Chef's Loaded Meat and Two Cheese Grits



























 

 

 

Psalm 41:13


    [13] Blessed be the LORD, the God of Israel,

        from everlasting to everlasting!

An ej original recipe!



Meats

1 c Smoked Sausage

1 c Ham


Quick Grits, enough for 3 servings 

1 c Water 

1 c Milk

Salt

1/4 c Parmesan 

1/4 c Sharp Cheddar


Boiled egg, chopped


Pico

2 Tomatoes, diced 

1/2 of a seeded JalapeƱo, diced 

1 T Olive Garden dressing

1 t Apple cider vinegar 

1/2 t toasted cumin

1/2 t sugar

Salt and pepper to taste


To serve:

Place creamy grits in bowl.

Top with meats, sprinkle of cheese, cut up egg and Pico.

Air Fryer Seasoned Potato Wedges






























Psalm 41:1-4


O LORD, Be Gracious to Me


To the choirmaster. A Psalm of David.


    [1] Blessed is the one who considers the poor!

        In the day of trouble the LORD delivers him; 

    [2] the LORD protects him and keeps him alive;

        he is called blessed in the land;

        you do not give him up to the will of his enemies. 

    [3] The LORD sustains him on his sickbed;

        in his illness you restore him to full health.


    [4] As for me, I said, “O LORD, be gracious to me;

        heal me, for I have sinned against you!”




3 Yukon gold potatoes cut into even size wedges

Soak in hot water for 20 minutes.

Drain and wipe dry.

Season.


Seasoning

1 t olive oil

Toss potatoes in oil.


1 t paprika

1 t onion powder 

1 t garlic granules 

Salt and pepper to taste 

Mix seasoning and toss the oiled potatoes.


Preheat air fryer to 400 degrees.

Place wedges in a single layer.

Cook 8 minutes on one side, flip, cook another 8 minutes.

My air fryer is small so I did mine in 2 batches.

These were delicious!!

Crispy outside and soft inside.

Easy Whiskey Sauce



























 

 

 

Psalm 40:16-17


    [16] But may all who seek you

        rejoice and be glad in you;

    may those who love your salvation

        say continually, “Great is the LORD!” 

    [17] As for me, I am poor and needy,

        but the Lord takes thought for me.

    You are my help and my deliverer;

        do not delay, O my God!




1/2 c butter

1/4 c sugar

1/2 c whole milk

1 T AP flour

1 t vanilla 

1 T whiskey


Melt butter on medium heat, whisk in sugar, flour, milk, bring to boil, turn to low, whisk till thickened.

Remove from heat. 

Whisk in vanilla and whiskey.

Serve over bread pudding.

Psalm 40:5


    [5] You have multiplied, O LORD my God,

        your wondrous deeds and your thoughts toward us;

        none can compare with you!

    I will proclaim and tell of them,

        yet they are more than can be told.



Preheat 325 degree oven.


Package of Pain au Chocolat from Aldi, cut into squares 

1 20 oz can crushed Pineapple in juice, reserve 1/4 c juice


Custard

4 eggs beaten 

1 c sugar

1/2 c melted butter 

1 can evaporated milk

1 t vanilla extract


In a 13x9 pan, cover bottom of pan with bread squares.

Add drained Pineapple along with the 1/4 c juice.

Mix custard ingredients well with whisk.

Pour over bread pineapple mixture.

Mash down so all the bread will be wet.

Cover with foil, bake 1 hour or until bread sets and is golden brown.

Serve with Whiskey Sauce!

Pork Butt in Fennel Blanco Ragu

        for the LORD upholds his hand.



This is what I cooked my honey for Valentine's Lunch!!

He said he could eat the whole pot!!

 

 

Large egg noodles, cooked in salted water and set aside, reserve 1 c pasta water


 

2 oz pancetta, chopped ( buy in deli)

1 Onion, sliced 

1 Fennel bulb, sliced, cored, save 2 T of green wispy fronds, discard stalks

2 T roasted Garlic 

1 t dried Thyme

Salt and pepper to taste

1/4 c half and half

2 lb pork butt, trimmed and cut into 4 large chunks

2 c water



Add after pork is done

Juice of 1/2 small lemon

Zest of 1 small lemon

Fennel fronds

1 c grated Parmesan 


Preheat oven to 350 degrees.

Set rack to middle bottom position.

In a Dutch oven with 2/3 c water, render the fat from the pancetta.

This should take about 10 minutes, the water will mostly dissipate.

Scrape the pan sides and bottom to get all the fond.

Add Fennel and onion slices cook 7 minutes.

Add spices, cook until fragrant about a minute.

Stir in cream and water, bring to boil and add pork chunks.

Cover and transfer to oven, cook 1-1/2 hours, until pork is tender and can be shredded.

Remove pork to plate, shred. 

Scrape sides to get all the bits.

Add lemon juice, zest and most of the fennel fronds, reserving a few for garnish.

Cover and simmer.

Add shredded pork, 3/4 c pasta water and Parmesan.

Stir to incorporate.

Drain noodles with a wire spider and toss in sauce. 

If needed add pasta water in increments of 1/4 c until desired consistency. 

This was delicious!!

I served with boiled cabbage and fried squash.
