1 1/2 blocks of Cream cheese
1 T Heavy cream
10 slices of Pickled Jalapeño
5 T Cherry syrup
10 Dark sweet cherries in heavy syrup, chopped
Salt
pepper
1/2 c powdered sugar
Pecans, salted with seasoned salt and sprayed with cooking spray and roasted then chop after they cool

Let cream cheese soften at room temperature. Cream cheese with a fork, adding cream, cherry syrup, salt, pepper, and powdered sugar until combined. Next add cherries and jalapeño. Put in fridge and chill for 1 hour. Form into 2 balls and roll in pecans

1/2 c melted butter
8 oz jiffy corn muffin mix
1 can niblet corn not drained
1 can creamed corn not drained
1 beaten egg
2  c shredded sharp cheddar cheese
1/2 c chopped green onions
1/2 c sour cream

Preheat oven 350 degrees.
in a 13x9 casserole pan add melted butter, jiffy mix, both cans of corn, egg and half of the cheese, mix well.
Put dollops of the sour cream on top and swirl into the cornbread mix.
Scatter the other cup of cheese on top, bake 40-45 minutes until middle is set.

An ej original recipe!!


1 large can fruit cocktail 

1 large can mandarin oranges

1 medium size maraschino cherries

1 large can pineapple tidbits


In a colander, drain all the fruit well.

Set aside.


1box of instant cheesecake pudding

2 c toasted pecans, chopped

8 oz sour cream

8 oz cool whip



Next stir in 2/3 of the pudding mix.

Stir in Pecans.

Stir in sour cream.

Stir in cool whip.

Refrigerate overnight.



 



Persillade Relish for Beef Tenderloin

3/4 c diced parsley

1/2 c olive oil

6 T mild pepper rings, diced, plus 1 t of the brine

1/4 c capers, rinsed and diced 

1 scallion, diced

1 T roasted garlic 

1 t sugar

1/4 t each kosher salt and black pepper 

Mix well.

2 c smoked chicken breast or Rotisserie breast 

1 T clarified Butter

1 t bacon grease

2 large Green onions, chopped 

1/2 t Dry onion soup

1/2 stalk Celery, sliced thin

1 c button Mushrooms, sliced thin

1/4 c dry white Wine, I used Sauvignon Blanc 

1/8 c Heavy cream 

1/4 c Half and half 

1/2 c Orzo

2 c Water

Salt and Pepper to taste

1/2 t Umami seasoning from Trader Joe's




Place grease and butter in skillet, heat to medium, add all seasonings.

Next add celery, onions, Mushrooms and dry onion soup.

Sauté until veggies are tender, 1-2 minutes. 

Add chicken.

Add wine stir for 1 minute, then add cream and half and half, stir 1 minute, add water and Orzo. 

Cook down on high simmer until Orzo is tender 10-15 minutes.
