Greek Yogurt Bagels





























13 But now in Christ Jesus you who once were far off have been brought near by the blood of Christ.
14 For he himself is our peace, who has made us both one and has broken down in his flesh the dividing wall of hostility

I saw the original recipe on https://www.skinnytaste.com/easy-bagel-recipe/.
I decided to play with the recipe and see what I could do.
The outcome, delicious!!!

2 c all purpose flour
1 t sugar
1/2 t table salt
1 T baking powder
Whisk these together.

2 c non fat Greek yogurt, I used plain Oikos

Add yogurt to flour mixture, stir in with a fork.
Sprinkle flour on parchment.
Knead for 15 turns.
Divide into 8 equal parts and roll into balls.
Flatten slightly and poke a hole in the middle.
With your floured fingers, walk around the hole and make it bigger.
Sprinkle with sesame seeds and poppy seeds.
Brush with beaten egg.

Bake in a preheated 350 degree oven on parchment sprayed with non stick spray.
Bake 25 minutes.
Let cool 10 minutes before slicing.






Cuban Chicken Burrito Bowl

Cuban Boneless chicken thighs, pulled, recipe this blog under Cuban tab
Cilantro lime rice, Trader Joe's frozen rice, add lime juice, butter and cilantro 
Black beans, drained and rinsed under hot water
Chopped Mango
Sliced Radishes
Chopped Tomatoes
Thin Sliced Sweet Onion 
Grated Cheese
Honey chipotle dressing, 1 chipotle in adobo mashed with fork , honey, salsa verde, salt and pepper

White Chocolate Drizzle and Fig Cheese Danish

Crust and top
1 can of crescent rolls

Take half of rolls and mash into a deep dish pie plate to form bottom crust.
Cut the other half into strips for lattice top.

Cream cheese filling layer
1/2 c sugar
1 egg
1 bar of softened cream cheese
1 t vanilla 
Beat until creamy.
Add to bottom crust.

1 c fig preserves 
Smear on top of cream cheese filling layer.

Add strips to top to form lattice.
Beat 1 egg white and brush crust.

Bake preheated 350 degrees oven for 30 minutes. 

Drizzle with white chocolate syrup.

Cuban Boneless Chicken Thighs





























This meat was delicious!! I made soft shell tacos but you could make pizza, nachos or hard shell tacos. I also think this would make a great burrito bowl with rice, beans and guacamole!!


6 It has been testified somewhere, "What is man, that you are mindful of him, or the son of man, that you care for him? 
7 You made him for a little while lower than the angels; you have crowned him with glory and honor,

1 pack Boneless chicken thighs, mine had 10 thighs

Marinade
1 mini can of pineapple juice
Juice of 1 lime
1 t apple cider vinegar
2 T Cuban rub, recipe this blog under rub tab

Marinate for several hours.
Reserve marinade.
Sauté thighs in Dutch oven and a little olive oil.
Add marinade to chicken. 
Bake in a Dutch Oven on 350 degrees preheated for 60 minutes.
Pull chicken with two forks and brown under broiler.
Serve on warm tortillas.

Toppings
Onions 
Radishes
Manchego/Cheddar Cheese combo
Sour cream 
Salsa

Spicy Honey Roasted Cashews





























16 For by him all things were created, in heaven and on earth, visible and invisible, whether thrones or dominions or rulers or authorities-all things were created through him and for him.

2 c raw cashews
3 T Honey
Pinch of sea salt
Pinch of Cayenne pepper
1/2 t olive oil 

Preheat oven to 250 degrees.
In a large bowl, add Honey, salt, pepper and oil.
Place parchment in a large jelly roll pan.
Bake nuts for 7 minutes, take out and place warm cashews in the bowl with the honey mixture.
Mix well and place on pan keeping nuts separate.
Bake 250 degrees for 1 1/2 hours.
Every 30 minutes, flip with spatula.
Cool until the nuts become crisp.
These are delicious!!

Shrimp And Cabbage Ramen Noodle Bowl

1 package chicken ramen noodle, toss season pack, broken up a little
1 c button mushroom, sliced
1 Leek, sliced
1 c shredded cabbage 
1 t chicken base seasoning
Pinch of red pepper flakes
1 c water
1/4 c Mirin
1/8 c soy sauce
2 t sesame oil
10-20 shrimp, cleaned 
Splash of oil/clarified butter

Sauté, in the oil/butter mix, until leeks, cabbage, mushrooms are slightly tender.
Add shrimp and cook until slightly pink.
Whisk together pepper flakes, water, Mirin, soy, chicken base and sesame oil.
Add liquid to shrimp mixture. 
Add noodles and stir 2-3 minutes.

