Pain au Chocolat Blueberry and Peach Bread Pudding






























 

 

Psalm 58:11


    [11] Mankind will say, “Surely there is a reward for the righteous;

        surely there is a God who judges on earth.”



1 pack Pain au Chocolat Croissant (Aldi)

1 jar of peaches, chopped (Aldi) reserve 1/4 c of syrup

1 small pack blueberries 


Custard

4 eggs beaten 

1 c sugar

1/2 c melted butter 

1 can evaporated milk

1 t vanilla extract


In a 13x9 pan, cover bottom of pan with bread squares.

Add blueberries and chopped peaches along with the 1/4 c Peach syrup.

Mix custard ingredients well with whisk.

Pour over bread fruit mixture.

Mash down so all the bread will be wet.

Cover with foil, bake 1 hour or until bread sets and is golden brown.

Serve with Whiskey Sauce!

Chicken Thighs Normandy































Psalm 53:1-3


There Is None Who Does Good

        on the children of man

8 chicken Boneless skinless thighs

Drizzle Olive oil

 

Seasoning for chicken 

1 t Garlic granules 

1/2 t thyme

1/2 t rosemary 

1/2 t salt

1/2 t pepper 

Mix and sprinkle over oiled chicken thighs 

Sear in hot Dutch oven, add fruit and onions, sear

Add liquids.


Liquids

1 c chicken stock

1/2 c Apple cider

1/4 c Apple Brandy 

1 T Dijon


2 Gala apples, cut into thick wedges

1 Onion, sliced thin  


Preheat oven to 375 degrees.

Bake, covered 35 minutes.

Check temp.

Should be 165 degrees!

Make a cornstarch slurry to thicken gravy.

On stove top thicken gravy.

Serve over rice or mashed potatoes.

1 c ham, process in food processor until fine

2 boiled eggs, grated 

1 Gala Apple, grated

1/4 c scallions or white onion

1/8 c Mayo

2 t Honey

1 t olive oil

Salt and pepper to taste

Mix well.

Serve on wheat crackers.

Pressure Canned Chicken Normandy

Create in Me a Clean Heart, O God

    according to your abundant mercy

        blot out my transgressions. 

    [2] Wash me thoroughly from my iniquity,

        and cleanse me from my sin!



This was delicious!

Apples and apple brandy really gave a rich depth of flavor!

You could use Boneless skinless thighs instead of breast.


8 large Boneless skinless chicken breast, cut into 2 inch chunks, season 


Season mix

1 t garlic granules 

1/2 t dried thyme

1/2 t dried rosemary 

Salt and pepper to taste


Season Chicken with season mix.

Olive oil lightly drizzled over chicken 

Bake preheated 400 degree oven 

3/4 way done on foiled lined sheet pan


3 large Gala apples cut into large wedges 

1 Onion sliced thin

1/2 c Apple cider

1/2 c chicken stock

1/8 c Apple Brandy or Bourbon 

1 T Dijon 

Heat this mixture.

All ingredients need to be warm.

Make enough heated chicken stock to cover Apple mixture and chicken in each jar.


9 Pint jars

Process 75 minutes at 10 lb pressure (or according to your altitude)


To serve after Canning, reheat liquid and add splash of cream. To thicken add cornstarch and water, add chicken and slightly shred.

Serve over rice or mashed potatoes.

Instant Pot Greek Pork Tenderloin

        and his righteousness to children’s children,

        and remember to do his commandments. 

    [19] The LORD has established his throne in the heavens,

        and his kingdom rules over all.



An ej original recipe!



2 pork tenderloins (comes 2 to a pack)


24 hour Marinade

1 small Shallot, diced

1 t dried Thyme

1 t dried Rosemary

1 T dried oregano 

1/2 of a lime zest

1/2 of a lime juice

1 t Red wine vinegar

2 t Greek Yogurt 

1/2 c Olive oil

1/4 water

1/8 c white wine 

1 t Dijon mustard

2 t roasted Garlic, mashed with fork

1/2 t Kosher salt

A few turns of Cracked black pepper 


Heat IP on sauté setting for 10 minutes.

Add 1 t olive oil.

Sear pork on 2 sides until lightly browned.

Drain Tenderloin on paper towels.

Change setting to meat, set cook time for  6 minutes under pressure.

Let IP come to no pressure on it's on, do not quick release.

Instant temp thermometer should read 150-155 degrees.

If temp has not been reached put lid back on, let sit another minute.

Remove to cutting board and tent with foil.


To make a light gravy, set to sauté, use drippings and whisk in:

1/4 c Sauvignon Blanc

1/4 c half and half

1/8 c stock

Cornstarch slurry for thickening

Serve with sticky rice!
