Marinated Filet of Beef


































1 Thessalonians 5:16-22


[16] Rejoice always, [17] pray without ceasing, [18] give thanks in all circumstances; for this is the will of God in Christ Jesus for you. [19] Do not quench the Spirit. [20] Do not despise prophecies, [21] but test everything; hold fast what is good. [22] Abstain from every form of evil.



4 Filet of Beef


Marinade

1/4 c light Soy 

1/4 c Olive oil

1/4 c Worcestershire sauce

1/4 c Vidalia Onion 

2 T Honey 

1/4 c Green onion tops

1 t roasted Garlic

1 t dried Thyme 

1 t dried Rosemary 

1/2 t Salt 

1/2 t Aleppo pepper

Mix

Reserve 1 c of marinade for serving


Pour over Filet and marinate 30 minutes, flip and repeat.


Pat steaks dry.

Fry steaks in lightly oiled skillet until cooked to medium.


Add 1 t red wine vinegar to the reserved cup of marinade for serving over cooked steaks.

Marinated Tuna with Warm Peach Jalapeño Salsa

































Psalm 140:12-13


    [12] I know that the LORD will maintain the cause of the afflicted,

        and will execute justice for the needy. 

    [13] Surely the righteous shall give thanks to your name;

        the upright shall dwell in your presence.



Marinade

1/4 c light Soy

1/4 c Peach juice (out of jarred peaches)

2 T Honey

1/2 of a Lime juiced

2 t Olive oil

1 T Roasted garlic

2 T Fresh parsley 

1 /2 t Dried oregano

1/2 t Black pepper

1/4 t salt 


Marinate Tuna steaks for at least 1 hour.

Oil skillet, heat 2 minutes and fry patted dry Tuna steaks.

Fry to medium 3-4 minutes each side, rest.


Warm Jalapeño Peach Salsa

1 c peaches, chopped

1 seeded Jalapeño, sliced

1 t roasted Garlic

1 T Honey

Bourbon Steak and Gravy Poutine

Left over Filet steak, cut into bite size pieces

Fried potatoes 

1 sliced thin Vidalia Onion

Gravy


Fried potatoes

4 microwaved Yukon Gold medium potatoes 

Peanut oil

2 minutes each side


Green onions for topping


Poutine Gravy 

1/2 t Beef stock

1 c Beef

1 t Olive oil

1 t roasted garlic 

1 t Flour

1 Onion

1 T Bourbon 



Fry potatoes.

Season with seasoned salt and garlic granules.

Make steak gravy.

Layer potatoes, meat and gravy then cheese and top with green onions.

Sour cream. Optional

Wagyu Meatball Sloppy Joes in Bourbon Sauce

This was literally ready to eat in 10 minutes.

So so delicious!!



6 seasoned Italian Meatballs, thawed ( I make these and freeze them)

1/2 t olive oil

1/2 Onion, chopped

1/2 t brown sugar

1 t Aleppo Honey Pepper Sauce (Trader Joe's)

1 T tomato paste concentrate 

1/2 t Worcestershire sauce

1 t yellow mustard

1 T Bourbon 


Add oil to skillet and sauté onions, add brown sugar.

Add thawed Meatballs and mash up.

This cooks quickly.

Add rest of ingredients.

Cook until sauce thickens.

Slightly toast slider buns with white American cheese.

Mound sloppy joe's meat on bun and top with sliced Greek Peperoncini.

Fresh Charred Tinga Sauce On Sour Cream Chicken Enchiladas

Flour Tortillas medium size

2 Rotisserie chicken breast, pulled put in a bowl 

Add 1/2 c of Tinga Sauce 

1/2 c enchilada cheese

1/2 c Mozzarella cheese


13x9 pan with a little Tinga Sauce and sour cream sauce to lightly cover bottom

Fill tortillas with chicken cheese mixture.

Roll into enchiladas, seam size down.

Scrunch up together.

I got 7 enchiladas.

Pour rest of sour cream sauce on top and sides.

Cover cheese toppings.

Cover with foil and bake.

Remove foil.

Put under broiler to lightly brown cheese.

Sour Cream Sauce


1. Melt 1 T butter and whisk in 1 T flour, sauté 1 minute.

Cool 5 minutes.

2. Whisk into cooked flour/butter mixture.

1 c chicken stock

3. Whisk these into chicken stock mixture.

1 c sour cream

1/8 c salsa verde

1/8 c guacamole sauce

Pinch of salt 

A few turns cracked black pepper


Topping cheese

1/2 c Enchilada Cheese

1/2 c Mozzarella Cheese

1/4 c Unexpected cheddar Trader Joe's 


Cook temp 400 degrees

Cook time 30 minutes covered

Broiler time 5 minutes, middle rack, watch closely!
