Greek Chicken Bowl

Greek rice*

Greek Chicken marinade 

3 chicken breast cut into strips


1/4 c plain Greek Yogurt 

or a good substitute 2 T sour cream and 

1 T ricotta mixed together 

2 T Greek seasoning 

A few drizzles of olive oil

1/2 of a lemon juiced

1 t roasted and mashed Garlic

1/2 t Dill 

A dash of Salt and pepper 

Marinate at least 2 hours!

Drain.

Then pan fry or grill under broiler.



Greek salad

Garbanzo beans, drained 

Chopped Cucumbers 

Thin sliced Onions

Black olives, drained

1 Carrot, shredded

Tomatoes, chopped

Feta cheese, crumbled

Prepare veggies and set aside.



Greek Dressing to finish Greek bowl

1/4 c Olive Garden Italian dressing

1 t white wine vinegar 

1/2 of a lemon juiced

1 T Greek seasoning 

1/2 t sugar

Salt and black pepper to taste

Whisk together and set aside.

Whiskey Mardi Gras Angus Beef Sliders

8 slider Angus patties, seasoned with Mardi Gras seasoning *, smoky sweet paprika and smoked salt

Whiskey

8 Brioche slider buns

Cheese, I used Havarti 

Lettuce

Tomatoes 

Lettuce 

Onion

Pickles 


Special sauce

Freddie's fry sauce 

Chick fil a sauce

Mix together and set aside.


Grease a skillet with 1/2 t olive oil greased pan.

Heat, place seasoned patties in pan and cook on medium.

Sear, loosely cover with foil.

They cook in about 6 minutes each side.

Cut heat off.

Lightly pour whiskey over to finish.

Place cheese on patty then bun,  cover with foil and let sit until bun is warm and cheese is melted.

Add toppings and sauce to serve.

Chicken and Black Bean Enchiladas with Pressure Canned Sauce

1/2 can black beans, rinse and drain 

2 c pulled Rotisserie chicken

1 onion, diced

1/2 t olive oil

Pint of Enchiladas sauce *

1/2 c Salsa Verde ( I use mild Herdez)

1/2 c Sour cream

3/4 c grated Mexican Cheese

1/4 c grated mozzarella 

6 Flour tortillas 


Sauté onion in oil, add chicken.

Season with 1/4 c enchiladas sauce.

Remove from heat, add to large bowl.

Stir sour cream and cheese into chicken.

Using a large 13x9 pan, spread enchiladas sauce in bottom.

Fill tortillas, roll, place seam side down.

Cover with both sauces.

Seal in foil and bake 45 minutes in preheated 400 degree oven.

Pressure Canned Enchilada Sauce



































Ecclesiastes 4:9-10


[9] Two are better than one, because they have a good reward for their toil. [10] For if they fall, one will lift up his fellow. But woe to him who is alone when he falls and has not another to lift him up!




Makes 9 pints and 1 half pint.


10 guajillo dried peppers, slightly toast

2 Ancho dried peppers, slightly toast

After toasting, remove stems and seeds.

Break into pieces and cover with 2 c boiling water and re-hydrate for 20 minutes. 

Reserve 1 c of braising liquid.

Put in blender, braising liquid to make a thick paste. 

Add to tomatoes in the stock pot.


3 (28 oz cans) of whole tomatoes (use a immersion blender to crush)

Place in stock pot and bring to simmer.


1/4 c roasted garlic

4 onions roasted and diced

1 c packed brown sugar

2 T chili powder 

3 t kosher salt

2 t toasted ground cumin

Add onions and seasonings to blender and purée.

Add to stock pot, simmer tomato mixture for 25 minutes, stirring every few minutes.


Fill jars, de-bubble, clean jar tops.

Process according to your canner instructions.

Mine was 10 lbs for 50 minutes.

Flat Bread Meat Lovers or Meat and Artichoke Pizzas






























1 Corinthians 1:31


[31] so that, as it is written, “Let the one who boasts, boast in the Lord.”



1 slice flat bread (Aldi has this and it's  delicious)

Thin sliced roasted smoked sausage

Shredded Ham ( I keep baked ham in the freezer)

Thin sliced onions

Thin sliced or chopped Bell peppers

Marinated Artichoke hearts, chopped

2 t spreadable Cream cheese

Thin sliced white American 

Parmesan

Olive oil


Cut flatbread in half.

Spread 1 t cream cheese on each half of flatbread.

Top!

Both meats(you could add more meats if you want)

Peppers

Some of all the different cheeses

Drizzle of olive oil

Chopped Artichoke hearts

Bake in preheated 425 degree oven for 12-15 minutes.
