Air Fryer Turkey Breast for Sandwiches






























Isaiah 13:11


    [11] I will punish the world for its evil,

        and the wicked for their iniquity;

    I will put an end to the pomp of the arrogant,

        and lay low the pompous pride of the ruthless.




 

3 lb or so skin on Turkey breast, thawed


Marinade

1/4 t dry mustard 

1/4 t black pepper 

1/8 t lime juice

1/8 c peanut oil

1/8 c low sodium Soy sauce

1 t Honey

1 t tomato paste concentrate 

1/2 t hickory liquid smoke

Place in ziplock and marinate 24 hours

Remove to counter for 20 minute rest

Reserve marinade for basting

Add rub 


Dry Rub

1 t kosher Salt

1 t black Pepper

1/8 t White pepper

Pinch red pepper flakes 

1/2 t Onion powder 

1/2 t Garlic granules 

1/2 t dried Thyme

2 t Smoked paprika 

Add rub all around even under skin.


Directions

400 degrees for 10 minutes skin size down

Flip over, lower temp to 325 degrees, air fry 25 minutes, at 15 minutes mark moisten with 1 small ladle of reserved marinade 

Flip again after 15 minutes, moisten again

Cook another 15 minutes flip again and moisten, final cook until a temp of 165 degrees.

Remove, tent with foil making sure temp is 165 degrees, check after 10 minutes, slice a little to eat now.

Wrap and freeze rest of turkey breast for 2 hours so that you can slice thin for deli sandwiches.

Dried papaya, 3/4 lb. chopped $4.99 lb. 

Dried pineapple, chopped 5.70 oz $2.50 Publix

Dried plantains 9 oz. original $4.99 bogo Publix

Dried cranberries 1/2 lb. $2.50 Publix

Coconut, Aldi around $3

Pecans, Sam's club around $ 11 for 2 lb. going to freeze the rest

Walnuts Sam's club around $11 for 2 lb. going to freeze the rest



Mix according to your taste

I used all the dried fruit split equally between 3 qt size ziplock bags

I put 1/8 c of the coconut in each bag

1 put 1-1/2 c each of the nuts

Serving 1/4 c for snack

Andouille Velveeta Queso

Jeremiah’s Complaint

    Pull them out like sheep for the slaughter,

        and set them apart for the day of slaughter.

Small batch


1 andouille sausage, slightly spicy,  chopped (I love Kelley brand) made in Elba Alabama 

1/2 t olive oil

1/4 c chopped scallions

1 T roasted garlic

1/4 c chopped green bell pepper

 

1/4 c Velveeta, chopped

1 slice mild cheddar, mini

1 slice Gouda, mini

1 slice Fontina, mini 

1 T spread cream cheese

2 T mild salsa, drained

2 T half and half

1/2 t sugar

1/2 t toasted cumin

 

Saute veggies in oil.

Add andouille.

Saute.

Melt cheeses over medium heat, stirring constantly. 

Add half and half.

Add salsa and seasonings.

Serve with taco chips.

Asian Sauce Honey Walnut Chicken Nuggets

12 large Sam's club knock Off chicken nuggets

Air fry 10 minutes on 400 degrees

Slice and set aside


Sticky rice


1 c walnuts toast in microwave 1 minutes stir and do another 40 seconds, set aside


Veggies

1 small onion

1 c broccoli, frozen, microwave 45 seconds, sliced

1 T roasted garlic

1 t olive oil for stir frying


Sauce

1/4 Honey

3 T Soy sauce

3 T water

2 T Rice Wine Seasoned vinegar 

1 T Mayo

1 t toasted sesame oil

Salt and pepper to taste 

Pinch of red pepper flakes

Whisk and set aside


Cornstarch slurry for thickening


Garnish

Chopped scallions

Air Fryer Hot Honey Ham Cheese and Onion Breakfast Pastry

An ej original recipe!



1 tube of Pillsbury Crescent Roll Sheets or Rolls

If using sheets, cut in half to have a top and a bottom

If using Rolls press seams together

4 sheets for a top and 4 for the bottom

Gently stretch to same size 


1/4 c Chopped green onions

1/2 c Chopped ham

1/4 c Three cheese blend 

1/4 c Three cheese blend

Hot Honey 


Place bottom Pastry on foil sprayed with non stick

Add a layer thin layer of shredded cheese

Add a layer of chopped ham, green onions, another thin layer of cheese and lightly drizzle hot honey

Place top on 

Set air Fryer to 350 and cook 5 minutes 

Flip whole Pastry over and cook 3 minutes 

Cut into squares so flipping with a spatula will be easier

Keep cooking in increments of 3 minutes 

and flipping until top and bottom is crispy
