Corned Beef and Cabbage Shepherd's Pie
































Psalm 95:1-2


Let Us Sing Songs of Praise


    [1] Oh come, let us sing to the LORD;

        let us make a joyful noise to the rock of our salvation! 

    [2] Let us come into his presence with thanksgiving;

        let us make a joyful noise to him with songs of praise!



 

 

6 medium Yukon Gold potatoes cooked fork tender in chicken stock with 2 T roasted garlic, drained

Add 1/4 c Mayo, 1/4 c sour cream, 1/2 c Parmesan, 1/2 c sharp cheddar

Mash with potato masher, set aside



Gravy

2 c chopped corned beef or pastrami (we had smoked a pastrami so I used that)

1 can evaporated milk (love Kirkland's)

Cornstarch slurry

Set aside after it has thickened.


Veggie mix

Small Onion, sliced small 

Small head of Cabbage, chopped, sauté in 1 t bacon grease

1 t chicken base seasoning

1/2 t garlic granules 

Cracked Black pepper

Stir fry until tender.

Set aside.


2 medium carrots grated

Set aside.


13x9 pan

Bake preheated 375 degrees for 45 minutes.

Watch and when top is browned, lay foil on top and finish cooking.

I baked mine in the toaster oven.

Truly comfort food!! Oh my goodness!!

Gravy meat mixture on bottom 

Cabbage 

Carrots

Potatoes
