Almost Poke Tuna Nachos

I don't eat raw fish in sushi or anything else.
But I had pan seared tuna for another dish and had plenty leftover so I did some culinary creating! Yum yum!!

Leftover pan seared yellow fin tuna, hand shred
Cheese, I used Quesadilla cheese
Cabbage, sliced really thin
Green bell peppers, sliced really thin
Salsa
* Avocado creama, make and set aside
Nacho chips, I used garlic black chips

Put chips down, cheese, then tuna and microwave just enough to melt cheese.
Lightly drizzle salsa, then cabbage and peppers. 
Finish with the avocado creama.
You could add endless different toppings but I chose to go light on my first try. 

Bone Broth Chicken and Dumplings

1 pint seasoned Bone broth

1/3 c Rotisserie chicken pieces 

Batch of dumplings, made from 1 c Pioneer biscuit mix made with buttermilk

Black pepper


Make dumplings and set aside.

Tip:

Texture should be like biscuits that are dry, so add buttermilk a little at a time

Spoon into hot broth to which chicken pieces have been added and boil on medium.

Pepper and serve!

Texas Pete's Mayo Egg White Ham Croissant

Sliced Havarti cheese  

Ham, thick sliced home roasted 

Egg whites, cooked with green onions, mixed with Pete's Mayo

2 T Duke's Mayo

1 t Texas Pete's hot sauce

1/2 t Sugar

Black Forest ham slices 

Crispy bacon

Green onions

Gouda Cheese slices

Fried hard seasoned eggs

Pico de gallo

Cooked Basmati rice, I keep Instant Pot cooked in freezer

1 T chopped Pimentos from jar

2 T chopped Greek peppers from jar

2 T roasted Garlic

1/4 c chopped Green Onions

1 t Greek seasoning

2 T Butter

3 T Parsley

1/2 t Sugar


Stir together.

Heat slightly.

Serve.
