4 Meat Chili for Two

































Ecclesiastes 3:20


[20] All go to one place. All are from the dust, and to dust all return.




Meat and Veggie

2 strips bacon, reserve 2 T grease drippings 

1 Filet Steak, chopped

1/2 lb Italian meat balls

1/2 lb ground Wagyu Beef

1 small roasted Jalapeño, seeded and spines removed, diced 

1 small Onion, roasted and diced

1 small Bell pepper, roasted and diced

2 T roasted Poblano 

1 T roasted garlic 

1/2 to 1 Chili in Adobo, mashed 

Brown, on medium heat in a Dutch oven, all the meat/veggie mixture in bacon grease drippings.

Add the seasoning mix.

Sauté until almost no pink color is left in meats.

Then add the liquid ingredients, stir to incorporate.

Last add beans, simmer for 45 minutes.

Taste and adjust seasoning.

Serve topped with cheese, onion, jalapeño, salsa and sour cream.

This is good with crunchy tostadas chips!!


Seasonings

1 T Chili powder

1 T Ancho and pasillia chili powder( I roast the chilis, cool then put in a coffee grinder)

1 t toasted Cumin 

1 t Hungarian Paprika

1 t Sugar

1 t Coriander

1 t coarse Kosher Salt 

1/2 t triple berry cracked Pepper


Liquids

1 c chicken stock 

1/2 bottle of a pale ale (I used Aldi Belgium White)

1/2 small can of tomato paste

1/2 can of tomato sauce

You can add water and cook down if you want thick gravy like chili.


1 -2 can of beans, your choice of bean ( I used Great Northern) 


If you want this chili spicy, you can add 1-2 t cayenne pepper.

Veggie and Bacon Breakfast Pie





























Jeremiah 6:27


    [27] “I have made you a tester of metals among my people,

        that you may know and test their ways.



An ej original recipe!!


Set aside

1 large tomato, diced

1/4 c hoop cheese

1/4 c Unexpected Cheddar 


1 regular pie shell, poke holes with fork, bake 20 min in preheated 400 degree oven

Cool 5 minutes, Cover with:

1/2 c hoop cheese or Cheddar 

1/2 c Unexpected Cheddar 

Set aside


Filling 

2 c chopped crisp fried bacon, reserve 1 T bacon drippings 

Set aside to drain on paper towels


1/4 c egg whites

1/8 half and half

Whisk till fluffy 

Set aside


1 c Fresh Spinach 

1/2 c leeks

1/2 c mushrooms 

1 small diced jalapeño 

Sauté in 1 T bacon drippings.

Set aside.


Build pie, starting with cheese crust,

diced tomatoes, bacon, veggies and fluffy seasoned egg whites


Top with remaining cheese.

Bake 30 minutes on preheated 350 degree oven or until egg whites are done.

Cool 10 minutes before serving.

Fall Harvest Cobbler
































Jeremiah 4:27-28

        and the heavens above be dark;

    for I have spoken; I have purposed;

        I have not relented, nor will I turn back.”


 

An ej original recipe!!



Baking mix wet crust 

1-1/2 c Pioneer buttermilk biscuit mix

1/4 c sugar

4 T butter, softened

1/2 c whole milk

Pinch of nutmeg 

Mix and set aside.

Spoon on top of Cobbler.

It will be thick, carefully spread being sure to keep just sitting on top.


5 large sweet pears( extended Family 

shared) 

4 Gala apples

1/2 c sugar

1 cutie squeezed

1/2 of a lemon squeezed

1/2 t each of cloves, pumpkin pie, nutmeg, allspice

1 t cinnamon 

1 t Molasses 

1 t vanilla 

Water not quite covering fruit

1/4 c half and half 

1/2 stick of butter

Thickener

1 t cornstarch 

1/8 c water

Stir


Boil lightly for 15 minutes.

Transfer to 13x9 foil pan.

Bake, after topping with crust, preheated 350 degree oven for 45 minutes until top is lightly browned.

Instant Pot Soffritto Wagyu Steak in Cabernet Sauvignon Gravy
































Hebrews 13:5


[5] Keep your life free from love of money, and be content with what you have, for he has said, “I will never leave you nor forsake you.”



Beef and pork steak

1/2 lb Wagyu Beef

1/2 lb ground pork

1 T Soffritto seasoning Trader Joe's 

1/2 c chopped Onion (reserve rest for gravy)

2 T Double concentrate tomato paste

1/2 c of 3 cheese Italian blend

1/4c Seasoned bread crumbs

Salt and pepper

1/8 c to 1/4 c buttermilk 

Mix to incorporate.

Don't over mix. 

Make 5-6 Patties.

Set aside.


Heat to hot on sauté.

Sear in oil on Sauté setting, remove.

Add onions and sear.

Add gravy ingredients 

Scrape bits off bottom.


Gravy

2 c beef stock

Sautéed onions

1/4 c Cabernet Sauvignon 

Place rack in and place Patties on top.

Set to Meat with pressure on, cook 10 minutes. 

Do a 15 minute natural release.

Remove top and Patties.

To finish

Whisk in 2 t flour for thickening.

Gravy will thicken fast.

Serve over Patties with sticky rice or mashed potatoes.

Broiled Seasoned Chops with a Drizzle of Honey Dijon Pan Sauce




































Isaiah 46:8-10

        recall it to mind, you transgressors,

        I am God, and there is none like me, 

    [10] declaring the end from the beginning

        and from ancient times things not yet done,

    saying, ‘My counsel shall stand,

        and I will accomplish all my purpose,’




4 bone in 1 inch thick center cut pork Chops 


Chop seasoning

Seasoned meat tenderizer 

Smoked paprika 

Mardi Gras seasoning*

Fresh lime juice


Season chops.

Let come to room temp.

Sear in oil.

Turn oven to broil, cook chops 8 minutes each side till a temp of 155 degrees.


Pan sauce

Drippings

1 c Low sodium chicken stock

1 T Honey

1 t Worcestershire sauce

1 t Dijon mustard

1 t Apple cider vinegar

Squeeze of Lime juice

Thicken and drizzle over chops.
