Rich Chocolate Fudge Prune Brownies




























 

 

Revelation 5:9-10


[9] And they sang a new song, saying, 


    “Worthy are you to take the scroll

        and to open its seals,

    for you were slain, and by your blood you ransomed people for God

        from every tribe and language and people and nation, 

    [10] and you have made them a kingdom and priests to our God,

        and they shall reign on the earth.”



350 degree preheated oven for 25-30 minutes.

Line a 8x8 pan with foil, leave about a 2 inch foil overhang to easily remove brownies.


Brownies are done when toothpick comes out clean.


1/4 c chopped prunes

2 T water

Place in food processor to make a paste.

Set aside.


1/2 c milk chocolate chips

2 T butter, chopped 

Melt over boiling water.

Set aside.


1 c white sugar

1 large egg plus 1 egg white

1 t vanilla

Very quickly cream sugar, eggs, prune paste and vanilla into chocolate mixture.


1/2 c plus 1/4 c AP flour

1/3 c cocoa powder

Whisk together.

A little bit at a time, incorporate dry ingredients into wet ingredients just till combined.

Batter will be thick.

Evenly spread in pan.

Mardi Gras Boneless Breast Skillet Chicken

2 large boneless chicken breast, cut in half and brined in sugar salt water for 5 hrs


Mardi Gras seasoning *

2 T Butter


Heat skillet starting in a cold oven to 450 degrees. 

Dry off brined chicken.

Lightly sprinkle seasoning.

Set aside.

When skillet comes to temp, throw in butter and chicken.

Bake 10 minutes, flip and repeat.

Rest 10 minutes.

Sous Vide New York Strip Steak
































Romans 13:1-2


[1] Let every person be subject to the governing authorities. For there is no authority except from God, and those that exist have been instituted by God. [2] Therefore whoever resists the authorities resists what God has appointed, and those who resist will incur judgment.



 

Pretty good, not as good as a Filet.


 

Cook time 1-1/2 to 3 hrs (I cooked 2 hrs)

Cook temp 130 degrees


2 strip steaks 1-1/2 - 2 inches thick

Salt and pepper

1/4 c oil


Place in bag, single layer, add oil.

Remove air.

Sous Vide according to above directions.

Remove and pat dry.

Rest for 5 min.

Sear 1 min each side, in 3 T oil.


Finishing sauce

1 T reserved oil

1 Shallot, minced 

1/2 t Fennel seed

1/2 c chicken stock

1/4 c white wine

1 1/2 t Dijon 

Reduce for 6 minutes 


Add 1 T chilled butter.

1 t tarragon 

Salt and pepper



Piccalilli (Green Tomato Relish)

10 medium green tomatoes 

Core and chopped 

1 medium head of cabbage 

3/4 c red and yellow bell peppers

1 JalapeƱo 

1/2 c onion

1/2 c kosher salt 


I chopped all mine in food processor.

Salted it and let it sit in fridge for 4 hours.

Drain water off, then rinse and drain.

I used a wire mesh colander.

Prepare syrup.


Syrup

3/4 c brown sugar

1 t mustard seed

1/2 t celery seed

1/2 t prepared horseradish 

1/3 of a quart of water with 1/4 c plus 1/8 c white vinegar


Place ingredients in pot.

Cook at a rolling simmer for 15 minutes.

Add drained veggies.

Simmer at a rolling 10 minutes.

Fill hot jars. 

3 Pints with a 2 inch head space.


Process 10 lbs for 10 minutes.

Follow canner instructions.

I added a jar of water to insure safe amount of jars for canning.

Cool.

Spicy Cucumber Broccoli Chicken Stir Fry

        for the people of Israel who are near to him.

2  Rotisserie chicken breast, thinly pulled

1 T olive oil

2 c Broccoli florets

1 medium size cucumber 

1 Leek, sliced

2 T pickled Ginger, mashed

2 T mashed roasted garlic


Ramen noodles, no seasoning.

Prepare and set aside


1/2 c Crushed dry roasted peanuts

Prepare and set aside


Sauce

1-1/2 c chicken stock

1 t red pepper flakes

1 T mushroom Soy sauce

1/8 c Mirin 

1/2 t anchovy paste

1/2 t sesame oil

1/2 t honey

1-1/2 cornstarch 

Whisk and set aside.


Stir fry leeks, pepper flakes, cucumbers, broccoli, ginger and garlic in oil until tender. 

Add chicken, then sauce.

Cook until sauce thickens.

Stir in ramen noodle.

Add crushed peanuts.
