Fennel Leek Onion and Potato Casserole
































Colossians 2:9-15


[9] For in him the whole fullness of deity dwells bodily, [10] and you have been filled in him, who is the head of all rule and authority. [11] In him also you were circumcised with a circumcision made without hands, by putting off the body of the flesh, by the circumcision of Christ, [12] having been buried with him in baptism, in which you were also raised with him through faith in the powerful working of God, who raised him from the dead. [13] And you, who were dead in your trespasses and the uncircumcision of your flesh, God made alive together with him, having forgiven us all our trespasses, [14] by canceling the record of debt that stood against us with its legal demands. This he set aside, nailing it to the cross. [15] He disarmed the rulers and authorities and put them to open shame, by triumphing over them in him.



An ej original recipe!!



1 small fennel bulb, sliced thin

1 Onion, sliced thin

1 thin sliced Leek

8 medium Yukon Gold potatoes 

1 t baking soda

1 T salt


Bring enough water to boil to cover potatoes.

Add onion, Leek and fennel and boil 5 minutes.

Remove to a plate.

To the same water, add potatoes and cook 10-15 minutes until knife tender.


Sauce


Reserve 1-1/2 c of water.

Add 1/4 c Sauvignon Blanc, lightly boil 3 minutes, add 2 T butter and 1/8 c evaporated milk.

Add 1/2 t black pepper.

Whisk in 2 T flour to thicken.

Taste for seasoning.

Place potato mixture in 9 in square greased Casserole.

Pour fennel onion Leek on potatoes and stir to incorporate.

Top with crunchy topping.

Bake preheated 375 oven for 35 minutes or until lightly browned.


Crunchy Topping 

3/4 c Parmesan

3/4 panko

1/4 c melted butter

Mix well.

Psalm 127:1


Unless the LORD Builds the House


A Song of Ascents. Of Solomon.


    [1] Unless the LORD builds the house,

        those who build it labor in vain.

    Unless the LORD watches over the city,

        the watchman stays awake in vain.



 

4 Filet steaks, trimmed and cut into 1 inch cubes and lightly seasoned 

Olive oil for searing

Sauté to medium and set aside.


1 box frozen puff pastry sheets, thawed

Cut into squares.

1 beaten egg

Set aside.


Mushroom and Black olive filling

8 oz button mushrooms, diced 

1 small can black olives, diced

1/4 c diced leeks

1/2 t of black pepper and oregano

1 t roasted garlic

1 t olive oil

1/2 t Soy sauce

Sauté in skillet and mash with potato masher to make a paste.

Set aside.


Mustard Dipping Sauce

2 T Honey

3 T Mayo

1/2 t Black pepper 

2 T Olive Garden Italian dressing

Make and set aside.


Oven temp 400 degrees

Oven cook time 15 minutes


Use sheet pan lined with parchment.

Spread middle of each square with mushroom paste, top with Beef square, fold into a pastry.

Brush with beaten egg.

Bake.

Easy Apple Hand Pies

Frozen Puff pastry, thawed

Can of pie filling 

Beaten egg


Cut into squares, fill, fold, brush with egg, bake.

Drizzle with topping.


Sweet drizzle 

Powdered sugar

Milk 



Cook 400 degree oven 15 minutes.

Light Delicious Dinner































2 Peter 3:5-10


[5] For they deliberately overlook this fact, that the heavens existed long ago, and the earth was formed out of water and through water by the word of God, [6] and that by means of these the world that then existed was deluged with water and perished. [7] But by the same word the heavens and earth that now exist are stored up for fire, being kept until the day of judgment and destruction of the ungodly.

Spinach and Sauvignon Chicken Meatballs with Shells in Seasoned Vodka Sauce






































Hebrews 1:10-12

        and the heavens are the work of your hands; 

    [11] they will perish, but you remain;

        they will all wear out like a garment, 

    [12] like a robe you will roll them up,

        like a garment they will be changed.

    But you are the same,

        and your years will have no end.”

Topping

1/4 c Mozzarella 


Sauvignon Blanc Chicken Meatballs 

1 lb ground white meat chicken 

1 shallot diced

1 t apple cider vinegar 

1/2 t salt and pepper

Pinch of red pepper flakes

1 t smoked paprika

1 t dried basil

1 t dried thyme

1 t dried oregano 

1 t garlic granules 

1 t onion powder

1/4 c panko

1/8 c Sauvignon Blanc

1 t olive oil

1/4 t ground Fennel seed

1/2 t brown sugar

1/4 c grated Parmesan 


Mix just till incorporated.

Make golf ball size Meatballs.

Sear in clarified butter till slightly browned.

Internal temp should be 165 degrees.

I quarter mine but you can leave them whole.

Set aside.


1 c cooked al dente Large shells, set aside reserve pasta water


Vodka Sauce

1 t clarified butter

1 t olive oil

1 small Shallot , diced

1 clove garlic, minced

Pinch red pepper flakes

14-ounce can diced tomatoes

1 c evaporated milk

1/4 cup vodka

2 T tomato paste

Make and set aside.

Add Pasta cooking water, for sauce consistency 

Add 1/4 c ricotta 

Kosher salt and freshly ground black pepper


Veggie

2 c Spinach

1 small Onion 

1 t clarified butter

Sauté onions in clarified butter.

Add sauce ingredients.

Mash tomatoes with potato masher.

When sauce is reduced, add Meatballs.

Add pasta water to thicken.

Top with 1/4 c Mozzarella.
