Limoncello Pork Belly and Cabbage Carbonara
































11 But as for you, O man of God, flee these things. Pursue righteousness, godliness, faith, love, steadfastness, gentleness.

Yummy!!

5 pieces sous vide pork belly (Costco) this is cooked already and seasoned
1 c coarse shredded cabbage
1 Shallot, diced
1/4 c Limoncello 
1/4 c Parmesan Reggiano 

2 eggs, beaten 
Fresh pasta cooked al dente, set aside reserve 1 c of the water after cooking, cool till just warm

Cracked Black Pepper
Sprinkled over top Fresh or dried parsley

Trim rind and some of fat.
Chop into bite size pieces.
Add a little oil to a skillet.
Pan fry until crispy.
Add cabbage, garlic and shallots about half way through.
After cooking add cheese then limoncello.
Reduce, takes just a minute.
Turn off heat.
Take the warm pasta water and whisk in  beaten eggs.
Pour into meat mixture and heat stirring until sauce develops.
Add pepper and parsley.

Chicken Hobo Foil Pack

These were delicious!!
Bake preheated 425 degree oven for 45 minutes.

For each pack:
Heavy duty foil sheet to accommodate ingredients 
2 thawed Chicken tenderloins
2 medium potatoes, quartered, microwave 3 minutes each side
4 Broccoli florets
3 T Leeks, sliced
3 T Yellow Bell pepper, sliced
Salt and pepper, to taste
1/4 t Onion powder
1/4 t Garlic granules 
1/4 t Dry Hidden Valley Garden Chive and Onion
Drizzle lightly Olive oil
Drizzle lightly Clarified butter

Assemble all ingredients centered on the foil.
Season, drizzle oil and butter, fold to make pack.
Cook on parchment lined pan according to directions.

Chicken Bacon Spinach Arugula Carbonara

6 slices of thick cut bacon, I used Kirkland from Costco
Splash of clarified butter
2 leeks, chopped 
1 T roasted garlic
Salt and pepper, to taste
1 c chopped rotisserie chicken
2 c torn Spinach Arugula mix
1/2 box of angel hair pasta cooked, set aside and reserve 1 c pasta water
2 eggs, beaten
1/4 c Parmesan Reggiano
1 T Limoncello  


Cook pasta al dente and set aside, reserve 1 c of the pasta water.
Drizzle clarified butter into big skillet, add chopped bacon.
Cook bacon until slightly crispy.
Add leeks, chicken, garlic, and green mixture.
Stir fry around until leeks are soft.
Beat eggs, microwave pasta water to just warm and whip water into beaten eggs.
Add pasta to bacon veggie mix, sprinkle cheese, add the egg mixture, then toss the mixture around to just combine.

Truly Delicious Fried Chicken

1 package Boneless chicken thighs, mine pack had 6
Rub ( recipe this blog under rub tab)
Cover both sides liberally with rub.
Place on paper plate in a ziplock, put in fridge for at least  2 hours, or overnight if you can.

2 beaten eggs
1/2 c buttermilk
Mix together.
Dip chicken, shake off excess.
Dredge chicken in flour.
Fry in hot peanut oil.
Salt and pepper and enjoy.

Citrus Mesquite Buttery Ribs

Rack of St. Louis ribs (I get mine from Target)
1/2 of a Lemon
1/8 c clarified butter
1 t mesquite flavor liquid smoke
Rub of your choice

Cut ribs into 1-2 rib dimensions.
Add parchment to a 13x9 foil pan.
Place ribs on parchment.
Squeeze lemon over them.
Mix liquid smoke into clarified butter and pour over ribs.
Cover ribs with foil.
Add rub to ribs and put into a preheated 350 degree oven for 2-1/2 hours.
Drain juice off, add BBQ sauce to ribs, return ribs, uncovered, to oven for 5 minutes.
