Sweet Baby Ray's Buffalo Thighs





































1 I love the LORD, because he has heard my voice and my pleas for mercy. 
2 Because he inclined his ear to me, therefore I will call on him as long as I live.  - Psalm 116:1-2



1 pack bone in skin on thighs, got mine at Aldi for less than 5 bucks

Marinade

1 bottle Sweet Baby Ray Buffalo sauce
1/2 c Water
1/4 c Sugar
1/8 c Salt

Marinate thighs in sauce overnight.
I let mine marinate 2 days. 

Place a rack over a foil pan, spray with non stick spray.
Preheat oven to 375 degrees, bake 20 minutes each side until 165 degrees.
Brown under broiler.

Mardi Gras Seasoned Pork and Gravy






































and the dust returns to the earth as it was, and the spirit returns to God who gave it. - Ecclesiastes 12:7




1 Pack of Boneless pork country Ribs, cut into chunks
2 t Mardi Gras seasoning
1 c sliced Leeks
1 c sliced Mushrooms 
Olive oil for browning
1/2 c water

In a Dutch oven, on stove top, sear pork and veggies in oil.
Add 1/2 c water.
Cover.
Bake in preheated oven set to 375 degrees for 1 1/2 hours.
Check after 1 hour, may have to add another 1/2 c water. 
Return to oven.
Remove meat to a plate.


Gravy 
1/4 c half and half
1 c beef stock
1 t Apple cider vinegar
1/2 t sugar
Pork drippings, scrape down bits
Salt and pepper
Cornstarch slurry for thickening 

Heat just to thicken, add pork back in.
Serve over rice or mashed potatoes.

Yummy Mardi Gras Salmon Patties for Two




































21 And he said, "Naked I came from my mother's womb, and naked shall I return. The LORD gave, and the LORD has taken away; blessed be the name of the LORD."

1 can pink salmon, drained
1/2 lemon juiced

Pour juice over salmon, set aside.

Mix all the ingredients below in a separate bowl, add Mayo, them add lemon juiced salmon.
Make into patties.
Roll in panko.
Put in freezer for 15 minutes.
Pan fry in 3 T olive oil.


1/2 of a Onion, diced 
1/2 c Celery, diced
1/2 t Mardi Gras seasoning
1/2 t Old Bay
1/4 t garlic granules 
1/4 c onion powder
Pinch pepper flakes
1/2 t dry mustard
1 t dried cilantro 
1/4 t kosher salt
1/2 c hand crushed cheese crackers
1/4 c Mayo

Ginger Rice with Cabbage, Carrots, Leeks and Peas


































3 I will give thanks to you, O LORD, among the peoples; I will sing praises to you among the nations. 
4 For your steadfast love is great above the heavens; your faithfulness reaches to the clouds.  - Psalm 108:3-4


1 T grated Ginger
1 c cooked Jasmine Rice
1 Leek, chopped 
1 T roasted mashed Garlic
1 Carrot, grated  
2 c Cabbage, thick shredded 
1 c frozen green Peas
2 T Bacon grease
Crisp crumbled Bacon, optional 
1 c chicken stock
Black pepper

In the bacon grease, stir fry the leeks, garlic and ginger.
Add the rest of the veggies.
Stir fry till cabbage wilts, add cooked rice and stir.
Lastly add the stock, stir fry until stock is absorbed by the rice and veggies.
Finish with pepper.


Lemon Pepper Cast Iron Skillet Chicken



































Be exalted, O God, above the heavens! Let your glory be over all the earth!  - Psalm 108:5




5 Chicken Thighs, bone in, skin on
Lemon pepper seasoning 
Salt

Marinate chicken in Apple cider, 1/8 c salt and 1/8 c sugar for a day or two.


Remove to plate, sprinkle lemon pepper seasoning liberally on the un-skinned side then flip and repeat.
Set aside.


