Cheesy Blend Baked Fresh Tomatoes




















O LORD my God, I cried to you for help, and you have healed me.  - Psalm 30:2






4 fresh tomatoes, sliced into thick slices
Olive oil to drizzle over slices
Cheese blend, I used Trader Joe's Shaved Blend, it has Unexpected Cheddar, Toscano and Parmesan
Mozzarella, shredded or fresh thin sliced
Seasoned salt
Black pepper
Tuscan Garlic seasoning
Fresh sweet basil, chopped


Place parchment on a large sheet pan. 
Oil and season slices, then add cheese blend first and end with mozzarella.
Toast under broiler until cheese is slightly brown around edges.
Add fresh basil before serving.
These make me think of pizza without a crust!!

Chicken Fried Chicken Thighs

1 pgk. Boneless chicken thighs


Chicken Soak

1 can Ginger Ale
1/8 c salt
1/8 c sugar
1/4 c water

Marinate thighs for at least 1 hour.
I used a ziplock bag.
Place thighs on plate and season with seasoning salt, pepper and Garlic 

Dredge

2 beaten eggs
2 c flour 

Dredge thighs in beaten eggs then flour and repeat.
Fry in hot oil until golden brown.

Amaretto Cream Sauce






















9 There shall be no strange god among you; you shall not bow down to a foreign god.

11 "But my people did not listen to my voice; Israel would not submit to me. 
12 So I gave them over to their stubborn hearts, to follow their own counsels.  - Psalm 81:9-12






2 c half and half
3 T sugar
1/4 c amaretto liqueur 
2 t cornstarch 

Put half and half and sugar in heavy pan.
Bring to boil, whisking constantly.
Whisk cornstarch into liqueur and whisk into cream.
Serve over warm bread pudding.

Hawaiian Roll Bread Pudding with Amaretto Cream



















"And now I am about to go the way of all the earth, and you know in your hearts and souls, all of you, that not one word has failed of all the good things that the LORD your God promised concerning you. All have come to pass for you; not one of them has failed. - Joshua 23:14





Bake preheated 350 degrees for 40 minutes. Cool 20 minutes before serving.

Hawaiian rolls, cut into cubes (I used 3/4 of the package)
6T butter, softened 
1/2 c sugar
5 eggs
2 c half and half
1 t Cinnamon
1 t vanilla 
Pinch of Nutmeg
1 c raisins (I soaked mine in 1/4 c of amaretto which I reserved for the sauce)

Using a 8 1/2 inch x 9 inch pan, spray with Pam. Press bread cubes in pan.
 In a bowl cream sugar in butter.
Add eggs one at a time. 
Then add seasonings and vanilla. 
Sprinkle raisins over bread.
Pour the custard over the cubes, mashing cubes down with a fork. 
Bake.
Cool.

Party Ham Sliders

Thick sliced Ham, I used Kirkland Master Carve
Smoked cheddar, cut into thin slices
Hawaiian rolls

Butter sauce:
2 T butter
2 T diced onions
1 t sugar
1 t dry mustard
1 t poppy seeds


Build sliders.
Brush with butter sauce.
Bake, covered preheated 350 degrees oven for 30 minutes.
