Oven Roasted Zucchini Squash and Onions

4 yellow Squash, chopped in1/2 in chunks
1 large Zucchini, chunked
1 large onion, chunked
Seasonings of your choice, I used 
Mrs Dash table
Granulated garlic
Seasoned salt 
Trader Joe's umami 
Toss in Olive Garden Italian Dressing

Place on a sheet pan covered with parchment.
After cooking in a 400 degree oven for 45 minutes, cool slightly and sprinkle with Parmesan cheese.

Honey Sake Chicken Stir Fry

An ej original recipe!


10 Frozen chicken bites
Drizzle Olive oil in large skillet.
Fry and cut into smaller pieces.
When thawed, remove from oil and set aside.

Stir Fry Sauce
1 t toasted sesame oil
1 t mushroom soy sauce
1 T honey
2 T Sake
Mix and set aside.

Prep veggies and set aside.
To stir fry, add 1 t oil to skillet.
Add garlic and ginger, quickly cook and remove.
2 t Roasted garlic
1 t diced Fresh ginger

To the same skillet add veggies and stir fry.
Add garlic and ginger back in and the chicken then sauce.
Serve over rice or noodles.

Veggies
1 c  frozen Skinny green beans
1 Carrots, matchstick cut
1 sliced Leeks
Small Cucumber, seeds removed and cut into matchsticks

Betty's Skillet Pineapple Upside Down Cake from Cake Mix

1 Duncan Hines Classic White Cake Mix


1 small can of pineapple rings
1 small can of crushed pineapple 
1 jar maraschino cherries
3 T melted butter
1/2 c brown sugar


Cake batter add ins
1 c pineapple juice
1/2 c olive oil
3 eggs



Place cake mix in a bowl.
Drain juice off both cans of pineapple and reserve for cake. If it's not 1 c add water. 
Add liquids and eggs to mix and beat with mixer for 3 minutes until well mixed.
Set aside.

To the 12 inch cast iron skillet add the butter, melt, then add brown sugar. 
Space the 4 pineapple rings equally spread out and spoon the crushed pineapple in the spaces in between.
There will be some crushed pineapple left, put it in the juice and add to cake.
Put cherries in the holes and on top of each pile of crushed pineapple.


Preheat oven to 350 degrees.
Bake 40-45 minutes until middle of cake springs back when slightly touched.
Take a butter knife and go around the rim of the cake. 
Cool 10 minutes and place large plate over cake and flip out.
Serve warm.

The Best Easy Egg Roll Ever










Ps.139:15-16
15 My frame was not hidden from you, when I was being made in secret, intricately woven in the depths of the earth.
16 Your eyes saw my unformed substance; in your book were written, every one of them, the days that were formed for me, when as yet there was none of them



1/2 lb. ground pork or ground turkey
1 lb. pre sliced cabbage-carrot pack(slaw) 

2 T soy sauce
1 t Sweet Chili Thai sauce
1 t sesame oil
1/2 t sugar
1 t garlic, roasted and mashed
3 Green onions, chopped
2 t fresh ginger root


Beaten egg to seal wrappers Egg roll wrappers.
Saute pork and all ingredients except cabbage mix until done. Cook cabbage carrot mixture in a large bowl in the microwave for 5 minutes, do not add water. Add cooked pork mixture to cabbage mix. Mix well. Cool in freezer. Place a large spoonful onto the wrapper and roll. Fry in oil until golden brown.

Mongolian Chicken and Shrimp with Onions Leeks and Fresh Shallot GreenTops

3 raw Chicken Tenders, slice thin on diagonal 
8 raw Shrimp, cleaned and deveined 
1 Egg white
1/4 t White pepper
1/4 t Salt
1 t Sesame oil
1-1/2 T Cornstarch 

Mix together Shrimp, chicken, salt, pepper, oil, egg white and cornstarch.
Set aside.

Add 3 T oil to large skillet or wok.
Heat on high to fry chicken, flip and add shrimp.
Cooks quickly.
Remove to plate. 
Take a paper towel and remove some of the oil.

Sauce
Prepare and set aside.

2 T Mirin
1 T Chinese Vinegar
1 t Hoisin
1/2 t Hot Chili sauce
1/2 t Sugar
1 t Soy


Prepare and set aside.
1/2 c Onions 
1/2 c Leeks
4 Shallot tops
1 t grated fresh Ginger
2 t roasted mashed Garlic


Add onions, leeks, garlic, fresh ginger to hot oil.
Stir fry quickly.
Add sauce, chicken and shrimp.
Stir fry until sauce thickens.
Serve over sticky rice.