White Texas Almond Sheet Cake

I found this recipe on the novice chef blog. 
A great cake in 30 minutes.
It is delicious!!!

1 cup (2 sticks) unsalted butter, melted
1 cup water
1/2 cup sour cream
2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, melted
1/3 cup milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
5 1/2 cups powdered sugar
sliced almonds, for topping

Preheat oven to 350°F. Grease a 13 x 18 jelly roll pan with butter or spray with Baker's Joy.
In a large bowl, whisk together melted butter, water, sour cream and sugar. Whisk in eggs, vanilla extract and almond extract. Then whisk in flour, baking soda and salt.
Pour batter into prepared jelly roll pan and bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
Once cake is baked, whisk together melted butter, milk, vanilla extract, almond extract and powered sugar - until smooth. Pour on top of hot cake and spread icing out to the edges. Sprinkle with sliced almonds.
If stored in an airtight container, this cake is good for up to one week...but I promise it won't last that long!

Pork Medallions In Sauvignon Blanc Sauce With Leeks And Mushrooms

Pork, cut out of a loin, pounded, seasoned with seasoned tenderizer and smoked paprika, lightly floured
Splash Olive oil to fry pork
1 Leeks
1 c sliced Mushroom 
1/4 c Italian cheese blend, Trader Joe's, Parmesan, Asiago, Romano 
1/4 c Sauvignon Blanc
1 t Cornstarch mix with 1/4 c water
1/2 c Water

Brown prepared pork in oil.
Remove and set aside.
Sauté leeks and mushrooms, when tender add wine, cornstarch slurry, water and cheese.
Reduce slightly, add pork back in.
Sauté till cheese melts.

Pork Tenderloin In Honey Sauvignon Blanc Balsamic Sauce





























4 Rejoice in the Lord always; again I will say, rejoice.

1 tenderloin, cut 5 slits in top
5 slivers of roasted garlic put in slits of the tenderloin
smoked salt, to taste
cracked black pepper, to taste

Sear in olive oil

Make sauce with the following ingredients.
1/8 c orange juice
1/4 c sauvignon blanc
2 T honey
2 T balsamic vinegar
1 t rosemary
1 t oregano
1 t MiMi's rub under rub tab this blog

Spoon sauce over seared loin.
Place a rack over a deep 13x9 foil pan.
Cover bottom of pan with wine and water equaling 1 c.
Add loin to rack. 
Bake preheated 350 degree oven for 45 minutes. 
Internal temp should be 155 degrees.

Cheesy Bacon Maple Honey Smoked Turkey Breast Patty Melt

6 oz. shaved Maple Honey Smoked Turkey breast, love Boars Head
1/4 c Havarti cheese 
1/4 c Manchego cheese
4 slices bacon, cooked crispy
Chipotle mayo, recipe this blog under dressing tab
Shredded cabbage, kale and Brussels sprouts, its a salad mix found at Costco 

Potato bread, toasted

Chop turkey.
Chop cheese. 
Add both to a skillet and heat until cheeses melt. 
Spread chipotle mayo on toasted bread and add salad mix, top with cheesy turkey and bacon.
Serve with bread and butter pickles.


Smoked Almond Crusted Salmon






























But I have trusted in your steadfast love; my heart shall rejoice in your salvation.  - Psalm 13:5


1 piece Atlantic Salmon, mine was 1 and 3/4 lb. skin off
1/4 c chopped Almonds
1/2 t Panko on each piece
1 T Cheese, I used Italian blend
Drizzle Olive oil 
1/2 t Clarified butter 
Lemon juice squeezed

Seasoning
Smoked paprika
Smoked salt 
Cracked black pepper
Garlic granules
A pinch of each one on each piece

Cut the fish into six equal pieces.
In this order, drizzle oil, lemon juice and seasonings.
Next in this order, sprinkle panko, chopped almonds, cheese and clarified butter.

Bake in a preheated 425 degree oven for 14 minutes.
