Butter Parmesan Zucchini Zoodles


































Ezekiel 21:31-32


[31] And I will pour out my indignation upon you; I will blow upon you with the fire of my wrath, and I will deliver you into the hands of brutish men, skillful to destroy. [32] You shall be fuel for the fire. Your blood shall be in the midst of the land. You shall be no more remembered, for I the LORD have spoken.”



2 large zucchini, shave into zoodles using a handheld julienne y peeler

2 T Butter

1/4 t Salt 

1/4 t Black Pepper

1 T roasted Garlic

4 T Parmesan 


Melt butter, add seasonings.

Add zoodles, cook 3 minutes.

Skillet Chicken and Beef Shawarma

OK, I've made this before using a spit made of chopsticks.

It was a total aggravation!! 

This is way better! 

So easy, so tasty!!



Naan bread, warmed


2 Boneless skinless chicken breast, sliced into strips

2 Filet steaks, cut into strips

After 24 hr marinate and seasoned.

Heat a greased large cast iron skillet to hot.

Add a single layer of meat and onions.

Sear and flip. 

Meat will have a grilled look.


24 hour Marinade

1 Onion, sliced thin

1/8 c Olive oil

1/8 c Balsamic vinegar 

1/2  Lime, juiced

2 T full fat Yogurt

1 T Roasted garlic

Salt and pepper

Toss meats and onions in marinade.

Add dried herb mixture.

Toss again.

Marinate


Dried herb mixture

1 t Toasted Cumin

1/2 t Cinnamon 

2 t Plain paprika 

Pinch Red pepper flakes

1 t Kariff 


Cucumber sauce(Shawarma sauce)

1/2 of a English cucumber, diced

1/4 c diced onion

Salt and pepper

1/2 lime, juiced

1 T Roasted garlic

1/4 c Mayo

1 c full fat Yogurt

Make at least 1 hr ahead to let flavors bloom!!


Toppings

Diced tomatoes 

Sliced lettuce strips

Sliced Spinach strips


To serve, warm Naan, put a layer of cucumber sauce, then both meats, then toppings, followed by more cucumber sauce.

Wrap bottom of Naan in foil sheet.

Enjoy!!

Full Fat Milk Yogurt Soft Bagels




































2 Peter 1:21


[21] For no prophecy was ever produced by the will of man, but men spoke from God as they were carried along by the Holy Spirit.



2 c AP flour

1/2 t salt

2 t fresh baking powder

Whisk together.

Add

1&1/2 c whole milk yogurt 


Mix until majority of flour clumps together.

Roll into ball and flatten.

Kneed 15 times.

Dough should not be sticky.

Flatten out ball to about 1/2 inch high.

Cut into 6 equal pieces.

Roll into ball, flatten.

Poke hole in middle of ball.

Using hands, work around hole to get it smooth and equal.

Brush with beaten egg white.

Bake in a preheated 375 degree for 25 minutes, middle rack.

Mississippi Beef Pasta Skillet

I canned Mississippi Pork and Beef.

 I am going to do some chicken too!

This is such a versatile dish!




1 pint jar of Mississippi Beef (Pressure Canned from your pantry)

Penne pasta cooked and set aside

Cornstarch slurry for thickening 

Garnish with fresh herbs

 

Place in skillet, heat for 15 minutes, add slurry then when thickened add pasta!

Moo Goo Fried Chicken and Veggie Stir Fry

An ej original recipe!!


10 Freezer Chicken strips or Fast Food Chicken Strips, cut into bite size pieces


Thin pasta or rice, I used left over angel hair 


Veggies

1/2 c Celery, sliced

1 Onion, sliced

1 Carrot, matchstick cut

1/2 c Mushrooms, sliced

1 c Broccoli florets

1 T roasted garlic

1 t olive oil


Stir fry 2 minutes, remove to plate.

Add 1 t olive oil and stir fry chicken strips.

Add veggies back, whisk in slurry to sauce, pour on chicken veggies mix. 

Cut off heat.

Add pasta and stir to incorporate.


Slurry for sauce

2 T cold water

2 t Cornstarch 

1/2 t Toasted sesame oil


Sauce

1 c Chicken stock

2 t Mirin

1 T Sugar

2 T Soy 

1/2 t White pepper

Whisk together, set aside.
