White Wine Canned Smoked Chicken and Rice







































1 Who has believed what he has heard from us? And to whom has the arm of the LORD been revealed? 

2 For he grew up before him like a young plant, and like a root out of dry ground; he had no form or majesty that we should look at him, and no beauty that we should desire him. 

3 He was despised and rejected by men, a man of sorrows and acquainted with grief; and as one from whom men hide their faces he was despised, and we esteemed him not. 

4 Surely he has borne our griefs and carried our sorrows; yet we esteemed him stricken, smitten by God, and afflicted. 

5 But he was pierced for our transgressions; he was crushed for our iniquities; upon him was the chastisement that brought us peace, and with his wounds we are healed.  - Isaiah 53:1-5



1 pint of canned smoked chicken, I smoked and then canned 

1/4 c Sovereign Blanc 

1/4 c evaporated milk

10 Green onions, chopped 

1 c Mushrooms, chopped 

1/2 t Thyme

1/2 t Rosemary 

1/2 t Sage

1/2 t black pepper


Drizzle of olive oil in skillet.

Throw in mushrooms and green onions.

Sauté until tender.

Add smoked chicken, wine, evaporated milk and the canning broth.

Reduce then add seasoning.

Serve over sticky rice!

Chipotle Beef in Adobo




































8 By oppression and judgment he was taken away; and as for his generation, who considered that he was cut off out of the land of the living, stricken for the transgression of my people? 

9 And they made his grave with the wicked and with a rich man in his death, although he had done no violence, and there was no deceit in his mouth. 

10 Yet it was the will of the LORD to crush him; he has put him to grief; when his soul makes an offering for guilt, he shall see his offspring; he shall prolong his days; the will of the LORD shall prosper in his hand. 

11 Out of the anguish of his soul he shall see and be satisfied; by his knowledge shall the righteous one, my servant, make many to be accounted righteous, and he shall bear their iniquities. 

12 Therefore I will divide him a portion with the many, and he shall divide the spoil with the strong, because he poured out his soul to death and was numbered with the transgressors; yet he bore the sin of many, and makes intercession for the transgressors.  - Isaiah 53:8-12




Each half pint jar

Yield 15 pints

1 inch headspace



Total amount of Chunks of chuck roast beef when trimmed, 7-1/2 lbs


1/2 lb Beef chunks per pint

1/2 c Sliced onions

1 t Garlic, chopped

1/2 t leaf Oregano

1/2 t kosher salr

2 T Fresh cilantro, chopped

1 t Chipotle in Adobo, chopped 

Beef broth made from beef base


Fill jar with the above ingredients, in the order listed.

Remove air.

Add beef base.

Clean glass tops with vinegar, add flat tops, secure with bands only finger tight.

Process for 75 minutes at 11 lb pressure.

Maple Bourbon Brown Sugar Ham































5 I am the LORD, and there is no other, besides me there is no God; I equip you, though you do not know me, 

6 that people may know, from the rising of the sun and from the west, that there is none besides me; I am the LORD, and there is no other. 

7 I form light and create darkness; I make well-being and create calamity; I am the LORD, who does all these things.  - Isaiah 45:5-7






Bone in fully cooked ham

1 c water in bottom of pan.


Sauce

1/3 c Yellow mustard

1 t Bourbon

1 1/2 c Brown sugar

1 t Maple flavoring 


Make sauce and set aside


Bake preheated 325 oven for a total of 3 hrs.

Use a roasting rack, place ham bottom up in a large heavy duty foil pan.

Score.

Dry roast, tightly covered with foil for 1 & 1/2 hrs. 

Roast should be 130 degrees, if nor recover and put back in 20 minutes 

When it's 130 degrees, spoon on sauce.

Can baste a few times with pan drippings if desired.

Recover tightly and finish cooking until internal temp reaches 150 degrees.

Rest 20 minutes before slicing!

Lemon Cream Cheese Pudding Blueberry Trifle

1 tube pan angel food cake, cubed
3 c blueberries 

Pudding
1 room temp block of cream cheese (needs to be really soft)
2 small boxes of instant lemon pudding ( use powdered pudding only)
3 c milk ( needs to be room temp)
8 oz non dairy whipped topping 

Using an electric beater, beat cream cheese and dry pudding mix.
After mixture is mixed, add milk a little at a time, beating with electric mixer.
Fold in 2/3 of the non dairy topping.
Reserve rest for top of trifle.

#2 Layer pudding
#3 Layer blueberries

Top
Non dairy topping
Lemon slices
Blueberries 

Jalapeño Red Pepper Jelly






































"O LORD of hosts, God of Israel, enthroned above the cherubim, you are the God, you alone, of all the kingdoms of the earth; you have made heaven and earth. - Isaiah 37:16





3 red bell peppers
1 yellow bell pepper
1 large green jalapeño pepper

De-seed and core peppers. 
Cut into chunks.
Pulse in food processor until chopped into bits.

Pinch of red pepper flakes
3 c sugar
1 c white wine vinegar
1 T butter
1/2 t kosher salt

To a heavy bottom pot add peppers and all ingredients.
On medium high heat, bring to a rolling boil, keep stirring for 20 minutes until desired thickness.
Do not over cook! 
Spoon into 1/4 size jelly jars.
Refrigerate for up to a month.
Serve on cream cheese with crackers!
