Cafe de Paris Butter

























This is my take on this recipe!!



Psalm 119:116


    [116] Uphold me according to your promise, that I may live,

        and let me not be put to shame in my hope!



4 T softened salted butter

1 T diced Shallot 

1 t roasted garlic 

1/2 t anchovy paste

1/2 t fresh lemon juice

1/2 t Worcestershire sauce

1/2 t Dijon 

Pinch of curry

Pinch of smoked paprika

Pinch of kosher salt

Pinch of sugar

Pinch of tarragon 

1/2 t herb blend (parsley, thyme, oregano)


Mix well and roll into log.

Wrap in plastic, twist ends. 

Refrigerate 2-3 hours.

To serve, top a cooked Filet of beef.

2 t Honey

2 T Olive Garden Italian salad dressing

2 t spreadable Cream cheese

1 t diced Onion

1 t chopped Capers

1/2 t Black pepper

Roasted Jalapeño Pork Stew

An ej original recipe!



1 lb pork shoulder chunks(toss in Mardi Gras seasoning) *

1 medium Onion sliced

1 T roasted Garlic

1-2 roasted Jalapeño, diced, seeds and spines removed ( I roasted mine over an open flame on my stove)

1 t sage

1/2 t thyme

1/2 t rosemary 

1/2 t salt

1/2 t black pepper

Chicken stock to cover

2 large Carrots, chopped

4 medium Yukon Gold Potatoes, chopped 

1/4 c Cabernet Sauvignon for de glazing

Clarified butter for sautéing

Add clarified butter to pressure cooker and heat.

Sauté onions, jalapeño and garlic.

Add seasoned pork and slightly brown.

Add wine to de glaze.

Add veggies, stock and seasonings.

Cover and bring up pressure.

Cook 35 minutes.

Bring pressure down, at this point you can eat as is or make a cornstarch slurry and thicken.

Pimento Cheese Quesadillas

Pimento cheese *

Medium tortillas 

Spreadable cream cheese

Clarified butter


Heat clarified butter in large skillet.

Spread one side of each tortilla thinly with cream cheese.

Thinly spread one side with prepared pimento cheese.

Fry until light golden brown.

Cut with pizza wheel.

Taste like cheese pizza!

Inspired by Julia Child Beef Patties


































Psalm 119:25


Daleth


    [25] My soul clings to the dust;

        give me life according to your word!



Best patty I ever had.

Tasted just like steak!



Beef patties

3/4 c chopped onion or shallots

2 T butter

1 lb Wagyu beef (Costco)

1 t salt

1/8 t cracked black pepper

1/8 t thyme

1 egg


Dredging mix

1/2 c flour


Fry mix

1 T butter

1 T oil


Sauce

1/2 c Cabernet Sauvignon 

2 T butter


Cook onions, in butter, slowly until tender.

Add to a large bowl, add onions, all seasonings, egg and beef.

Gently work into beef.

Make into 5 Patties.

Cover with wax paper or parchment and put in freezer for 30 minutes.

Melt butter and oil together.

Gently flour Patties.

Sear Patties on medium high heat.

Lower to medium and cook until done.

Hold Patties on warm in oven.

Wipe out pan, but reserve fond.

Heat wine and reduce.

Remove from heat and add butter.

Sauce should be slightly thick.

Pour sauce over Patties.
