Wagyu Beef Rigatoni
































Exodus 34:6-7


[6] The LORD passed before him and proclaimed, “The LORD, the LORD, a God merciful and gracious, slow to anger, and abounding in steadfast love and faithfulness, [7] keeping steadfast love for thousands, forgiving iniquity and transgression and sin, but who will by no means clear the guilty, visiting the iniquity of the fathers on the children and the children’s children, to the third and the fourth generation.”



3/4 box of rigatoni cooked al dente, ( I used Aldi) drain, rinse in cold water and set aside.


Meat

1 pkg of Wagyu Beef from Costco 

1 Shallot, diced

2 T roasted garlic

2 t olive oil

Add seasonings listed below to skillet or braiser pan.

Stir fry shallots and garlic in oil, add beef and chopped into tiny bits.


1 t dried oregano 

1/2 t dried rosemary 

1/2 t dried thyme 

1/2 t dried sweet basil

1/2 t dried red pepper flakes 

1/2 t salt 

1/2 t pepper

1/2 t Fennel seed


Sauce

1 jar Marinara ( I used Aldi) 

1 can fire roasted diced tomatoes ( I used Aldi)

1/4 c Cabernet Sauvignon 

1/4 c full fat ricotta


To the meat, add wine, cook 3 minutes, add jar of marinara, tomatoes. Cook 2 minutes.

Add ricotta.

Let sauce simmer 15 minutes, stirring every few minutes.


Cheeses 

Ricotta (dot on each layer to cover layer)

Parmesan ( light sprinkle) 

Mozzarella ( light sprinkle)


To assemble, add 2 cups of sauce to rigatoni and stir.

Ladle a little meat sauce in bottom of 13x9 pan.

Add a layer of pasta, lightly with all the cheeses, repeat 3x.

Add rest of meat sauce to top.

Finish lightly with all the cheeses


Cook

Bake preheated 350 degree oven for 30 minutes until lightly browned.

Cool 10 minutes before serving.
