Burger Diane





































6 And he said to me, "It is done! I am the Alpha and the Omega, the beginning and the end. To the thirsty I will give from the spring of the water of life without payment.

4 Hamburger patties, season with meat tenderizer (use ground round)
2 pats butter

Sauce
3 T Cherry Brandy
2 t Worcestershire sauce
2 t Dijon 
1/4 c chicken sauce
Mix together and set aside.

Veggies
1/4 c Shallots
1/2 of a onion, sliced thin
1/4 c mushrooms 
2 pats Butter
Black pepper

Cook burgers in butter, 3 minutes each side.
Remove and set aside.

Add rest of butter and sauté veggies.
Add sauce and the burgers back in.
Reduce to a thick glaze.
Serve on a Kaiser roll with thin sliced cabbage and the cheese of your choice.

French Style Steak Diane




































A joyful heart is good medicine, but a crushed spirit dries up the bones.  - Proverbs 17:22




2 Fillets, flatten slightly, seasoned with seasoned tenderizer 
1/2 c sliced mushrooms 
1 diced Shallot 
4 pats of butter
Cracked black pepper
3 T sherry or cognac, I used Cherry Brandy cause that's what I had
1/2 c chicken stock
2 t Worcestershire sauce
2 t Dijon mustard
1/2 t chopped chives

Melt 2 pats of butter in a skillet on medium heat, add steak and sear 1 minute on each side.
Remove steak to a plate.
Add the rest of the butter.
Throw in the shallots and mushrooms, cook until slightly tender, about 1 minute.
Mix the wet ingredients, except chicken stock, together in a small bowl.
Add to veggies butter mixture in skillet, cook 1 minute.
Then add the stock, cook another minute on medium heat.
Add steaks back in.
Reduce heat and simmer down to a glaze.
You are in for a delicious treat.

Dang That's Good BBQ Brisket

1 flat cut prime or choice brisket with fat cap from Costco, I got the smallest prime one they had, it was $27

Rub of your choice, I make my own recipe under the rub tab this blog
Brown sugar
Smoked sat
Cracked black pepper

2 13x9 foil pans
1/4 c Jim Beam
1/4 c Water
A few shakes of Hickory flavor liquid smoke

1/4 c BBQ sauce

Cover both sides of brisket with rub, sprinkle a little brown sugar, salt and pepper over the rub. 
Seal the brisket in foil and refrigerate over night.
Preheat oven to 350 degrees.
Cut brisket in half against the grain.
Place brisket in the pans, add the liquid, seal tightly with foil and bake 3 hours.
Slice against the grain. 
Add BBQ sauce to pan drippings.
Add sliced meat to sauce.
Serving suggestion: Kaiser rolls with shredded cabbage and pickles.

Smoked Sausage and Chicken Stir Fry

3 Boneless chicken thighs, sliced 
Rub to season chicken 
1 c cooked Smoked sausage, chopped
Pasta, I used fresh spaghetti, reserve 1/2 c pasta water
1/4 c Leeks, chopped
1/8 c Celery, chopped
1 c Broccoli florets
1 t roasted Garlic
1/2 c Bell peppers, sliced
1/8 c limoncello
3 T honey
Pinch of pepper flakes or more if you like
Salt and pepper
Drizzle of olive oil


Season chicken with rub and marinate for 2 hours.
Prep veggies.
Cook pasta and set aside.
In the oil, stir fry the chicken for 4 minutes flipping to insure it's done.
Add veggies, pepper flakes, honey, limoncello, a little pasta water and sausage.
Cut off heat and toss in pasta.

Filet of Beef Hobo Foil Packs

Preheat oven to 450 degrees and bake on bottom rack for 45 minutes.

Per pack
1 Filet, seared in oil, seasoned with rub and sliced in 2 inch long strips 
1 Potato, quartered
1/2 Onion, quartered 
1/2 Bell pepper, halved
4 Broccoli florets
2 Mushrooms, chopped
Salt and black pepper, to taste
Lightly sprinkle Good Seasons Garlic and herb seasoning
Drizzle Olive oil

Using heavy duty foil, tear a piece large enough to accommodate the meat and veggies.
Bake, remove and enjoy!
Be careful of the steam!
