Sea Bass in Sauvignon Blanc Lime Garlic Sauce

































Romans 9:16

An ej original recipe!


2 pieces of Sea Bass (I use frozen Barramundi from Costco)

Thaw in cold water

Grease both sides with olive oil

Squeeze 1/2 of a lime on both sides

Season

Toss in cornstarch 

Pan sear in hot clarified butter and oil

Make sauce


Seasoning mix

1/2 t Old Bay

1/2 t Garlic

1/2 t Smoked paprika

Light Salt and pepper

Mix and set aside.


Finishing Sauce 

2 T Sauvignon Blanc

2 T Butter

1 t roasted Garlic

1/2 t Sugar

1/2 of a Lime juiced

Black pepper

Reduce slightly.

Drizzle over sea bass.

Serve with garlic mashed potatoes and a salad!

Instant Pot Beer Gravy Over Chicken

        his days are like a passing shadow.



Ale Gravy 

I c light color beer ( I used Belgium White Ale from Aldi)

1 T water 

1 T cornstarch 


4 Boneless Skinless chicken breast

Make a brine of 1/8 c salt and water to cover in a gallon zip lock 

Brine immersed for 1 hr in fridge.

Pat breast dry and set aside


Seasoning Paste

1 &1/2 T grape seed oil ( or any neutral oil)

1 t dried oregano

1 t garlic granules 

1 t black pepper

1/2 t onion powder

1 t smoked paprika 

1 t toasted cumin


Glaze both sides of chicken.

Add 1 T oil to IP.

Heat IP on sear setting.

Sear in IP on sauté 3 minutes each side.

Remove.

Add Ale and deglaze pan.

Hit cancel button.

Place rack in IP.

Lay 4 brined breast on rack.

Cover, lock, set lid to pressure.

Set to high pressure.

Set timer to 5 minutes.

Let come to pressure.

After cook time ends, set stove timer for 8 minutes to allow some pressure to come off.

After 8 minutes, let rest of pressure off.

Remove chicken to plate and rest 5 minutes.

After rest, pull chicken into bite size pieces.

Add cornstarch slurry to Ale drippings to make gravy.

Set to sauté and thicken.

Serve on a bed if rice with Ale gravy drizzled over chicken.

Sprinkle with black pepper.

Marinated Filet of Beef


































1 Thessalonians 5:16-22


[16] Rejoice always, [17] pray without ceasing, [18] give thanks in all circumstances; for this is the will of God in Christ Jesus for you. [19] Do not quench the Spirit. [20] Do not despise prophecies, [21] but test everything; hold fast what is good. [22] Abstain from every form of evil.



4 Filet of Beef


Marinade

1/4 c light Soy 

1/4 c Olive oil

1/4 c Worcestershire sauce

1/4 c Vidalia Onion 

2 T Honey 

1/4 c Green onion tops

1 t roasted Garlic

1 t dried Thyme 

1 t dried Rosemary 

1/2 t Salt 

1/2 t Aleppo pepper

Mix

Reserve 1 c of marinade for serving


Pour over Filet and marinate 30 minutes, flip and repeat.


Pat steaks dry.

Fry steaks in lightly oiled skillet until cooked to medium.


Add 1 t red wine vinegar to the reserved cup of marinade for serving over cooked steaks.

Marinated Tuna with Warm Peach Jalapeño Salsa

































Psalm 140:12-13

        the upright shall dwell in your presence.



Marinade

1/4 c light Soy

1/4 c Peach juice (out of jarred peaches)

2 T Honey

1/2 of a Lime juiced

2 t Olive oil

1 T Roasted garlic

2 T Fresh parsley 

1 /2 t Dried oregano

1/2 t Black pepper

1/4 t salt 


Marinate Tuna steaks for at least 1 hour.

Oil skillet, heat 2 minutes and fry patted dry Tuna steaks.

Fry to medium 3-4 minutes each side, rest.


Warm Jalapeño Peach Salsa

1 c peaches, chopped

1 seeded Jalapeño, sliced

1 t roasted Garlic

1 T Honey

Bourbon Steak and Gravy Poutine

Left over Filet steak, cut into bite size pieces

Fried potatoes 

1 sliced thin Vidalia Onion

Gravy


Fried potatoes

4 microwaved Yukon Gold medium potatoes 

Peanut oil

2 minutes each side


Green onions for topping


Poutine Gravy 

1/2 t Beef stock

1 c Beef

1 t Olive oil

1 t roasted garlic 

1 t Flour

1 Onion

1 T Bourbon 



Fry potatoes.

Season with seasoned salt and garlic granules.

Make steak gravy.

Layer potatoes, meat and gravy then cheese and top with green onions.

Sour cream. Optional
