Ham and Cauliflower Bechamel Casserole































This is a excellent alternative to a low carb potato casserole!



 

Psalm 89:26


    [26] He shall cry to me, ‘You are my Father,

        my God, and the Rock of my salvation.’



 An ej original recipe!

 

 

1 head of cauliflower, washed and drained, cut into florets


Lightly salt enough water to cover cauliflower, bring to boil, boil 5 minutes.

Drain well.

Place in greased casserole pan.

Add 1 c diced ham.


BĂ©chamel  sauce  

3 T butter

3 T flour

1-1/2 c milk

1/2 t garlic granules 

1/4 t onion powder

1/4 t salt and pepper


Using same pan cauliflower was cooked in, melt butter, add flour, cook 1 min

Add milk and seasonings, whisking to thicken to desired consistency.

Pour over cauliflower.

Add:

1/2 c Parmesan 



Topping

1/2 c Mozzarella 

1/2 c crushed canned onion rings 

 

Bake 350 degree preheated oven for 20-25 minutes!

Lemon Ricotta Spinach Stuffed Chicken Breast

        that glory may dwell in our land.



 

An ej original recipe!



4 Skinless Boneless chicken breast, trimmed and split a pocket to hold stuffing, being careful not to cut all the way through 

Salt and pepper to taste 

1/2 of a lemon squeezed over breast


Stuffing

2 t clarified butter

2 c Baby Spinach, chopped

1 diced Shallot 

1 T roasted garlic

1/4 c Sauvignon Blanc

1/4 c full fat ricotta

Salt and pepper to taste


Heat butter, sauté shallot, add garlic and spinach.

Once spinach is wilted, add wine and slightly reduce, add ricotta.

Stir to incorporate.

Cool.

Stuff pocket.

Bake uncovered 425 degrees for 30 minutes or until chicken is 165 degrees.


Topping

1/2 c shredded mozzarella 

1/2 c Parmesan 


Return to oven, broil to slightly brown.

To serve, pour a little Olive Garden Italian dressing oven breast.

Mushroom and Italian Sausage Stuffed Shells in Vodka Sauce


































Psalm 80:14-19


    [14] Turn again, O God of hosts!

        Look down from heaven, and see;

    have regard for this vine, 

    [15]     the stock that your right hand planted,

        and for the son whom you made strong for yourself. 

    [16] They have burned it with fire; they have cut it down;

        may they perish at the rebuke of your face! 

    [17] But let your hand be on the man of your right hand,

        the son of man whom you have made strong for yourself! 

    [18] Then we shall not turn back from you;

        give us life, and we will call upon your name!


    [19] Restore us, O LORD God of hosts!

        Let your face shine, that we may be saved!


 

 

Make using a braiser pan with lid on stove top!


 

Make vodka sauce and set aside!


Vodka Sauce:


1 t clarified butter


1 t olive oil


1 small onion, finely chopped


1 clove garlic, minced


Pinch red pepper flakes


One 14-ounce can diced tomatoes


1 c evaporated milk


1/4 cup vodka


2 T tomato paste


Pasta cooking water, for sauce consistency


Kosher salt and freshly ground black pepper


 

Finishing dish before braising

1 cup grated mozzarella

1/2 cup grated Parmesan


 

8 ounces jumbo pasta shells (20 to 24)

Cooked, put in ice water bath, drained and set aside, reserve pasta water


 

Shell stuffing

1 lb Italian sausage, cooked and set aside 


1 small carton of button mushrooms coarsely chopped


1 shallot, coarsely chopped


2 T olive oil


1 T unsalted butter


1 c thin sliced cabbage or Spinach ( I used cabbage) 


2 T chopped parsley


One 15-ounce tub whole milk ricotta


Kosher salt and freshly ground black pepper


 

Brown shallots and mushrooms in oil and butter.

Remove to bowl.

Brown sausage in same pan.

Once sausage starts frying, add a little pasta water so meat will be tender.

When sausage is browned, add cabbage.

Cook 4 minutes and add onion mixture back. 

Next add the ricotta and stir until it is melted.

Season.

Set aside in a bowl.

Stuff shells with filling.


Take 1 c of vodka sauce and spread in bottom of braiser pan.


Nest vodka sauce around stuffed shells.

Add cheeses.


Cook on stove top, medium low heat, covered, 10 minutes.

Be prepared to swoon!!

2 New Breakfast Quesadillas

        that do not call upon your name!

Ricotta Meat and Cheese Quesadillas 

Medium Flour tortillas 

Ricotta 

Havarti cheese

Honey maple ham

Honey maple turkey breast

Shredded Parmesan 


Lightly spread ricotta on one side if 2 tortillas.

Take chunks of 1 slice of Havarti cheese and distribute over 1 ricotta covered tortilla.

Take shredded ham, turkey or both and distribute over cheese.

Sprinkle Parmesan over meat.

Place ricotta side down on top, making a quesadilla.

Drizzle clarified butter or olive oil in a skillet. 

Set in hot skillet.

Toast on both sides.

Remove to cutting board and slice into pizza-like pieces.


Avocado Creama Meat and Cheese Quesadillas 


Medium Flour tortillas 

Spreadable cream cheese

Havarti cheese

Honey maple ham

Honey maple turkey breast

Shredded Parmesan

Avocado Creama *

Garlic granules 

Onion powder 


Lightly spread cream cheese on one side if 2 tortillas.

Spread creama over cream cheese on 1 tortilla.

Sprinkle with a pinch of garlic and onion.

Take chunks of 1 slice of Havarti cheese and distribute over 1 ricotta covered tortilla.

Take shredded ham, turkey or both and distribute over cheese.

Sprinkle Parmesan over meat.

Place cream cheese side down on top, making a quesadilla.

Drizzle clarified butter or olive oil in a skillet. 

Set in hot skillet.

Toast on both sides.

Remove to cutting board and slice into pizza-like pieces.
