Toasted Muffaletta with Olive Tapenade

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

John 17:1-3


[1] When Jesus had spoken these words, he lifted up his eyes to heaven, and said, “Father, the hour has come; glorify your Son that the Son may glorify you, [2] since you have given him authority over all flesh, to give eternal life to all whom you have given him. [3] And this is eternal life, that they know you, the only true God, and Jesus Christ whom you have sent.



French loaf cut in half

Scoop out some of the bread


Pepperoni slices

Ham slices

Porchetta slices

Provolone slices 

Spinach leaves

Onions slices 

Tomatoes slices 

Olive tapenade 

Wrap in sprayed with non stick foil

Drizzle with olive oil

Lightly sprinkle with salt and pepper 

Air fry 425 degrees for 15 minutes 


Olive Tapenade 

1 c diced Castellano olives

1/2 c diced fire roasted red peppers 

1 small Shallot, diced

1 T hot Greek peppers, diced

2 T capers, diced

2 T roasted garlic

Put in a mini food processor and pulse to dice.

Remove to a bowl.

Add:

1/4 c olive oil

2 T red wine vinegar

1 t sugar

1/2 t each of dried oregano, cilantro and basil

Stir and let flavors meld for at least an hour.
