BBQ Dust Chicken Fajitas































Hebrews 3:15

An ej original recipe!


 

10 chicken tenders


BBQ Dust

1/2 c Brown sugar

2 t Garlic granules 

2 t Onion powder

1 t salt

1/2 t pepper

2 t smoked paprika 

1 t dried mustard

1 t umami (optional)

Pinch red pepper flakes


Using hands, toss tenders in dust.

Marinate 1 hour in fridge.

Add 1 t oil to skillet, sauté tenders on medium until 165 temp is reached.

These make great Fajitas or just eat with sides. 

If making fajitas, sauté onions and peppers in same skillet tenders were cooked in. 

Add a little oil and scrape bits then add veggies and sauté in oil and bits.

Add a splash of Bourbon for an extra yummy taste!

Fried Chicken Poutine

An ej original recipe!


15 Air Fryer chicken nuggets ( I used Sam's club chick fil a knock off) cooked in 2 batches 400 degrees, spray with non stick for 8 minutes flip then 6 minutes

Set aside.


4 medium Yukon Gold potatoes ( microwave covered 2 minutes each side)

Cool

Slice into fries 

Set aside

Fry in oil to crisp!


Gravy

1/2 t Beef base seasoning 

1-1/2 c Water

1/8 c Half and half

1 t Sour cream

1/2 t Black 

Heat, stirring constantly.

Whisk in 1 T Flour to thicken.

Set aside.


Layer

Fried Potatoes 

Sliced Chicken pieces

Gravy

Green onions 

Cheese

Sour cream


Grated cheese or cheese curds

Chopped green onions

Dollop of sour cream

Breakfast Muffins

Bake preheated 375 for 20 minutes and cool 5 minutes.


Dry ingredients 

1 c each white wheat and AP flour

1 t each baking powder and baking soda

1/2 t each cinnamon, pumpkin pie spice, cloves, nutmeg, allspice

1/4 t salt

Whisk to incorporate!


Wet ingredients 

1/2 c oil plus 3 T( I used olive)

3 room temp eggs

1/2 c brown sugar

1/4 c maple syrup 

1/4 c Pineapple juice

1/4 c Greek yogurt

1/4 t molasses 

1 t vanilla 

Whisk well. 

Fold into dry ingredients a little at a time.


Fruit and nut ingredients

1 Honey Crisp Apple, grated (do not peel)

1/2 c Raisins 

1/4 c flax seed

1 c chopped Pineapple 

2 c grated Carrots

4 diced prunes

1 c Toasted pecans

Using a spatula fold into wet/dry ingredients, just to incorporate.


Grease muffin tin.

Fill 3/4 way full.

Bake, directions above.

Potato Leek Mushroom Casserole

13x9 pan

400 degree preheated oven for 35-40 minutes.


5 medium Yukon Gold, microwave 2 minutes each side, cool and slice thin

Set aside.


2 Leeks, cleaned and sliced

1 T Roasted Garlic 

1-1/2 c chopped button mushrooms 

1 t Clarified butter

Cook mushrooms in dry skillet just a couple of minutes.

Add rest of ingredients.

Cook 2 minutes.

Start sauce by adding wine, cook 2-3 minutes, add stock, cook 3 minutes.

Add half and half, cook 2 minutes.

Add seasonings and cheese.

Add slurry.

Set aside when thickened.

Ladle a little sauce in bottom of pan.

Add some potato slices and 1/3 of the mozzarella. Repeat for 3 layers, top with remaining mozzarella.

Bake uncovered.


Cream Sauce

1/4 c Sauvignon Blanc

1 c half and half

1-1/2 c chicken stock

1/2 c Havarti cheese chunks

1 t thyme

1/2 t black pepper 


Slurry of water and cornstarch to thicken


2 c Mozzarella ( to go between each layer and on top

Dried Cherry Rotisserie Chicken Salad

    for he cannot deny himself. 



Lettuce leaves


Dressing 

1 c mayonnaise 

4 t apple cider vinegar 

5 t clover honey 

1 t poppy seeds 

Salt and freshly ground pepper to taste 


Salad 

2 chicken rotisserie breast, chopped

3/4 cup pecan pieces, toasted 

1 c dried cherries, cut in half (I used the ones from Aldi)

3 stalks celery, thinly sliced


In a bowl, combine mayonnaise, vinegar, honey, poppy seeds, salt and pepper. Refrigerate until ready to dress the salad. This can be prepared up to 2 days ahead. 


Dice chicken breast into bite-size chunks and transfer to a large bowl. Stir in pecans, dried cherries , celery and dressing.

Set air Fryer to 170 degrees, spray pan.

Lay a piece of lettuce on the bottom half of croissant, add to air Fryer.

Mound chicken salad on top of lettuce.

Add croissant top.

Lightly spray top with non stick spray.

Cook 3 minutes, check to see if it's toasted. 

I did 2 at a time!

Delicious!!
