Easy Small Batch Red Pepper Jelly

































Jeremiah 15:21


    [21] I will deliver you out of the hand of the wicked,

        and redeem you from the grasp of the ruthless.”



5-6 red jalapeño, chopped

1 Gala Apple, peeled, grated

1/4 c sugar

1/8 c orange juice

Pinch of salt

1 jar apple jelly, 18 oz


At end of cooking, add

1/4 t Apple cider vinegar


Pulse jalapeño and Apple 20 times.

Add to heavy bottom pan along with the sugar, juice and salt.

Boil on a medium heat for 12-15 minutes, stirring often until juice is evaporated.

Turn heat to low, add jelly and simmer 12-15 minutes until reduced.

Add Apple cider vinegar, stir. Remove from heat. Add to 2 (8 oz jars). Place lids and rings and cool to room temp. Refrigerate.

Rotisserie Chicken Dip for 2

An ej original recipe!

 

 

1/2 c Rotisserie chicken breast, chopped

1 c onion bell pepper mix

2 T Olive Garden Italian dressing 

1/8 c Half and half 

1/4 c Mozzarella shreds 

Havarti 1 slice, torn in pieces 


Place dressing in a small cast iron skillet.

Heat and sauté veggies and chicken.

Add half and half and cheeses.

Once melted, put under broiler to lightly brown.

Serve with crispy bread.

Thus Bread pulls apart to heat in air Fryer and gets so crispy!!

Small Batch Pear Apple Butter
































James 3:6


[6] And the tongue is a fire, a world of unrighteousness. The tongue is set among our members, staining the whole body, setting on fire the entire course of life, and set on fire by hell.



5 large pears

1 Apple 

Peel, core and cut into chunks.

Add these spices, 1/4 t each

Nutmeg

Ginger 

Cinnamon 

Allspice 

Cloves


Next add these

1/4 c water

1/4 c brown sugar

1/8 c white sugar 

1/2 t Molasses 

1/2 of a lemon squeezed for the juice

Stir well to cover fruit.

Add to heavy bottom pan.

Heat on medium high to a gentle boil, cut heat to low and cook 50 minutes, stirring often.

Place in a mini food processor and pulse until all fruit is pulverized.

Place in jars and refrigerate.

Serve on biscuits, muffins or scones.


Sour Dough Crispy Cheesy Garlic Bread

An ej original recipe!



1 small round loaf of sour dough bread (boule size) sliced into 1 inch cuts, both directions and slightly pull apart but leave the bottom stuck together until ready to fill ( it resembles a scored Ham)


Butter Cream Cheese Garlic Spread

1/4 c spreadable butter

2 T spreadable cream cheese

1/8 c fresh cilantro 

2 green onions, snipped

2 T roasted mashed garlic

Few turns of smoked salt

Few turns of cracked black pepper 

Pinch red pepper flakes 

Mix and set aside.


Topping

1/4 c grated Parmesan cheese 


Heat oven to 375 degrees.

Place stuffing in between each slice.

Wrap stuffed bread bottom and all sides leaving top exposed.

Bake 20 minutes, cut oven off, then remove and sprinkle cheese on top and stick back in oven until until cheese melts.

4 Meat Chili for Two

[20] All go to one place. All are from the dust, and to dust all return.




Meat and Veggie

2 strips bacon, reserve 2 T grease drippings 

1 Filet Steak, chopped

1/2 lb Italian meat balls

1/2 lb ground Wagyu Beef

1 small roasted Jalapeño, seeded and spines removed, diced 

1 small Onion, roasted and diced

1 small Bell pepper, roasted and diced

2 T roasted Poblano 

1 T roasted garlic 

1/2 to 1 Chili in Adobo, mashed 

Brown, on medium heat in a Dutch oven, all the meat/veggie mixture in bacon grease drippings.

Add the seasoning mix.

Sauté until almost no pink color is left in meats.

Then add the liquid ingredients, stir to incorporate.

Last add beans, simmer for 45 minutes.

Taste and adjust seasoning.

Serve topped with cheese, onion, jalapeño, salsa and sour cream.

This is good with crunchy tostadas chips!!


Seasonings

1 T Chili powder

1 T Ancho and pasillia chili powder( I roast the chilis, cool then put in a coffee grinder)

1 t toasted Cumin 

1 t Hungarian Paprika

1 t Sugar

1 t Coriander

1 t coarse Kosher Salt 

1/2 t triple berry cracked Pepper


Liquids

1 c chicken stock 

1/2 bottle of a pale ale (I used Aldi Belgium White)

1/2 small can of tomato paste

1/2 can of tomato sauce

You can add water and cook down if you want thick gravy like chili.


1 -2 can of beans, your choice of bean ( I used Great Northern) 


If you want this chili spicy, you can add 1-2 t cayenne pepper.
