Onion and Cheese Casserole




























 

 

 

 

Isaiah 61:1-2


The Year of the LORD’s Favor


    [1] The Spirit of the Lord GOD is upon me,

        because the LORD has anointed me

    to bring good news to the poor;

        he has sent me to bind up the brokenhearted,

    to proclaim liberty to the captives,

        and the opening of the prison to those who are bound; 

    [2] to proclaim the year of the LORD’s favor,

        and the day of vengeance of our God;

        to comfort all who mourn;



4-5 large sweet onions, slice into 1/4 inch slices

1/4 butter

1/4 c sour cream

3/4 c Italian Three Cheese 

1/2 pkg of butter crackers, crushed 

Salt and pepper 

1/2 t sugar 


Preheat oven to 350 degrees.

Melt butter in large skillet.

Add onions, salt, pepper and sugar.

Sauté over medium heat until tender. 

Remove from heat and cool 5 minutes.

Stir in sour cream.

Spray a Casserole pan or a deep dish pie plate.

Place half of the onion mixture in plate, sprinkle half of the cheese.

Add the rest of the onion mixture, sprinkle rest of cheese and add crushed crackers.

Add to preheated oven and cook 20-25 minutes.

So simple, so delicious!!

2 Hour Cast Iron Italian Pork Roast




































Isaiah 59:1-2


Evil and Oppression


    [1] Behold, the LORD’s hand is not shortened, that it cannot save,

        or his ear dull, that it cannot hear; 

    [2] but your iniquities have made a separation

        between you and your God,

    and your sins have hidden his face from you

        so that he does not hear.



3 lb Boneless pork butt roast

cut 2 inch slices all the across wise but not through ( this is where the herb paste will be spread)

Set aside


Herb paste 

1 T coarse kosher Salt 

1 T grated lemon zest

2 T fresh Rosemary 

2 T fresh Thyme

2 T fresh Sage

Pinch Red Pepper flakes

3 T Roasted garlic

1 T Olive oil

Mix together to make paste.


Toast the following ingredients dry in cast iron skillet and grind in mortar and pestle  

2 T Fennel seeds 

2 T black peppercorns 

Set aside


Take prepared Roast, in between each cut, add herb paste, tie up with 4 lengths of kitchen string. 

Sprinkle all over outside with salt and with the toasted cracked pepper and fennel seed.

Wrap in plastic and refrigerate overnight.


Preheated oven 350 degrees


Heat cast iron skillet with 1 T of grape seed oil.

Place roast in oil to sear, then straight into hot oven.

Roast 1 hour, flip and roast another hour.

Roast should be crispy on outside and tender juicy on inside.

Check temp.

Internal temp should be 155 or 160.

You can make pan gravy out of drippings.

Serve gravy over sticky rice or mashed potatoes. 

You can also make delicious sandwiches out of this versatile roast.


Pan gravy

3 T drippings 

2 t flour 

1 c beef stock 

1/4 t dried thyme, rosemary, oregano, onion powder, garlic granules 

Get drippings hot, whisk in flour cook 1 minute, add stick, cook until thickened.

Sausage Cheese and Prune Breakfast Balls
































Isaiah 55:6-9


    [6] “Seek the LORD while he may be found;

        call upon him while he is near; 

    [7] let the wicked forsake his way,

        and the unrighteous man his thoughts;

    let him return to the LORD, that he may have compassion on him,

        and to our God, for he will abundantly pardon. 

    [8] For my thoughts are not your thoughts,

        neither are your ways my ways, declares the LORD. 

    [9] For as the heavens are higher than the earth,

        so are my ways higher than your ways

        and my thoughts than your thoughts.



1 lb of mild sausage 

1/2 c prunes plus 1 t water ( dice in mini food processor )

1/2 c diced sweet onion

1/2 c hoop cheese or Cheddar 

1/2 t thyme

1/2 c panko 

1 t maple syrup 

Make meatballs.

Set aside. 


Preheat oven to 400 degrees.

Make into 1 inch ball.

Line pan with parchment.

Add breakfast balls.

Bake 20 minutes.

Serve with scrambled cheesy egg whites and a muffin.

Castelvetrano Olive and Unexpected Cheddar Pasta Salad

































Isaiah 53:3-7


    [3] 

    He was despised and rejected by men,

        a man of sorrows and acquainted with grief;

    and as one from whom men hide their faces

        he was despised, and we esteemed him not.


    [4] 

    Surely he has borne our griefs

        and carried our sorrows;

    yet we esteemed him stricken,

        smitten by God, and afflicted. 

    [5] 

    But he was pierced for our transgressions;

        he was crushed for our iniquities;

    upon him was the chastisement that brought us peace,

        and with his wounds we are healed. 

    [6] 

    All we like sheep have gone astray;

    and the LORD has laid on him

        the iniquity of us all.


    [7] 

    He was oppressed, and he was afflicted,

        yet he opened not his mouth;

    like a lamb that is led to the slaughter,

        and like a sheep that before its shearers is silent,

        so he opened not his mouth.



An ej original recipe!




1 lb Spaghetti pasta cooked al dente, reserve pasta water

Set aside


2 T Olive oil

1 Small Onion, diced

3 T Roasted Garlic, mashed

1/4 c diced Roasted Red Peppers

1 c sliced Castelvetrano olives ( Costco) 

1/2 c Unexpected Cheddar, crumbled ( Trader Joe's) 

1/4 c 4 % milk fat Cottage cheese 

Pinch or more Red Pepper flakes 

Salt and pepper to taste 


Sauté onions, pepper flakes and garlic in oil for 1 minute.

Add peppers, cottage cheese, pasta, Unexpected Cheddar and 1-1/2 c pasta water.

Sauté until thickened, stirring constantly, add sliced olives.

Season and top with Bagel bits.

Bits of everything bagel chips

Left Over Rotel Cheese Dip Egg Whites


































Isaiah 45:18

    he did not create it empty,

        he formed it to be inhabited!):

An ej original recipe!



Desired amount of egg whites, seasoned with Trader Joe's umami, seasoned salt and Mrs. Dash table blend

Stir in the amount of Rotel dip you would like


Scramble seasoned egg whites, stir in Rotel, enjoy!!


1/2 half of a small sausage roll browned and chopped in small pieces, set aside


E J's Rotel Dip recipe (for 2)

1/4 of the smallest Velveeta bar, cut into small chunks, set aside


1/2 t oil

1/8 c diced onion

1/2 t smoked paprika 

1/2 t toasted cumin

1/2 t chili powder

Sauté onions and seasonings in pot.


Add

1/8 c half and half

1/4 of the can of mild Rotel tomatoes, drained

1/2 c Quesadilla shredded cheese

Velveeta and cooked sausage

Melt cheese stirring constantly.

Serve with tortilla thins!!
