Bacon Potato Cabbage Gratin

4 c Cabbage, blanched in salted water for 5 minutes
2 c water
2 T chicken base seasoning 
4 Yukon Gold Potatoes, microwave 2-1/2minutes on each side, slice, cool and peel, salt and pepper
1 Onion, chopped
1 Leek, chopped
1 T roasted garlic, mashed
4 sliced crisp Bacon, chopped, reserve grease
1 t Bacon grease 
1 t Clarified butter
Salt, pepper, to taste
Fresh herb blend, thyme, sweet basil, oregano
1/4 c Heavy Cream
1 c Havarti cheese
1/2 c Parmesan cheese, lightly coat top of gratin 

Baking instructions:
Preheat oven to 325 degrees.
Bake uncovered for 45 minutes.

Prep instructions:
Make stock out of water and base.
Blanche cabbage in chicken stock.
Drain cabbage.
Sauté bacon until crispy.
Set aside.
Reserve grease.
Add clarified butter.
Use grease to sauté onions, garlic and leeks.
Add seasonings to onion mixture.
In the pot where the cabbage was cooked, add potatoes, onion mixture, chopped bacon and heavy cream.
Stir around until just combined.
Place all of the well drained cabbage in casserole pan.
Layer half of the potato mixture to casserole pan. 
Add 1/2 of the Havarti cheese.
Repeat layer and lightly cover top with Parmesan. 
Bake.
Optional garnish sour cream or cottage cheese.

Skillet Asian Pork Tenderloin

An ej original recipe!!



2 small Pork Tenderloin that has been marinated in 

1/8 c Soy Vay Hoisin garlic

1/8 c Sweet chili Thai sauce

2 t Mushroom soy sauce 


Add large cast iron skillet to a cold oven, bring heat up to 450 degree oven.

Add 2 T of butter to hot skillet.

Add drained Tenderloin to butter, put back in oven and cook 15 minutes.

Take out and flip, cook another 10-15 minutes.

Temp should be at least 150.

Do not overcook.

Rest and slice in 1 inch thick pieces.

Instant Pot 2 Hour Chicken Bone Broth

Chicken carcass, Costco Rotisserie is great

2 Carrots

1 quartered Onion

2 stalks Celery

1 T Salt 

1t Pepper 

1/2 t garlic 

Water filled to fill line

2 T Apple cider vinegar, softens bones


Place ingredients in pot.

Set manual time to 120 minutes.

Set lid to pressure.

At end of cook time let pot cook and return to no pressure.

Freeze or can broth.

If pressure canning your set your lbs according to your area. 

Mine is 10.

Process 25 minutes for quarts or 20 minutes for pints.

17 and he thought to himself, 'What shall I do, for I have nowhere to store my crops?'

18 And he said, 'I will do this: I will tear down my barns and build larger ones, and there I will store all my grain and my goods.

19 And I will say to my soul, "Soul, you have ample goods laid up for many years; relax, eat, drink, be merry."'

20 But God said to him, 'Fool! This night your soul is required of you, and the things you have prepared, whose will they be?'

21 So is the one who lays up treasure for himself and is not rich toward God." - Luke 12:13-21



3 c fresh cooked greens mix, I used kale, turnip greens and mustard greens, seasoned with sugar, pepper sauce and Cajun seasoning, cooked in chicken stock

1- 2 cans drained Northern Beans 

1 sliced Onion

1 can Stewed tomatoes 

3 T roasted mashed garlic

1/8 c sliced Celery

2 c chopped Pan Fried or Oven cooked Smoked sausage

1 c chopped Ham

1/4 t Sriracha 

 

I used the stock I had cooked the greens in.

Just add everything and simmer.

Serve with cornbread.

Green Tomato Salsa Verde

6 large green tomatoes 

1 small Onion, chopped

2 Jalapeño, diced 

3 T roasted Garlic, diced

Juice of 1/2 of a small lime

1 t sugar

1/4 c fresh chopped cilantro 

Salt and Pepper to taste

1 t Toasted Cumin

1/2 t Oregano 


Blend in food processor.

Put in pot and heat to a boil, stirring occasionally.

Simmer on low for 5 minutes.

Put in jar and refrigerate until use.

Suggested uses:

Sauce for Enchilada, Tacos, Nachos
