

Castelvetrano Olive and Unexpected Cheddar Pasta Salad

































Isaiah 53:3-7

    He was despised and rejected by men,

An ej original recipe!




1 lb Spaghetti pasta cooked al dente, reserve pasta water

Set aside


2 T Olive oil

1 Small Onion, diced

3 T Roasted Garlic, mashed

1/4 c diced Roasted Red Peppers

1 c sliced Castelvetrano olives ( Costco) 

1/2 c Unexpected Cheddar, crumbled ( Trader Joe's) 

1/4 c 4 % milk fat Cottage cheese 

Pinch or more Red Pepper flakes 

Salt and pepper to taste 


Sauté onions, pepper flakes and garlic in oil for 1 minute.

Add peppers, cottage cheese, pasta, Unexpected Cheddar and 1-1/2 c pasta water.

Sauté until thickened, stirring constantly, add sliced olives.

Season and top with Bagel bits.

Left Over Rotel Cheese Dip Egg Whites


































Isaiah 45:18

An ej original recipe!



Desired amount of egg whites, seasoned with Trader Joe's umami, seasoned salt and Mrs. Dash table blend

Stir in the amount of Rotel dip you would like


Scramble seasoned egg whites, stir in Rotel, enjoy!!


1/2 half of a small sausage roll browned and chopped in small pieces, set aside


E J's Rotel Dip recipe (for 2)

1/4 of the smallest Velveeta bar, cut into small chunks, set aside


1/2 t oil

1/8 c diced onion

1/2 t smoked paprika 

1/2 t toasted cumin

1/2 t chili powder

Sauté onions and seasonings in pot.


Add

1/8 c half and half

1/4 of the can of mild Rotel tomatoes, drained

1/2 c Quesadilla shredded cheese

Velveeta and cooked sausage

Melt cheese stirring constantly.

Serve with tortilla thins!!

Asian Ground Chicken Sliders


































1 John 5:11-12

Makes 6 Sliders


1 lb ground Chicken(I used ground breast)

1/4 t dried Dill

1 t roasted Garlic, mashed 

1 t pickled Ginger, diced

1 t dries Cilantro 

2 t sweet chili Thai sauce

1 t light Soy sauce

1 t toasted sesame oil

Just mix to incorporate 


Add grape seed oil to non stick, heat to medium, add burgers.

Cook 3 minutes them flip, repeat until temp reaches 165 degrees.

It took around 9- 10 minutes.

They will burn if you don't flip every 3 minutes.


Havarti cheese slices

Brioche slider buns


Honey Ginger Lime Mayo

1 t Honey

1 t diced pickled Ginger 

1 t lime juice from fresh lime

1/4 c Mayo

Whisk and set aside


Cucumber slices cut on long side

Thin sliced sweet onions

Romaine lettuce

Fast and Delicious Instant Pot Pork Tenderloin in Gravy

2 small pork Tenderloin, cut off thin ends and reserve for breakfast chops, cut into 4 same size chunks, trim silver skin, 


  

Seasoning

1 t kosher salt

1 t black pepper

1 t garlic granules 

1 t onion powder

1 t oregano

1 t smoked paprika 

1 t thyme 


Mix and set aside.


Heat 2 T grape seed oil on the sauté setting of Instant Pot.

When it is hot sear thighs starting with skin side for 3 minutes, flip and do another 2 minutes.

Remove to plate.

Hit cancel.

Add 1-1/2 c chicken stock and deglaze bits.

Add trivet to IP.

Add pork to top of trivet.

Set to Meat for 6 minutes, pressure on.

Add lid.

After cook time do a natural release for 15 minutes.

Let pork rest 5 minutes before cutting into 1/2 inch slices.

Use drippings to make gravy.

Make a cornstarch slurry to thicken.

Best gravy I've ever tasted!!!