Add 1 large cast iron skillet to a cold oven and bring heat up to 450 degrees.
Add 2 T of butter to hot skillet.
Add chicken skin side down, replace in oven for 15 minutes. 
Take our flip over and cook another 15 minutes. 
Chicken should be 165 degrees for serving!!

Mrs. Hill's Chocolate Cake



























The rich and the poor meet together; the LORD is the maker of them all.  Proverbs 22:2





In a large bowl mix
2 c flour 
2 c sugar, and whisk together.

In a saucepan, bring to a boil and boil 2 minutes.
1 c water 
1 stick of butter 
1 c Wesson oil 
4 T cocoa 
Cool and add to flour mixture.
Add in, 
2 eggs 
1/2 c buttermilk 
1 t vanilla 
1 t soda, 
dash of salt and beat. 

Pour into a greased 13x9 pan, bake at 325 degrees for 50 minutes.

Icing:
5 T whole milk
1 stick butter
4 T cocoa
Bring to boil and pour over box of confectioner sugar(3 3/4 c)
Add 1 t vanilla 
Spread over warm cake.
If necessary thin with milk.

Christy's Fresh Strawberry Pie




































This pie is so good!!
It's like the old Shoney's Big Boy pie!!


In him we have redemption through his blood, the forgiveness of our trespasses, according to the riches of his grace, - Ephesians 1:7


Makes 2 pies!


2 c water, use 1/2 c to dissolve cornstarch
2 c sugar
Pinch of salt
12 t cornstarch

Boil until clear, stirring constantly.
Add 1 box of small instant strawberry jello, cool and add berries.

Large plastic tub of Fresh Strawberries, washed and sliced, set aside, the ones from Costco or Sam's
2 Baked and cooled regular pie crust, set aside

Fill 2 crust with jello-strawberry mixture. 
Cool overnight in fridge.
To serve with spray whip topping!!

Fried Eggplant and Squash

































1 Praise the LORD! Oh give thanks to the LORD, for he is good, for his steadfast love endures forever! 
2 Who can utter the mighty deeds of the LORD, or declare all his praise? 
3 Blessed are they who observe justice, who do righteousness at all times!  - Psalm 106:1-3

Oil for sautéing 
4 medium Squash, chopped
1 small Eggplant, chop and salt, set aside
Onion, sliced
2 T Flour
1 Egg
1/4 c Cornmeal
1/2 t Seasoned salt
1/4 t Cajun seasoning
1/4 t Garlic granules 

Break egg into chopped veggies, season, toss in flour and cornmeal.
Heat oil in skillet, fry turning only after veggies are crispy.

Sweet Fire and Ice Pickles

































Yet he saved them for his name's sake, that he might make known his mighty power.  - Psalm 106:8



Claussen kosher pickles  spears (in the refrigerated section) slice thin, reserve juice

1/2 t or more Red pepper flakes
1 T Smoky chipotle Tabasco 
1/2 c sugar

Slice enough pickles to fit a pint jar.
Reserve enough juice to fill jar.
Add juice to fill up to the half mark.
Begin with the above amount of spices and sugar.
You can adjust these according to your taste. 
Shake vigorously to dissolve sugar. 
Add pickles. 
Refrigerate overnight, keeping in mind they will be hotter after sitting overnight.
These are delicious!!
Sweet, spicy and crunchy!!
Keep refrigerated.

Chicken Nugget Bok Choy and Onions

































29 I know that after my departure fierce wolves will come in among you, not sparing the flock;
30 and from among your own selves will arise men speaking twisted things, to draw away the disciples after them. - Acts 20:29-30



10 breaded chicken nuggets
1 t oil
1 bok choy, chopped
1 Onion, chopped
1/2 t Toasted sesame oil, just for flavor
1/2 t Mushroom soy sauce (really salty)
Pinch Red pepper flakes

Lightly fry nuggets in oil.
Chop.
Remove to plate. 
Add onions, bok choy, sesame oil, pepper flakes and soy sauce. 
When bok choy wilts add chicken back in. 
Serve over rice.
