Scratch Quick Oats with Maple Pecan Brown Sugar

2 servings

1 3/4 c water

1 c quick oats

1/8 t salt

1 T maple syrup 

1 T brown sugar

1/4 t Cinnamon (optional)

Toasted pecans, chopped 

Pat of Butter


Put water and salt in small pan

Bring to boil

Add oats, cook 1 minute

Remove and place in bowl

Add toppings and stir

Enjoy

Psalm 18:46


    [46] The LORD lives, and blessed be my rock,

        and exalted be the God of my salvation—



3/4 c butter, room temp

3/4 c packed brown sugar 

1/4 c white sugar

1 whole egg plus 1 yolk

1/4 c sourdough discard

2 t vanilla extract 

2 c AP flour, aerated

1 T cornstarch 

1 t baking soda 

1/2 t salt

1 c chocolate chips, your choice 

1/4 c chocolate chips for decoration(optional)


350 degree preheated oven for 20-25 min

9 inch spring form pan, greased and lined with parchment 

Cream sugars and butter together in stand mixer 3-5 minutes until fluffy and pale in color 

Beat egg in

Beat yolk in

Add sourdough 

Add vanilla 

Mix dry ingredients in bowl then add to butter mixture a 1/4 at at time 

Hand stir in chocolate chips 

Bake until edges are golden and set

Middle will be slightly under cooked but will set as it cools

Cool and decorate

2 c AP flour, aerated 

2 t sugar

1 t salt

1 c cold butter, grated

1 c sourdough discard 


In large bowl, combine flour salt and sugar 

Work butter in using a light touch

Add discard and stir just till combined 

Divide dough in half

Press into disks

Chill 2 hours

Roll out to 12 inch size

Drape over 9 inch plate

Ready to use

1 peeled beef tenderloin (4-5 lbs)

Tie every 1 inch with all Cotton kitchen string

1 T kosher salt 

Wrap and refrigerate overnight


Harissa Rub 

2 T Paprika 

1 T Aleppo pepper

1 T ground coriander 

1 t ground cumin

1 t garlic granules 

3/4 t caraway seeds

Mix set aside


3 T Warmed Honey 

Brush top and sides of beef

Cover top and sides with rub

Ready to bake

Foiled Sheet pan with rack

Preheated 250 oven 1-1/2 - 2 hours

Cook to 115 degrees

Remove

Spray top with non stick spray

Put under broiler for 5-10 minutes to crisp up

Let rest


Julia's Secret sauce 

1 c fresh cilantro, chopped 

2 T dried mint or 1/4 c fresh mint

4 scallions, slit in half and chopped 

1/2 c Olive oil

2 T fresh lemon juice

1 T Garlic

1/4 t kosher salt

BBQ Rub Seasoned and Seared Shrimp Cocktail

 


 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Psalm 13:5

12 jumbo raw cleaned shrimp, thaw in cold water and remove tail, dry with paper towel 


BBQ seasoning rub (this will do shrimp and 3 salmon pieces)

2 T brown sugar 

2 t course black pepper 

1 t kosher coarse salt

1/2 t dried basil

1/2 t garlic granules 

1 t smoked paprika 

1-2 T lime zest

Toss shrimp in rub and set aside


Cocktail sauce

2 c chopped and seeded fresh ripe tomato 

1/4 c ketchup 

1 t Cholula 

2 T chopped fresh cilantro 

2 t sweet chili Thai sauce

3 diced green onions

1 T fresh lime juice

1 t kosher salt 

1/4 t horseradish 

1 t olive oil

1/2 t black pepper 

Mix and set aside to meld flavors 


Fry seasoned shrimp in clarified butter/olive oil 

Shrimp is done when it has a slight curl but not a tight curl 


To assemble 

Place cocktail sauce in a footed desert cup

Add your desired amount of shrimp to the rim

Serve with lime or lemon wedges


Serving suggestions 

BBQ salmon

Sticky rice

Steamed broccoli
